Do I follow the stated recipe temperature in convection?

It depends. If the recipe was written for convection ovens then follow the instructed recipe. If the recipe only says "heat the oven to 350°F" for instance, then the recipe was written for a traditional radiant oven. If this case, reduce the temperature by 25°F.

If you are using a glass dish, reduce the temperature by 30°F.
