Convection is the ideal cooking mode for braising because it circulates the heat evenly around the oven and, if you are like us and always thinking of the next meal, it only makes sense to cook another braise or slow roast another cut of meat at the same time. As with many braised dishes, brisket is best prepared a day in advance. Once the brisket has cooked to a fork-tender consistency, remove the brisket from the pan and set it aside to cool. If you have a lot of pan juices you can reduce them at this time. Slice the meat once it has cooled and return it to the pan and refrigerate overnight. Perfection with Convection! Ingredients 1 - 3 to 4lb brisket (brisket with some marbling yields the best texture and flavor) 2 tbsp of olive oil and 2 tbsp unsalted butter 4 medium red onions, peeled and cut into quarters 6 cloves garlic, smashed ½ tsp mixed Italian seasoning ½ tsp Kinder's Woodfired Roasted Garlic seasoning (it has a nice balance of flavors) 2 large carrots, peeled and cut into large chunks 2 stalks celery, strings removed and cut into large chunks 3 cups beef stock or Better than Bouillon 2 cups hearty red wine Preparation Heat the oven in the Convection mode 325°F and position an oven rack in the center of the oven or if cooking two dishes at one time, arrange the racks to accommodate both pans. Heat a large Dutch oven over moderate heat on your most powerful burner, add in the oil and butter and when the butter is sizzling, carefully lay in the brisket and let it brown on one side. Carefully turn it and brown it on all sides. Remove the brisket from the pan and add all the vegetables. Place the brisket on the vegetables and add the liquid to the pan. Cover and place in the oven for 2 ½ - 3 hours or until tender when pierced with a fork. If it’s just shy of perfect it can still be removed and cooked for a little longer when reheating the next day. Remember when removing the pan from the oven to always leave a dish towel or oven mitt on the lid or handle of the pan so you don’t accidentally pick up a hot pan. Remove the meat from the pan and set it aside to cool until cool enough for you to slice. If the pan juices need reducing they can be reduced at this time. Place the sliced brisket and juices into a casserole with a lid or the cooking pan and refrigerate overnight. Let the brisket sit outside of the refrigerator for an hour before reheating the next day. When ready to serve, remove any large pieces of congealed fat and place the covered pan in the oven in the Convection mode 350 for 30 minutes or until piping hot. While the brisket is reheating you can also cook a side dish such as oven polenta or roast some vegetables at the same time. Pork that is cut from the shoulder generally requires long slow cooking to become fork tender; however, these “pork strips” are actually cut from closer to the loin and can be cooked in a variety of ways. They are certainly delicious when cooked low and slow but they can also be baked in about 45 minutes in Convection. In this recipe, I used a combination of Convection + microwaves at the beginning of the cooking to speed up the cooking process (Skip this step if preparing the ribs in a traditional oven but plan to cook the ribs for an additional 5 - 10 minutes).) After 10 minutes of Speed cooking, I changed the mode to Convection and added a tray of small golden potatoes to roast for 20 minutes. When the timer elapsed I folded some Brussels sprouts in with the potatoes and continued cooking the meal for another 15 minutes. At the end of the cooking, I brushed the ribs with some BBQ sauce and put them back in the oven for another 5 - 8 minutes to warm through. Overall the cooking time is approximately 50 - 60 minutes. INGREDIENTS 2 ½ - 3lbs country-style pork ribs 3 tbsp prepared BBQ rub such as Kinders or 1 tsp garlic powder 2 tsp smoked paprika 1 tsp dried oregano 2 tsp Kosher salt 1 tsp ground black pepper 2 tbsp olive or vegetable oil ¾ cup BBQ sauce for the finishing PREPARATION Combine the spices and massage them into the ribs. For enhanced flavor, this should be done 4 - 6 hours or a day in advance. Heat the oven in the Convection Bake mode 325℉ (Convection Oven). Heat the oven in the Convection Mode 330℉ (Speed Oven). Place the ribs on a shallow-rimmed baking sheet and drizzle with olive or vegetable oil. Bake the ribs for 20 minutes (Convection Oven) or 10 minutes (Speed Oven) with added microwave power. Toss the potatoes in the olive oil and season with salt, pepper, and the dried oregano, place on a rimmed baking sheet and add to the oven, set the timer for 20 minutes. When the timer has elapsed fold the prepared Brussels sprouts into the potatoes and set the timer for 10 minutes. Remove the ribs from the oven, leaving the potatoes and Brussels sprouts to continue cooking, and increase the oven temperature to 375. Brush the ribs with the BBQ sauce and return to the oven and bake for an additional 5 - 8 minutes. Ingredients Crust 1 cup unbleached, all-purpose flour ¼ cup whole wheat pastry flour 1 tbsp granulated or coconut sugar ¼ tsp Kosher salt ½ cup vegan butter (Earth Balance Vegan Buttery Sticks or Miyoko’s Vegan Butter) cut into ½ “ cubes ¼ cup ice cold water Filling 2 baskets of strawberries, hulled and cut into ½” thick slices ½ a lemon, juiced 1 ½ tbsp unbleached all-purpose flour 3 tbsp granulated or coconut sugar Pinch of salt 2 tbsp honey or maple syrup Preparation In a medium sized bowl mix together the flour, sugar and salt then cut in the butter with a pastry blender to achieve a coarse meal like texture. Add ice water and mix with a fork to bring the dough together. Pat the dough into a ball then flatten into a disc, wrap in plastic wrap and refrigerate for one hour or up to 2 days. When ready to bake, heat the oven in the Convection Bake Mode 350 °F. Combine the strawberries, lemon juice, flour, sugar and salt in a medium bowl and set aside. Roll the dough out to a 14” circle on a lightly floured surface then transfer the dough to a flat baking sheet lined with parchment paper. Pour the fruit onto the prepared dough leaving a 1 ½ border. Smooth out the fruit and fold the dough edge up around the fruit. For a flakier crust, the galette can be refrigerated at this stage for ½ an hour before baking. Otherwise place the baking sheet in the lower third of the oven and bake for 30 minutes. Remove the baking tray from the oven and brush the pastry with the honey or maple syrup and bake for another 10 minutes. If your oven has a gas broiler you will only have a Broil option with no temperature setting. Line a rimmed baking sheet with foil, shiny side down. Place the salmon on the pan and spread the smear evenly over the salmon. Broil for 6 - 8 minutes until the glaze begins to change color. If the salmon fillet is quite thick then move the tray to a lower rack away from the intense heat in the top of the oven and leave it in the oven for another few minutes till firm to the touch in the thickest part. I baked the peppers in Convection together with a Stuffed Pork Shoulder Roast, another dish that is ideal for entertaining. This is such a simple recipe, basically, you prepare the peppers, cook the orzo (or other grain if you prefer) and combine all the ingredients, then stuff the peppers and bake when needed. The most work in this recipe is washing the fresh herbs, drying them completely then finely chopping them. For my stuffing, I used orzo pasta mixed with some sauteed shallots, garlic, toasted pine nuts, and a combination of fresh herbs, and feta cheese. Using a combination of different colored peppers makes this dish especially appealing, they can be prepared in advance and baked when needed and, they are delicious served warm or at room temperature. Ingredients 4 peppers, sliced in half lengthwise, seeds and membrane removed ½ cup orzo pasta cooked 1 shallot, chopped 2 cloves garlic, minced ½ cup chopped fresh herbs, parsley, basil, mint, oregano 4 oz crumbled feta cheese ¼ cup pine nuts, toasted Preparation Wash the peppers, and slice them in half lengthwise discard the seeds and carefully cut out the white membrane. Cook the orzo pasta and sauté the shallot and garlic in a little olive oil. Combine the orzo with the shallots and garlic and set aside to cool before folding in the fresh herbs. Once the mixture has cooled fold in the fresh herbs, crumbled feta cheese, and toasted pine nuts. Season with sea salt and freshly cracked pepper and if you like a little spice stir in a pinch of dried red chili flakes. Now all you have to do is portion the stuffing into the prepared peppers. Heat the oven in the Convection Bake or Convection Roast mode at 350 degrees. Place the peppers in a lightly oiled casserole dish and bake for 30 minutes, until the peppers have softened and the filling has warmed through. Convection circulates heated air around the oven, cooking food from the edge to the center, and this heatedconvection ovenfor roasting air helps preserve the natural moisture in food. A convection-oven is ideal for roasting chicken breast For best results, choose either the Convection or Convection Bake mode to cook chicken breasts, as the more intense heat generated in the Convection Roast mode can dry the meat. Cooking chicken breasts on the bone helps preserve moisture and adds flavor to the chicken. Of course, the bones can be used to make a quick stock. To ensure even cooking, use a mallet to flatten out the thicker part of the breast. Of course, there are times when boneless skinless breasts are more convenient, but be sure to oversee the timing and temperature to avoid overcooking the meat. A dry rub with kosher salt and your preferred seasoning is an excellent way to bring out flavor when roasting chicken at moderate temperatures. Wet marinades are ideal when cooking chicken at high temperatures, such as on an outdoor grill, to prevent the meat from drying out too much. PREPARATION Heat the oven in the Convection or Convection Bake mode to 350 F. For boneless skinless chicken, use 325 F. Before seasoning the chicken, flatten it slightly at the thicker end with a meat mallet for even cooking. INGREDIENTS 2 - 3 small narrow eggplants 1 lb. ground lamb 1 shallot, minced 1 tsp ground garlic or 3 cloves garlic finely minced 1 tsp turmeric ½ tsp dried oregano ¼ cup tomato puree (not tomato paste) Salt & pepper to taste To Serve Pita bread, tzatziki or Greek salad with crumbled feta Serves 2 - 4 PREPARATION Rinse the eggplants and cut them into 4 - 6 evenly spaced slices, without cutting the eggplant all the way through. Arrange the prepared eggplant on a shallow rimmed baking tray and brush or spray the exposed eggplant with the olive oil. Combine the ground lamb with the seasonings, then scoop the mixture into large 2” balls flattening them enough to insert in between the eggplant slices. Push a thin metal skewer into each eggplant to hold them in place if necessary. Heat the oven in the Convection Bake or Convection Roast mode to 350°F (200°C) and bake the prepared eggplant on the center oven rack for 30 minutes. Ingredients Chicken Meatballs with Miso and Ginger 1 - lb ground chicken 3 - tablespoons white miso 2 - cloves garlic minced 1 - teaspoon fresh minced ginger 1 - teaspoon kosher salt ¾ - teaspoon black pepper 12 - Ritz crackers, finely ground ¼ - cup of milk Roasted Green Beans with Spicy Tofu 1 - 14oz package extra firm tofu, drained and sliced crosswise into 8 ½” slices 2 - tablespoons chopped fresh cilantro 2 - tablespoons, chopped scallions 2 - cloves garlic, minced 1 ½ - teaspoons sesame oil 1 - teaspoon honey 3 - tablespoons soy sauce 1 ½ - tablespoons black rice vinegar (or substitute with white rice vinegar) 3 - tablespoons chili-crisp condiment ¾ - lb green beans, trimmed Preparation Chicken Meatballs with Miso and Ginger Combine all the ingredients in a large bowl and combine gently with your hands. The mixture is very sticky, I wore disposable gloves to shape the 12 meatballs but the recipe author suggests lightly wetting your hands to prevent sticking. Meatballs can be cooked immediately or refrigerated for a few hours before cooking. Line a small rimmed baking sheet with a sheet or parchment and arrange the meatballs on the tray, give them a light spritz of cooking oil before going into the oven. Roasted Green Beans with Spicy Tofu Place the tofu slices in a casserole dish, whisk together all the ingredients except the green beans and pour over the tofu. Wash and trim the green beans, pat dry, spread onto a rimmed baking sheet and drizzle with some canola or vegetable oil. Push the beans to one side and place the tofu slices on the baking sheet and pour the marinade over the tofu. Arrange the oven racks to accommodate the pans and heat the oven in the Convection Roast or Convection Bake Mode 425 degrees. Cook the Chicken Meatballs for 20 minutes until firm and slightly browned on the edges. Cook the Green Beans for 15 - 20 minutes until the beans begin to blister. Once the oven reaches temperature the steak is cooked for a few minutes at high heat to obtain a nice sear and reach 135 degrees internal temperature. Ingredients 2 sirloin strip steaks Kosher salt Steak seasoning Preparation Heat the oven in the Convection or Convection Roast mode to 300F. Season the steaks with a little kosher salt, fresh pepper, some buttery garlic steak seasoning and a drizzle of olive oil. Place the seasoned steaks on a rimmed baking sheet and insert the oven meat probe at an angle into the meat, making sure it stays in the meat and that the tip doesn’t touch the pan. Close the oven door and program the probe to reach an internal temperature of 120F. If your oven doesn’t have a probe, cook the meat for approximately 10 minutes then test the meat with an instant read thermometer. When the steaks have reached an internal temperature of 120F, remove them from the oven and increase the oven temperature to 425F. Return the steaks to the oven for a quick sear, and before serving drizzle with a little more olive oil or a smear of butter before serving. After 15 minutes, remove the vegetables, lower the oven temperature, and set the timer for 15 minutes. Layer the vegetables into the casserole with the tortillas, beans, salsa, and cheese, and pop it back in the oven for 15 to 20 minutes. Take the chicken out after 15 minutes and set it aside to cool while the casserole continues to heat through. This recipe uses mild salsa but it is easy to tweak it to your preferred taste and spice it up a bit. The important thing is to develop a comfort level when making oven meals using Convection. Ingredients 2 medium zucchini, cubed 1 red pepper, cubed 2 cups corn kernels ½ red onion cut into ½” dice 3 cloves garlic, coarsely chopped 1 tbsp ground cumin ½ tsp dried oregano ½ tsp chili powder (optional) 2 tbsp vegetable or olive oil 1 jar salsa 1 can black beans, drained 3 cups Mexican blend grated cheese 8 corn tortillas Preparation Heat the oven in the Convection Roast or Convection Bake mode at 425 degrees. Combine the zucchini, pepper, corn kernels, onion, garlic, and seasonings in a bowl and add the oil. Toss until the vegetables are evenly coated with the oil and spread onto a large rimmed baking pan. Place the pan on rack position 1 or 2 close to the bottom heating element and cook for 15 minutes until the vegetables begin to caramelize around the edges. If baking some chicken at the same time place the seasoned chicken on a rimmed baking sheet on rack position 4 or 5 closer to the top heating element. Remove the vegetables from the oven after 15 minutes, and reduce the oven temperature to 350 degrees. If baking some chicken at the same time, set the timer for 15 minutes to finish cooking the chicken. Add the beans and salsa to the baking pan with the vegetables and fold to distribute evenly. Now you are ready to assemble the casserole. Lightly oil the bottom of a casserole dish with several corn tortillas, cutting them as needed to cover the surface. Add half of the vegetable mixture to the pan and top with half of the cheese. Cover this layer with more tortillas, add the remaining vegetables, and top with the remaining cheese. Cover the dish loosely with foil, crimp the edges to seal, and place in the oven. Heat the casserole for another 15 minutes until the cheese has melted and is bubbling. Once the chicken has cooked for 30 minutes remove the tray from the oven and let the chicken cool slightly, that way you can slice it off the bone or keep it covered with some foil to keep warm to serve with the hot casserole. And which appliance is ideal for cooking multiple foods at one time, that's right your Convection oven. Yes, there will be no transference of flavor when you cook a sweet dish along side a savory one in Convection. Isn't that wonderful? This means I can bake in multiple racks: a dessert and a main dish in one go. Time will not fly when you take advantage of what a convection oven offers. This brunch menu includes 3 different dishes that can be cooked at the same time in one oven using the True Convection or Convection Bake mode. Because the cooking time and temperature are the same for all 3 recipes, you can plan the cooking so the food will be ready to serve at the exact time you want to eat. The menu includes a frittata-style dish with green chilis and cheese, a baked French toast casserole, and to round it out some roasted potatoes with sausage and peppers. Each dish serves 6 - 8 people. Ingredients 1 stick unsalted butter 1 cup brown sugar 2 tbsp maple syrup or agave syrup 1 loaf plain Challah bread 6 large eggs 1 ½ cups ½ & ½ 1 tsp vanilla ¼ tsp salt Preparation Heat the oven in the Convection or Convection Bake mode 325°. Combine the butter and sugar in a small heavy-bottomed saucepan over moderate heat. Stir in the syrup and whisk until smooth then pour into a 9x13x2” oven casserole dish. Slice the bread into 8 thick slices and trim off the crusts then arrange in the dish over the melted butter mixture. Whisk the eggs with half and half, vanilla, and salt, and pour over the bread. Cover with a sheet of wax paper and refrigerate for at least 8 hours or overnight. Remove from the refrigerator at least 30 minutes prior to baking. Bake for 0 - 35 minutes until puffed and golden. Begin by cooking the meat at low temperatures in your Convection or Steam oven and just give the meat a quick finish over high heat. The result? A perfect flavorful sear and meat that is not dried out. I used two different types of pork chops and both worked out well cooked at a low temperature for about 30-40 minutes then finished on the grill. Pork blade chops cut from the pork shoulder have more marbling and handle the grill's high heat well. Left-over grilled pork blade steak is excellent added to fried rice or a ramen bowl. Pork loin chops are typically cut quite thick and have less marbling can be tricky but they were perfect when cooked this way as well. I use 200 degrees for the slow cooking but you can go as low as 160 degrees, just allow a little extra time. Some grilled pineapple slices would of course be perfect as an accompaniment to these grilled chops. Ingredients 2 bone-in pork loin chops 2 pork blade chops 2 tbsp BBQ dry rub seasoning 2 tbsp heat-tolerant vegetable oil BBQ sauce optional Preparation Heat the oven in the Convection or Convection Bake mode at 200 degrees or heat the Steam oven in the Combination Convection Steam Mode at 200 degrees. Place the chops on a shallow rimmed baking sheet, season with your preferred BBQ seasoning, and coat each side of the chops with the oil. I didn’t add salt because the dry rub had a fair amount but add salt to taste. Cook for 30 minutes, brush the chops with the BBQ sauce is using, and finish the cooking on the grill, allowing approximately 4 minutes per side. While the spatchcock chicken, carrots and croutons cook together in convection, the salad ingredients and dressing can be prepared. There are several steps to create this recipe, first is to prepare the marinade for the chicken, then remove the backbone of the chicken and marinate it for several hours or overnight. Next, prepare the carrots and croutons so they can be baked at the same time as the chicken. While these ingredients are cooking in your convection oven, the salad ingredients and the dressing can be prepared. The salad ingredients call for a wonderful combination of mint, cilantro and basil that combined with the crisp romaine and cucumber compliment the flavors of the marinade perfectly. Once the salad is assembled and dressed add the croutons and top with the warm sliced chicken so that the juices from the chicken seep into the croutons. Your efforts will be well rewarded. INGREDIENTS Chicken and Marinade 1 whole chicken, backbone removed and flattened out 1 stalk lemongrass, smashed with back of knife and roughly chopped 1 tbsp turmeric 3 cloves garlic 1 tbsp fish sauce 2 tbsp vegetable oil 1 lb rainbow carrots, peeled and cut into 2 inch pieces, tossed with a little oil For the Panzanella ½ sweet baguette, cut into 2 inch chunks 4 tbsp unsalted butter, melted ½ tsp garlic powder 1 tsp Old Bay seasoning For the Salad 1 head romaine lettuce, chopped 1 English cucumber, peeled and sliced ½ red onion, thinly sliced ½ bunch baby radishes, thinly sliced 3 sprigs mint, leaves picked whole 3 sprigs basil, leaves picked whole 6 sprigs cilantro, leaves picked whole For the Dressing ½ cup sweet chili sauce ¼ cup lime juice ¼ cup vegetable oil ½, teaspoon salt ½ teaspoon pepper Whisk all the dressing ingredients in a small bowl until combined. Serves 4 - 6 Preparation In a small food processor or blender, add lemongrass, turmeric, garlic, fish sauce and vegetable oil. Process or blend until a smooth paste. Rub the marinade all over the chicken and place in the refrigerator for at least 2 hours or overnight. Heat the oven in the Convection Roast Mode 375 degrees. Place the flattened chicken on a rimmed baking sheet and cook for 25 minutes. After 25 minutes, add the carrots to the same pan or spread onto another rimmed baking sheet and cook the carrots and chicken for another 20 minutes. Toss the bread chunks with the melted butter, garlic powder and Old Bay seasoning and spread onto a rimmed baking sheet. Bake in the oven on a rimmed baking sheet for 12 - 15 minutes until golden while the chicken is roasting. Meanwhile, combine the romaine lettuce, cucumber, onion, radish, mint, basil and cilantro in a large bowl and enough of the dressing to evenly coat the salad and toss to combine. Scatter the croutons over the salad and toss lightly to combine. Place the salad on a large serving platter, arrange the warm chicken pieces and carrots on top and drizzle with any pan juices from the roasting pan. For best results, we first sear the fish on one side, gently turn it over then place the pan in the Combi-steam or Convection oven to finish cooking. This technique works well with any meaty fish, just take care not to hurry the searing step by turning the fish too soon, otherwise, it will stick to the pan. For best results in a Convection oven use the Convection mode 180 - 200 degrees. If you have a Combi-steam oven, and it doesn’t have a dedicated Low-Temperature mode then just use Combi-steam 180 - 200 degrees. Ingredients 2 fillets of meaty fish such as salmon, halibut, sea bass or wild cod 1 tbsp unsalted butter 1 tbsp olive oil ½ lemon, juice only Preparation Pat the fillets dry with a paper towel and season with your preferred seasoning and a sprinkle of Kosher salt and freshly cracked pepper. Heat the Combi-steam oven in the Low-Temperature or Combi-steam Mode 180 - 200 degrees. Or heat your Convection oven in the Convection mode to 180 - 200 degrees. Heat an ovenproof skillet over moderate heat and when hot add the butter and oil. Carefully lay the fish into the pan and let it cook undisturbed for a few minutes. Gently lift one corner and if the fish releases easily then carefully turn each piece. Now place the pan in the heated oven and cook for 6 - 8 minutes. Center cuts of very meaty fish may take up to 15 minutes to cook through. Don’t hurry the process the results are worth waiting for. Squeeze the lemon juice over the fish and baste with the pan juices before serving.
