What oven is best for the Low Temperature Cooking method: Convection or Convection Steam?


Both ovens, convection or convection steam, are excellent for the Low Temperature Cooking (LTC) method. It all depends on what dish you are cooking. Some recipes are meant to be prepared in a convection ovens, and others are written for the steam oven.


For best results when using a convection oven for LTC, use the Convection or the Convection Bake mode, in these modes the low temperatures are circulated around the oven by the fan evenly cooking the meat. The powerful heat in the Convection Roast mode is ideal for the high heat finish.
