Once you set the oven in the steam mode you can add in multiple containers of food at one time, all you have to do is determine the timing for each type of food and the order in which you want to cook those foods. Planning is Key When Cooking Multiple Foods at one Time Cooking Multiple Dishes In A Steam Oven It’s easier than ever these days to keep track of the timing when cooking multiple dishes at one time. In addition to the oven timers we have devices such as Alexa, our phones, digital timers and the old fashioned wind up timers. If your oven is connected to the manufacturer's app you will also get an alert when the timing has elapsed. In other words, planning the timing for cooking multiple dishes is easy. Prepare Meals in Advance at the same Time as Cooking Dinner Steaming multiple foods at one time can be helpful when preparing a meal, but also when you are preparing several meals in advance. Say for example you wanted to make mashed potatoes as a topping for Shepherds Pie that you plan to serve on another day, and also steam some bone in chicken for sandwiches as well as steam some rice and vegetables for dinner, well all those foods can be cooked in the Steam mode at the same time. It might sound ambitious, but really it’s amazingly easy. Here is the timing for this scenario: Steamed (2) bone-in chicken legs, prep time, 5 minutes, cooking time 40 minutes. Yield approximately 3 cups cooked chicken + 2 cups chicken stock. Cook in a solid pan with 1 cup of water and the desired aromatics. Set the chicken aside to cool before shredding. Steamed vegetables, green beans, broccoli, asparagus, thinly sliced carrots: 6 - 8 minutes depending on your preference. In this scenario the base for the Shepherd's Pie could be prepared while the potatoes are steaming, once the mashed potatoes are spread over the filling you would have a dish ready for another meal. Once cooled, the chicken can be shredded and stored ready to add to sandwiches or salads and you will have some simple side dishes ready to serve with dinner. Planning to cook this way is a very efficient way of keeping your refrigerator stocked with healthy nourishing food, so there is always something good to eat. Remember that Shepherds Pie you made in advance well that will heat beautifully in the Steam oven without needing to be covered because, it won't dry out when baked in the combination Convection/Steam mode. With No Cooktop to Clean, Clean-Up is Easy Since all the steam oven cooking containers can be washed in the dishwasher, clean-up is much easier and you have managed to cook a lot of food with little stress. Don't Go Without Breakfast, Cook it in the Steam Oven Using the steam oven to cook multiple foods at breakfast time also makes it easier to ensure everyone gets a healthy breakfast. Oatmeal can be cooked directly in the bowl water in the Steam mode. The timing is approximately 6 minutes, but if the bowl stays in the oven for 10 minutes nothing bad will happen. Eggs can also be poached in the oven at the same time, for large cold eggs between 5-6 minutes works best. Although at higher altitudes it can take up to 8 minutes. Poached Eggs In A Steam Oven Keep the Steam Oven Clean and Dry For ovens with a tank it is recommended to empty the tank after each use, however, if you use the oven to cook breakfast and plan to use it again that evening the tank can be emptied after the last meal of the day is cooked. Just be sure to dry the oven out to maintain a hygienic environment. Think Beyond Cooking One Item at a Time and Let the Oven Work for You Steam ovens are truly remarkable tools, and I encourage you to think beyond just using the oven to prepare one food at a time. Always ask yourself, is there something else I can cook at the same time to get a head start on another meal or to make it easier to prepare several dishes at one time. With a little planning you will get great results every time when cooking with your steam oven.     WELCOME TO THE LEARN AND HOW TO PAGE Select a Category then click on an image Convection Modes Steam Modes Tips How To Steam Oven Sheet Pan Meal: Pork Tenderloin and Seasonal Vegetables Sheet pan meals are appealing for several reasons, they are fast to cook, oven roasted vegetables are delicious , prep and clean-up is minimal, and you are not tied to the stove cooking a meal. Cooking vegetables and a protein on one tray can be a good option when cooking for one or two people, but when cooking for a larger group or when different temperatures will better suit the foods being cooked, then using two pans is a better option. Sheet Pan Meal Cooked in the Steam Oven Because steam ovens have smaller cavities than standard convection ovens it can make sense to cook the vegetables and protein on separate trays. The other factor to take into account is the temperature that will best suit the foods being cooked. Basically the important factor to successfully cook a sheet pan meal in convection is planning. Tips for Planning the Cooking of a Sheet Pan Meal Let’s review the planning for roasting this sheet pan meal of Pork Tenderloin with Roasted Brussels Sprouts and Carrots. For flavor and appeal a pork tenderloin is best when given a quick sear prior to cooking. Because this is such a lean cut of meat, if the cooking is finished in the oven at a low temperature, the meat will be very tender and juicy. Once removed from the oven the pork should be set aside to rest for 5 minutes or so prior to being sliced. Carrots cut into ¼” thick slices on the diagonal and brussels sprouts sliced into ¼” slices will cook in 20 minutes. Onions, garlic and maybe some mushrooms or parsnip cut to the same dimensions can be added to the mix for added flavor. So here is the cooking plan: For the vegetables: Heat the steam oven in the combination Convection Steam mode to 325 F. Combine the vegetables with a little olive oil salt and your preferred seasoning, spread on a rimmed baking tray and place in the oven. The vegetables will be cooked at a low temperature in the combination convection steam mode then finished at a high temperature in the convection mode without added moisture for crisping and browning. For the pork: Heat a skillet over moderate heat, season the pork tenderloin, add a little oil and butter to the skillet and brown the tenderloin on all sides over moderate heat. Transfer the tenderloin to a small oven pan or use the skillet if it is oven-safe and place in the oven. Cook for 12 - 15 minutes until the meat is firm to the touch. Remove the tenderloin from the oven, remove it from the hot pan and set aside to rest. Change the oven mode to Convection and increase the temperature to 400 degrees and cook the vegetables for an additional 5 minutes. Both the pork tenderloin and the vegetables benefit from a short period of high heat cooking but at different stages of the cooking process; however, by taking the time to plan the cooking you can easily use one oven to cook the entire meal. This is a very simple meal, but I hope it gives you a sense of how to plan and cook a sheet pan meal in the steam oven. A convection-oven is ideal for roasting chicken breast For best results, choose either the Convection or Convection Bake mode to cook chicken breasts, as the more intense heat generated in the Convection Roast mode can dry the meat. Cooking chicken breasts on the bone helps preserve moisture and adds flavor to the chicken. Of course, the bones can be used to make a quick stock. To ensure even cooking, use a mallet to flatten out the thicker part of the breast. Of course, there are times when boneless skinless breasts are more convenient, but be sure to oversee the timing and temperature to avoid overcooking the meat. A dry rub with kosher salt and your preferred seasoning is an excellent way to bring out flavor when roasting chicken at moderate temperatures. Wet marinades are ideal when cooking chicken at high temperatures, such as on an outdoor grill, to prevent the meat from drying out too much. PREPARATION Heat the oven in the Convection or Convection Bake mode to 350 F. For boneless skinless chicken, use 325 F. Before seasoning the chicken, flatten it slightly at the thicker end with a meat mallet for even cooking. Season the chicken with kosher salt and your seasoning of choice, and rub a little olive oil into the meat. Alternatively, add a spritz of spray oil to the chicken. Spice rub mixes containing paprika add flavor and color to chicken breasts. Place the chicken on a shallow-rimmed baking sheet and bake for 25 to 30 minutes for bone-in chicken and 20 - 25 for boneless. The precise cooking time will depend on how cold the chicken is and how thick the portions are. It's always better to check the chicken to determine if it is cooked through earlier to avoid overcooking the meat. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Spinach, Gouda Stuffed Portobello Mushrooms Convection Broil Meaty portobello mushrooms are ideal for filling with delicious savory stuffing before finishing the cooking using the Broil mode in your Convection oven. This recipe's filling is made with sauteed shallots, garlic, yellow pepper, and spinach and topped with slices of Gouda cheese. Spinach, Gouda Stuffed Portobello Mushrooms INGREDIENTS 4 portobello mushrooms, stems, and gills removed. (Stems can be chopped and used in the filling.) 1 tbsp olive oil 1 shallot, sliced 3 cloves garlic, minced 1/4 tsp mixed Italian seasoning Pinch of dried red chilis 1/2 yellow bell pepper, seeds removed, cut into small dice 2 cups chopped spinach leaves, large stems removed if using bunched spinach 1/2 cup shredded Mozzarella cheese 6 slices Gouda cheese All the ingredients you need PREPARATION Wipe the mushrooms clean with a damp paper towel, remove the stem, and scrape out the gills with a spoon. Heat a medium saute pan over moderate heat. Add the oil and cook the shallot and garlic for a minute to soften, not letting them burn. Add the seasoning, chopped mushroom stems (if using), and the bell pepper. Continue cooking until the vegetables soften, then stir in the spinach and cook until just wilted. Remove the pan from the heat, and when cooled, season with salt and pepper and stir in the grated cheese. Sautee the ingredients for the filling Arrange the oven racks to place a tray close to the Broil element with at least a 2" clearance. Heat the oven in the Broil with Convection or Broil with Circulated Air mode to 450 F or Medium. Brush or spray both sides of the mushrooms with olive oil. When the oven comes to temperature, place the mushrooms cleaned side down on a small rimmed baking sheet and cook for about 5 minutes. The portobellos need to be precooked Take the mushrooms out of the oven and divide the prepared filling evenly between each one. Place the mushrooms back in the pan and cook for 6 - 8 minutes until they soften. Remove the pan from the oven, top each mushroom with a few slices of Gouda cheese, and return it to the oven. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How to Cook a Beef Sirloin Roast in Convection Low Temperature Roasting Using Convection with a moderate cooking temperature is key for a succulent sirloin roast. Carved into thin slices it’s ideal for roast beef sandwiches or it can also be enjoyed as a roast dinner. When roasting meats especially lean cuts such as beef sirloin there are several important steps that will prevent the meat from drying out during the cooking. Seasoning the meat with a garlic herb rub, some olive oil and a good amount of Kosher salt is essential for good flavor and letting the meat come to room temperature prior to cooking ensures even cooking. Placing the roast on a rack in a shallow pan ensures the heat of the pan doesn’t leech moisture out of the meat and the shallow pan allows the heated Convection air to circulate around the meat cooking it from the edge to the center. In this recipe the roast is cooked at 325° for the entire time. Roasting at a low temperature prevents the meat from drying out and it still gets nicely browned. For accuracy using the oven meat probe is recommended or test the internal temperature with an instant read thermometer as directed in the recipe. INGREDIENTS 3lb beef sirloin roast ¼ cup finely chopped fresh Italian parsley or 1 tbsp dried parsley 3 cloves garlic, finely minced 1 tsp Kosher salt 2 tbsp olive oil Freshly ground pepper PREPARATION Combine the seasonings with the olive oil and rub into the meat. Place the meat on a rack in a shallow pan and let it come to room temperature. Heat the oven in the Convection Roast or Convection Bake mode to 325 degrees. Insert the oven meat probe (if applicable) at an angle into the meat making sure the tip is in the meat and not touching the pan. Place the roast on the center rack in the oven and close the door. Program the probe to your preferred internal temperature and touch the Probe symbol or Start to activate the probe. If your oven is not equipped with a probe, check the internal temperature with an instant read thermometer after 45 minutes cooking time. The reading you get at that time will give you an idea of how much longer you will need to cook the meat. Be sure to allow at least 15 minutes resting time before carving. Roasted Green Beans with Spicy Tofu Place the tofu slices in a casserole dish, whisk together all the ingredients except the green beans and pour over the tofu. Wash and trim the green beans, pat dry, spread onto a rimmed baking sheet and drizzle with some canola or vegetable oil. Remember the basics of convection cooking: different foods can be cooked on multiple racks at one time, foods have more moisture retention and there is no transfer of flavor when cooking multiple dishes at one time. Make that oven work for you! To serve with the convection roast chicken breasts a casserole that features broccoli and cheese is often well received. To make it a little more interesting and nutritious you can add in some cooked quinoa. The quinoa and broccoli need to be cooked prior to assembling the casserole and can be cooked together in the combi-steam oven or in the traditional method on the cooktop. Once assembled the casserole can be baked at the same time the chicken is cooking. Making a casserole requires a little extra effort, but it is much more appealing especially for kids than a mound of grain and some veggies on the plate. The broccoli and quinoa can be steamed in the Combi steam oven at the same time or prepared in a double boiler on the cooktop. The casserole can be prepared in advance and baked when needed. Ingredients ½ cup quinoa, Tricolor quinoa has a nice appearance, steamed 1 bunch broccoli, sliced into ½” thick slices, steamed 3 tbsp olive oil 2 tbs fresh lemon juice 2 cups grated mozzarella or cheddar cheese 3 tbsp mayonnaise 1 tbsp Dijon mustard ⅓ cup coarsely grated Parmesan cheese Preparation Lightly butter or oil an oven casserole dish that will accommodate the broccoli. Combine the quinoa and broccoli in a large bowl, add the salt and pepper, oil, and lemon juice and toss gently to combine. Layer the broccoli mixture into the prepared casserole dish. Combine the cheese with the mayonnaise and mustard and spread evenly over the top of the casserole. Scatter the Parmesan cheese evenly over the top. Bake in the Convection Bake or Convection Roast Mode 350 °F. If only cooking two dishes, bake the casserole on the lower oven rack. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Baked Eggplant Stuffed with Lamb Convection Bake or Convection Roast Baking this flavorful dish of eggplant stuffed with lamb in Convection ensures the eggplant softens to perfection absorbing the fabulous flavors of the savory lamb filling. Eggplant is used very creatively in many recipes throughout the Mediterranean region, and this recipe where the eggplant is stuffed with flavor packed lamb patties is a taste sensation. It can take 40 - 50 minutes to bake eggplant until the flesh has softened so several small narrow eggplants are the best choice for this recipe. I served this recipe with pita bread and tzatziki, but if you were in the mood to create several Mediterranean dishes they could be baked alongside some stuffed peppers . INGREDIENTS 2 - 3 small narrow eggplants 1 lb. ground lamb 1 shallot, minced 1 tsp ground garlic or 3 cloves garlic finely minced 1 tsp turmeric ½ tsp dried oregano ¼ cup tomato puree (not tomato paste) Salt & pepper to taste To Serve Pita bread, tzatziki or Greek salad with crumbled feta Serves 2 - 4 PREPARATION Rinse the eggplants and cut them into 4 - 6 evenly spaced slices, without cutting the eggplant all the way through. Arrange the prepared eggplant on a shallow rimmed baking tray and brush or spray the exposed eggplant with the olive oil. Combine the ground lamb with the seasonings, then scoop the mixture into large 2” balls flattening them enough to insert in between the eggplant slices. Push a thin metal skewer into each eggplant to hold them in place if necessary. Heat the oven in the Convection Bake or Convection Roast mode to 350°F (200°C) and bake the prepared eggplant on the center oven rack for 30 minutes. Baste the eggplant with the pan juices and cook for another 15 - 20 minutes until the eggplant is very soft. Note: Form any unused lamb into patties and freeze for another use. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How To Bake Apple Pie in Convection Convection Bake Mode A freshly baked pie may take some time to prepare and bake but the result is so rewarding it’s definitely worth the effort. Convection Bake is the ideal mode for baking pies so that the crust is evenly baked through and the filling condenses perfectly. Good varieties of apples for baking are Granny Smith, Pink Lady and Golden Delicious. For a perfectly baked pie crust and filling the Convection Bake mode ensures the best results. INGREDIENTS For the Pastry 2 ½ cups unbleached all-purpose flour 2 tbsp granulated sugar ½ tsp kosher salt 2 sticks very cold unsalted butter, cut into small cubes Approx. ⅓ cup ice cold water 1 egg beaten and mixed with a little water for the egg wash For the Filling 6 large apples, peeled cored and sliced into ¼” thick slices ⅓ cup packed brown sugar ¼ cup all-purpose flour 1 tsp ground cinnamon ¼ tsp freshly grated nutmeg ¼ tsp ground ginger PREPARATION For the Pastry The first step is to make the pastry, this can be done by hand, in a food processor or even a stand mixer. I find making the pastry in a food processor the easiest. For best results, make sure the butter is very cold and cut into small ½” pieces and also that the water you add to bring the pastry together is ice cold. Place the flour, sugar and salt in the bowl of a food processor bowl and pulse to combine. Add the cubed butter pieces and pulse until the mixture resembles a coarse meal. With the motor running, trickle in the ice cold water until the mixture forms a ball. Remove from the processor, dust lightly with flour and flatten into a disc. Wrap the pastry tightly in plastic wrap and refrigerate for at least 30 minutes. When it’s time to roll out the pastry and assemble the pie, remove the pastry from the refrigerator and let it soften slightly before rolling out. Divide the pastry into two pieces making one slightly larger for the base. Line a 9” pie dish with the larger piece of pastry and roll out the smaller piece to a 9” diameter. Refrigerate the pastry while preparing the apples. For the Apples Peel core and slice the apples into ¼” thick slices and mix with the sugar, flour and spices. Layer the apple slices in concentric rings into the prepared pie pan and set aside to rest for 15 minutes, to allow the juices to be drawn out. While the apples are resting, arrange the oven racks so you can bake the pie in the lower part of the oven and heat the oven in the Convection Bake mode to 350 degrees. When ready to bake, brush the edges of the pastry with the egg wash. Place the smaller pastry disc over the apples and press the edges together. Trim the pastry to ¾ - 1” and fold the overhang over itself to crimp the edges. Brush the top of the pastry with more egg wash and make a few decorative slits in the pastry to vent the steam. If you are concerned about the filling bubbling out of the pastry onto the oven floor during baking you can bake the pie on a rimmed baking sheet. Now that the bottom heating elements in our ovens are concealed this is less of a problem, however some apples are definitely juicer than others and some bubbling may occur. Pies typically bake at 375 F for approximately 1 hour and ten minutes, but when baking in Convection it’s best to reduce the temperature by 25 degrees to avoid overcooking the edges . The exact cooking time will depend on the size of the oven. The recipe I used in the video used a much higher baking temperature and I found it overbaked the pastry. So I recommend you use 350 F degrees. That temperature might have worked well in the recipe writer's oven but since all ovens are different for best results it’s important to use the timing and temperature that work best for your oven. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Zucchini Lasagna with Turkey, Ricotta and Pesto Convection and Convection Bake Mode This wonderful combination of ingredients makes for a delicious lasagna and the preparation is simplified by baking the zucchini “noodles” in Convection. Whether you are eating a low-carb diet or have a glut of zucchini, this lasagna recipe using zucchini slices instead of noodles is definitely worth a try. Slicing the zucchini only takes a few minutes then they are seasoned and placed in the oven to bake while you prepare the meat sauce. Not only are zucchini more flavorful when prepared this way they will give off less liquid when the lasagna is baked. Once the zucchini and meat sauce are cooking, prepare the cheese and fresh herbs and your delicious lasagna will come together in no time. Overall preparation time is about 40 minutes and the baking time for the lasagna is also approximately 40 minutes. INGREDIENTS 3 large zucchini, end trimmed, cut lengthwise into ¼” thick slices ½ tsp dried oregano 4 tbsp olive oil 2 lbs. ground turkey or beef 1 small yellow onion, chopped 3 cloves garlic, minced ½ tsp mixed Italian seasoning 1 24 oz jar pasta sauce Pinch dried red chili flakes 1 15 oz container ricotta cheese 1 ½ cups shredded mozzarella or 4 cheese blend 1 cup shredded Parmesan cheese 1 egg ¼ cup chopped fresh basil and oregano leaves ¼ cup pesto sauce 1 9x13” oven casserole dish PREPARATION Heat the oven in the Convection or Convection Bake mode at 400 degrees. Arrange the zucchini onto 2 lightly oiled rimmed baking sheets, sprinkle the zucchini with a little kosher salt, cracked pepper, oregano and drizzle or spray a little more olive oil on the top. Slide the trays into the oven and bake for 15 - 20 minutes until beginning to brown at the edges. Remove and set aside. Meanwhile, heat a large heavy pan over medium heat, add a light film of oil to the pan, increase the heat to medium high and add the ground beef. Sear the meat, breaking it up with the back of a spoon until evenly browned. This can be done in batches if necessary. Remove the pan from the heat and transfer the meat to a bowl with a slotted spoon. Place the pan back on the stove and heat over medium heat. Add the remainder of the olive oil and sauté the onion until softened. Stir in the garlic and seasoning and cook for a minute or two. Reserve 1 ⁄ 2 a cup of the pasta sauce to spread on the bottom of the baking dish and add the remainder to the pan together with the cooked beef and a pinch of dried red chili flakes. Bring to a gentle simmer and cook for 15 to 20 minutes. While the meat sauce is cooking, combine the ricotta cheese with the shredded Parmesan cheese and egg, stir in the fresh herbs and add a grind or two of freshly cracked pepper. Arrange the oven racks so one is in the lower third of the oven and change the oven heating mode to Convection Bake 350 degrees. In this mode heat will be directed to the top and bottom of the casserole and the Convection fan will circulate the heat around the oven. Spread the reserved ½ cup of pasta sauce on the bottom of the casserole dish and arrange a layer of zucchini slices across the bottom of the pan. Top with half of the meat sauce and spread half of the ricotta mixture over that, finishing with a sprinkle of ½ a cup of the shredded mozzarella. Repeat the layers, finishing with a final layer of zucchini slices, spread the pesto over the zucchini and the final ½ cup of shredded mozzarella. Place the lasagna in the oven and bake for 40 minutes. For a golden crust, change the oven mode to Broil 425 degrees for 5 minutes at the end of the cooking time. Remove the lasagna from the oven and allow it to rest for 10 - 15 minutes before serving.
