For best results, pizza is best baked on the lowest oven rack closest to the bottom heating element so before heating the oven arrange the oven racks and place a baking stone or baking steel on the rack. If your oven has extension racks definitely use that rack so you don’t have to reach into the oven to add and remove the pizza. Heat the oven to the highest temperature setting in the Convection Roast or Convection Bake mode allowing at least 20 minutes for optimum heating. In these modes both the top and bottom heating elements are engaged and the heated air is circulated around the oven by the convection fan creating a powerful heat source to perfectly cook the pizza. Some European brands have a Turbo mode that is designed specifically for baking pizza but using a baking stone or steel is still recommended for achieving a great crust. The strong lively heat in a gas oven is also great for baking pizza and if your gas oven has the option to add convection definitely choose that option. If your oven has a mode for Baking Stone operation then that mode is designed to be used with an accessory that can be purchased from the manufacturer so don’t choose that mode unless you have the accessory. INGREDIENTS 1 package fresh pizza dough or 1 ball of made from scratch pizza dough Shredded mozzarella cheese Pizza Sauce Toppings of your choice PREPARATION If you use store bought fresh pizza dough, remove the pizza dough from the wrapping at least two hours before you are ready to bake the pizza. Place the dough on a lightly floured surface and cover with a flour sack towel and let it come to room temperature. Heat the oven as directed above with a pizza stone or steel placed on the lowest oven rack for at least 20 minutes. Before punching down the pizza dough and stretching it out, lightly dust a pizza peel with some cornmeal or 00 flour so the dough doesn’t stick to the peel. Place the stretched out dough on the prepared peel and add your preferred toppings taking care not to overload the dough. Slide the pizza onto the heated stone or steel and set the timer for 6 minutes. Check the underneath of the crust for doneness before removing the pizza from the oven and allow it to settle for a few minutes before slicing. The key to a really good soup is of course a good stock. In this recipe cauliflower florets, tossed with garlic and seasoning are roasted in convection then added to the soup base that has been prepared on the cooktop. The soup base is simple sauteed leeks and chicken stock but once blended with the roasted cauliflower the flavor meld to create a delicious soup. I have included a recipe for spicy cheddar cheese crackers that are delicious on their own or served with soup. Ingredients Roasted Cauliflower Soup 1 medium head cauliflower, coarse stem removed, cut into 1" thick slices or florets 2 cloves garlic, minced 1/4 tsp mixed Italian seasoning 2 tbsp olive oil 1 large leek, trimmed washed thoroughly and sliced 1 tbsp olive oil + 1 tbsp butter 6 cups chicken, turkey or vegetable stock 1 tbsp chopped chives Spicy Cheese Crispies ½ cup butter softened 1 ¼ cups shredded extra sharp cheese 1 cup all purpose flour ½ teaspoon salt ¼ teaspoon cayenne pepper 1 ¼ cups rice crisp cereal (I got at TJs) Preparation The Soup Combine the prepared cauliflower, garlic, Italian seasoning and oil and spread onto a rimmed baking sheet. Heat the oven in the Convection Roast Mode 400 - 425 degrees and roast for 20 - 25 minutes until the cauliflower begins to caramelize and is soft. Stir once during the cooking to avoid overbrowning on one side. Meanwhile, heat a 2 qt capacity saucepan on moderate heat and add the remaining olive oil and butter. When the butter is sizzling stir in the leeks and cook over moderate heat to soften. Add the stock and bring to a gentle simmer. Stir in the cooked cauliflower and simmer for 5 minutes, then puree till smooth. Taste and add a sprinkle of sea salt and freshly ground pepper and garnish with chopped chives. Spicy Cheese Crackers These crackers are very easy to make. Once combined, the batter needs to be rolled into a log and refrigerated for an hour or overnight prior to slicing and baking, so plan ahead. Since they are baked at 325 degrees Convection they can be baked before or after the vegetables are roasted. The surprise ingredient of rice krispies gives these cookies a nice crunch. Beat the butter and cheddar cheese in a large bowl till blended. Whisk the flour, salt and cayenne together in another bowl and gradually beat into the cheese mixture. Stir in the rice krispies, then turn onto a lightly floured surface and knead into a stiff dough. Shape the dough into an approximately 7” long roll, wrap in plastic and refrigerate for at least one hour or overnight. Heat the oven Convection 325, cut the cookies into ¼” slices and place 1” apart on an ungreased cookie sheet. Because foods cooked in Convection have more moisture retention, I use Convection for most of my cooking; however, when it comes to baking there are times when traditional Bake actually results in a drier crumb. Scones with Bacon and Cheddar Cheese This delicious recipe from Emeril Lagasse for savory scones makes a generous 16 portions, which is great for entertaining. You can also bake and freeze the scones and refresh them in your steam oven on demand. Scones are best baked on a flat baking sheet with a slight lip, lined with parchment, silicone, or left plain. INGREDIENTS 4 slices cooked bacon, chopped 3 cups unbleached all-purpose flour 1 tbsp baking powder 1 tbsp sugar 1 tsp salt 1 stick cold unsalted butter, cut into small cubes 1 ½ cups sharp cheddar cheese, grated (approx 6 oz) 4 green onion, thinly sliced Freshly ground pepper to taste 1 cup heavy cream + 2 tbsp for brushing the scones before baking PREPARATION Arrange the oven racks to accommodate two pans, and, heat the oven in the Convection or Convection Bake mode to 375 F and prepare the baking sheets. Sift the flour, baking powder, sugar, and salt into a large mixing bowl. Cut in the butter with two forks or a pastry blender, then add the cheese, green onion, and black pepper and work just until the mixture begins to come together. Stir in the cooked chopped bacon and 1 cup of cream and work until it becomes a sticky dough. Dribble in a little more cream or half and half if the mixture is too dry and crumbly. Turn the mixture onto a lightly floured surface and pat it into a large round. Cut the dough in half and form two 7” circles about ¾” thick. Cut each circle into 8 wedges and transfer the wedges to a baking sheet, leaving ½” space between each one. Brush the tops of the wedges with the extra cream and slide the trays into the oven. Bake for 18 - 22 minutes until golden. Check underneath to ensure they are baked through. Remove from the oven and cool on the baking sheets for 5 - 8 minutes, then transfer the scones to a cooling rack. Once cool, they can be stored in an airtight container. The important thing to think about with this combination is timing and temperature. Since the tenderloin has already been seared it only needs about 15 minutes in the oven at a moderate temperature to cook through. However, you also need to factor in 10 minutes for resting before slicing. If the vegetables take about 25 - 30 minutes to cook then they can go into the oven with the tenderloin at a moderate temperature and when you remove the tenderloin to rest before slicing, you can increase the oven temperature to give the vegetables some high heat for caramelization. INGREDIENTS 1 - 1lb pork tenderloin 1 - teaspoon BBQ spice rub ½ - teaspoon Kosher salt 2 - teaspoons olive oil Vegetables: 2 - cups Brussels sprouts, washed, trimmed and cut into 3 - 4 slices 8 - ounces Cremini mushrooms, cut into 3 - 4 slices 4 - small golden potatoes, cut into ½” thick slices ( or 1 large sweet potato if you prefer) ½ - teaspoon mixed Italian seasoning 1 - tablespoon olive oil PREPARATION Tenderloin Preparation: Heat the Steam Oven in the Combination Convection Steam Mode 350 degrees. Rub the seasoning and oil into the tenderloin and heat a 10 - 12” skillet over moderate heat, sear the tenderloin on all sides then place on a rimmed baking sheet. Toss the vegetables in a little olive oil and spread onto the baking sheet next to the pork. Cook for 15 minutes until the Pork is firm to the touch. Remove the pork from the oven and set aside to rest. Change the oven Mode to Convection 400 degrees and cook the vegetables for another 15 minutes. Using this combination they cook with the combined benefit of humidity and dryer heat for caramelization. Vegetable Preparation: Toss the vegetables with the oil and spread onto a rimmed baking sheet cooking as directed above. Note: if your oven doesn’t accommodate a ½ sized baking sheet you may have to cook the pork on a separate pan so that the vegetables are not too crowded. With the help of your convection oven, you can cook several side dishes at once making the feast easier to prepare. INGREDIENTS 1 shallot, sliced 3 cloves garlic, minced 1 bunch red chard, coarse stem removed, remaining stems and leaves finely chopped 2 sprigs of fresh thyme ¼ tsp freshly grated nutmeg ½ cup chicken stock 1 cup cream 6 large yellow potatoes, peeled 6 oz grated Gruyere cheese PREPARATION Heat a 10 - 12” sauté pan over moderate heat, add 2 tbsp butter and 1 tsp of olive oil to the pan and when sizzling, stir in the shallot, garlic, and chard. Cook over moderate heat to wilt the chard taking care not to burn the garlic and shallots. Set aside to cool. Meanwhile, combine the stock, cream, thyme, and nutmeg in a heavy medium-sized saucepan and bring to a gentle simmer. Cook for approximately 15 minutes to reduce the liquid to almost half and discard the thyme. Butter an oven casserole dish and set aside. With a sharp knife or mandolin, slice the peeled potatoes into ¼” thick rounds. Heat the oven in the Convection Bake Mode to 350F (176C) Layer approximately ⅓ of the sliced potatoes into the prepared casserole dish slightly overlapping each slice. Sprinkle with salt and pepper, ½ of the sauteed chard, and ⅓ of the cheese. Repeat the layers and top with the remaining cheese. Place the casserole on a rimmed baking sheet, carefully pour the heated stock and cream over the potatoes and cover with foil. Bake for 35 minutes, gently remove the foil and continue baking for another 10 - 12 minutes until the top is golden brown and the potatoes are fork-tender. Allow to stand for 15 minutes before serving or, cool completely, cover, and refrigerate. Reheat covered in the Convection Bake mode at 350F for 20 - 25 minutes. The menu includes Chili Relleno Souffle, Creme Brulee Baked French Toast, and to round it out Roasted Breakfast Potatoes with Chicken Apple Sausage. Ingredients 10 eggs beaten 1 pint cottage cheese 1 stick unsalted butter melted 1 7oz can diced green chilies 1lb shredded cheddar or Mexican blend cheese ½ cup sifted flour (or gluten free flour) 1 tsp baking powder ½ tsp salt Preparation Heat oven Convection or Convection Bake Mode 325°F. This delicious recipe has several components, but if you plan the preparation, you can focus on assembling a masterpiece. Roulade with Chocolate Ganache and Candied Orange The sponge cake for the roulade is quick to assemble, and it bakes in 10 minutes, and you can prepare it a day in advance. When ready to assemble the roulade, you must have the following components: the orange syrup and candied orange peel, the whipped cream, chopped toasted nuts, and, of course, the ganache. In this recipe, we used agar-agar to stabilize the whipped cream. Using a stabilizer prevents the cream from weeping liquid into the cake. INGREDIENTS For the sponge cake 4 large eggs (room temperature) 3 tbsp granulated sugar 3 tbsp all-purpose flour, sifted 1 tsp of honey ¼ tsp salt Sponge ingredients Sponge ready for baking Baked sponge For the filling 1 pint of cream 2 tbsp caster sugar 2 tsp of Agar-Agar or 2 tsp unflavored gelatin to stabilize the cream (you can do without it, but you should consume the roulade the same day) ½ cup of chopped toasted almonds or walnuts For the candied orange peel and orange syrup 2 oranges 3 individual cups of water (you will use one at a time) For the ganache and decoration 1 cup of semisweet chocolate (not chips) chopped into small pieces ½ cream ¼ cup of apricot chocolate candy or any other you prefer Candied orange peel PREPARATION Prepare the sponge cake Line a buttered jelly roll pan (10x14”) with parchment and heat the oven in the Convection or Convection Bake mode to 400 F. In a stand or handheld mixer, combine the eggs for a minute. Add the sugar, honey, and salt and beat for about 10 minutes until the mixture is pale and holds its shape. Reduce the speed of the machine to the lowest setting and gradually fold in the sifted flour. Spread the mixture into the prepared baking pan, place in the oven, and bake for 10 minutes. When the sponge comes out of the oven, remove it from the sheet pan and cool it on a cooling rack for 5 minutes. Invert the sponge onto a sheet of parchment and peel off the layer from the bottom of the cake. Starting at the narrow end, slowly roll the cake in the parchment, then set it aside to cool. At this point, you can continue with the recipe or refrigerate the cake until it is ready to use. If refrigerated, it must be brought to room temperature before unrolling. Prepare the candied orange peel and orange syrup With a peeler, cut strips of orange skin from 2 oranges. Then, cut these strips lengthwise in half. Ensure you only cut the skin and not the white part of the orange. Place the orange peels in an 8-inch pan and cover with 1 cup of water. Bring the water to a boil. Cook for about 30 seconds or until the water starts changing color. Discard the water. Add 1 cup of water to the pan with the orange peels and boil again for about 30 seconds, then discard the water. Now add 1 cup of water to the pan, for the third time, and ¼ of sugar. Reduce the liquid until the orange peels become translucent. Remove the peels from the pan and spread them over sugar, making sure they are completely covered in sugar. Once they cool, remove the excess sugar from the candied orange peels and place them on a wire rack until they completely dry out. To prepare the orange syrup, add the juice of two oranges to the pan where you prepared the candied orange peel. Cook the syrup until it thickens a bit. You will need 1 cup of syrup for the sponge. Prepare the whipped cream filling and toasted nuts Toast the nuts in a small skillet over medium heat or in the oven until fragrant; remove and set aside to cool. Dissolve the agar-agar in a ¼ cup of water in the steam oven at 212°F for about 10 minutes. Remove it from the steam oven and whisk it rapidly with a fork until smooth. When you completely dissolve it, put it back in the steam oven while still warm to prevent the agar-agar from solidifying. You can also use the microwave for intervals of 30 seconds. Whip the cream with the caster sugar until firm. Before the cream forms stiff peaks, remove ¼ cup and mix the cream with the dissolved agar-agar or gelatin. When well combined, fold this mixture back into the whipped cream and continue beating until stiff peaks form. Prepare the ganache Heat the cream in a small heavy saucepan over medium heat until it simmers, but do not let it boil. Place the chocolate in a small heat-proof bowl, and pour the cream over the chocolate when it has reached a simmer. Let it rest for a few minutes, then slowly stir the mixture until thoroughly combined. Set the ganache aside to rest for an hour until it has cooled and thickened. Assemble the roulade Gently unroll the cake and pour the orange syrup evenly over the surface. Now spread the whipped cream evenly over the cake, leaving a ½” border around the edges so the cream doesn’t squish when rolled. Sprinkle the nuts over the cream and gently roll the cake up again. Invert the sponge when cooled Work on bottom side of sponge Add the cream and almonds Place the filled, rolled cake on a cooling rack set over a sheet pan or cutting board to apply the ganache. Gently spread the ganache over the cake and use a fork to create a pattern. Decorate with the orange peel and your preferred candies. While some of these supplies may be essential when I see those disposable deep turkey roasting pans and basting tubes it is a reminder that despite the great cooking tools such as convection in our modern ovens, many people are still roasting the turkey using an old fashioned cooking method. How Convection Makes Roasting a Turkey Easier Using a Convection mode to roast a large turkey not only ensures a juicy flavorful turkey, the turkey cooks faster and requires no turning or basting. Best of all, once the turkey is removed from the oven to rest all the oven side dishes can be added to the oven and cooked at the same time. By the time the turkey has rested, gravy has been made and the turkey carved the piping hot side dishes will be ready to serve. When turkey is roasted in convection the heated air circulates around the oven cooking the turkey from the edge to the center. In order for the turkey to cook evenly it should be placed on a rack in a shallow pan so the heated air can cook the turkey from the edge to the center. When the turkey is placed directly in a high-sided pan the heat of the pan leeches moisture from the turkey and the high sides prevent the heat from cooking the turkey evenly. How to Find the Perfect Roasting Pan Shallow sided roasting pans that have a rack can be found online but you can also make use of pans and racks that may already be in your cupboard. In this video (link to new video) I show how a turkey can be roasted on a rimmed baking sheet with a rack or heat tolerant silicone trivet. A V-rack placed in a shallow-sided baking pan is another good option. Also, roasting peppers is an easy way to add flavor and pizazz to your day-to-day cooking. Once roasted and the skins are removed, the peppers take on a rich, luscious texture and flavor. These flavorful roasted peppers can be added to egg dishes, salads, pasta dishes, or just served as an appetizer on crostini best of all, you can roast 4 or 5 peppers at one time using the Broil mode in your Convection oven. Oven Roasted Peppers as appetizers Ingredients 4 peppers in a variety of colors make for a wonderful presentation Preparation Arrange the oven racks so that the top rack is close to the Broil element but far enough away so that the peppers do not come into contact with it. If your oven has an extension rack, use that rack, as it makes it very easy to move very hot trays in and out of the oven. Heat the oven in the Convection Broil or Broil mode to 475 F. Line a small shallow-rimmed pan with foil, shiny side down. Slice the peppers in half lengthwise and discard the seeds. Either the Convection Bake or Convection Roast modes are suitable for roasting vegetables, although if your oven features both options the more powerful Convection Roast mode will ensure better caramelization . These modes use a combination of direct heat from the Top and Bottom heating elements but because the fan is circulating the heated air the vegetables cook evenly and will not dry out. Rack position is also important to ensure even cooking results. Generally roasting on rack position 2 counting up from the bottom is the best rack position so that the vegetables can cook evenly without burning. However, if you want very crispy cauliflower or roasted potatoes the lowest rack position closer to the heating element may provide better results. When roasting on the lowest rack position, the vegetables should be turned part way through the cooking to avoid burning. Rack position is important when roasting The oven temperature is also important, most recipes are written for the Bake or Roast mode and may indicate a higher temperature but in Convection a slightly lower temperature of 375 F will give better results. Remember, when you use a convection mode the heat is circulated around the oven, cooking the food from the edge to the core so if the temperature is too high you can risk overcooking the edges before the center is cooked through. Best Vegetables for Roasting Root vegetables are of course ideal for roasting, but you can also roast greens such as cabbage, Brussels sprouts and kale, so everything is worth a try. Roasting a medley of vegetables is an easy way to create a colorful, flavorful side dish that can be enhanced with some crumbled cheese, mixed salad greens or toasted nuts. The important thing to keep in mind is cutting the vegetables in a uniform shape to ensure even cooking and choosing vegetables that have the same approximate cooking time.
