I have successfully cooked, all types of rice, bulgur, quinoa, barley, lentils and even orzo pasta, in my experience beans still work best simmered in a pan on the cooktop. Most grains are cooked in a ratio of 2 parts water to 1 part grain but I find using less water gives a better result. No need to boil the water, just add cold water to the pan and place in the oven. If the grains have a little residual moisture at the end of the cooking time you can strain them or just let them sit for a few minutes out of the oven to finish absorbing the liquid. Tips for cooking vegetables: When cooking or blanching leafy greens I find it’s best to cook them in the solid pan tossed with a little moisture to prevent them from sticking to the cooking tray If you are going to saute the greens after blanching you will need to squeeze out the moisture and let them dry out Artichokes also are best cooked in the solid pan with some water and lemon slices, cooking time may be a little longer than on the stove-top so check them after about 20 minutes to determine the degree of doneness. Most other vegetables can be steamed in the perforated pan. Cooking time for most vegetables will be between 6 - 8 minutes, depending on the size and freshness of the vegetables When steaming potatoes for potato salad I use the perforated pan and cook them till just fork tender but when steaming potatoes for mashed potatoes I use the solid pan with some water and let the potatoes get softer for easy mashing Tips for cooking eggs: The steaming time for eggs will always depend on the size of the eggs and how cold they are Generally it will take about 20 minutes to “hard” cook eggs 15 minutes for a softer egg Just place the eggs in the perforated pan set the timer then plunge into cold water when you remove from the oven to stop them from cooking. For poached eggs, crack the egg into a lightly buttered ramekin and place in the oven, cooking time will be between 5 - 6 minutes, I find 5 ½ minutes is ideal for large cold eggs. For a delicious breakfast or brunch you you can put some cooked vegetables in the bottom of the ramekin, top with a little cheese then crack the egg on top. If the vegetables are cold place the ramekin in the oven for a few minutes to heat them through, then add the cheese and egg and cook for 5 ½ minutes that way you won’t overcook the eggs trying to get the vegetables warm. Almost any food you can normally blanch, steam or boil in a saucepan can be steamed in the steam oven and delicate foods such as custard, flan and cheesecake do not need to be cooked in a water bath. Jars for canning can be sterilized in steam and the processing can also be done in the steam mode. Steamed Dim Sum & Steamed Veggies Meat, fish, poultry,vegetables and baked items especially breads, benefit from being cooked with a combination of convection and steam. Convenience features such as reheating and defrosting, will take longer but, spectacular results are ensured. What is the Benefit of Cooking with a Steam Oven Steam ovens cook food with a combination of heat and humidity and in a nutshell, cooking with steam inhibits cellular breakdown which translates to better flavor and better nutrient retention. Other benefits include, the ability to cook multiple foods at one time with no transfer of flavor and because steam ovens are smaller than traditional ovens, larger roasts such as turkey will cook faster. Tips for Steaming in the Steam Oven Since water boils at 212 F, most steam ovens are preset to this temperature in the Steam mode. When cooking in a saucepan the pan is typically covered to tray steam and cook the food, however foods do not have to be covered when being cooked in the steam oven. Tips for Baking in the Steam Oven When baking in the steam oven be sure to reduce the recipe temperature by 25 F and also to watch the timing. The recipe temperature is reduced when baking because convection heat cooks food from the edge to the center, if the temperature is too high the edges may cook too quickly. Since steam ovens are smaller than traditional sized ovens. A baking steel or baking stone can be used to form a crisp crust when baking breads and perforated baking forms are ideal when baking French bread. Casseroles can be baked uncovered in the steam oven and if additional browning is required change the mode to Broil (if your oven has that mode) for the last 5 - 8 minutes of cooking time. Tips for Roasting in the Steam Oven Small cuts of meat , fish and poultry can be cooked directly on a rimmed baking sheet or the solid oven pan. However when roasting whole poultry or larger cuts of meat, placing the meat on a rack in a shallow pan will ensure better results. Placing the meat on a rack prevents moisture loss from the heat of the pan and elevating the meat ensures the heated circulating air can cook the meat evenly. Timing will be faster when roasting larger cuts of meat in a steam oven. A 4-5 lb chicken will take approximately 1 hour to roast, however a 10 lb turkey will cook to an internal temperature of 165 F degrees in approximately 1 hour and 20 minutes. If your oven is not equipped with a meat probe a wireless meat probe is a good investment to avoid overcooking. Always, factor in resting and carving time when roasting meat and add the side dishes at the appropriate time so they will be ready to serve when the meat is ready to serve. Cooking vegetables and a protein on one tray can be a good option when cooking for one or two people, but when cooking for a larger group or when different temperatures will better suit the foods being cooked, then using two pans is a better option. Sheet Pan Meal Cooked in the Steam Oven Because steam ovens have smaller cavities than standard convection ovens it can make sense to cook the vegetables and protein on separate trays. The other factor to take into account is the temperature that will best suit the foods being cooked. Basically the important factor to successfully cook a sheet pan meal in convection is planning. Tips for Planning the Cooking of a Sheet Pan Meal Let’s review the planning for roasting this sheet pan meal of Pork Tenderloin with Roasted Brussels Sprouts and Carrots. For flavor and appeal a pork tenderloin is best when given a quick sear prior to cooking. Because this is such a lean cut of meat, if the cooking is finished in the oven at a low temperature, the meat will be very tender and juicy. Once removed from the oven the pork should be set aside to rest for 5 minutes or so prior to being sliced. Carrots cut into ¼” thick slices on the diagonal and brussels sprouts sliced into ¼” slices will cook in 20 minutes. Onions, garlic and maybe some mushrooms or parsnip cut to the same dimensions can be added to the mix for added flavor. So here is the cooking plan: For the vegetables: Heat the steam oven in the combination Convection Steam mode to 325 F. Combine the vegetables with a little olive oil salt and your preferred seasoning, spread on a rimmed baking tray and place in the oven. The vegetables will be cooked at a low temperature in the combination convection steam mode then finished at a high temperature in the convection mode without added moisture for crisping and browning. For the pork: Heat a skillet over moderate heat, season the pork tenderloin, add a little oil and butter to the skillet and brown the tenderloin on all sides over moderate heat. Transfer the tenderloin to a small oven pan or use the skillet if it is oven-safe and place in the oven. Cook for 12 - 15 minutes until the meat is firm to the touch. Remove the tenderloin from the oven, remove it from the hot pan and set aside to rest. Change the oven mode to Convection and increase the temperature to 400 degrees and cook the vegetables for an additional 5 minutes. Both the pork tenderloin and the vegetables benefit from a short period of high heat cooking but at different stages of the cooking process; however, by taking the time to plan the cooking you can easily use one oven to cook the entire meal. This is a very simple meal, but I hope it gives you a sense of how to plan and cook a sheet pan meal in the steam oven. Not only is this an easy meal to cook, but there is so much value in roasting a whole chicken. In addition to enjoying a great meal, any extra chicken can be used in salads or sandwiches and the carcass can be turned into a delicious homemade stock. Steam Oven Mode for Roasting a Whole Chicken Cooking with a combination of heat and humidity ensures amazing results, however cooking in a moist environment is not conducive to achieving crisp skin when roasting poultry. For best results begin the roasting process in the Convection mode at 400 - 425 F for 15 minutes. Then change the oven mode to Combination Convection Steam or use a moderate percentage of humidity (60%) if your oven has that option and set the temperature to 340 - 350 F and cook the chicken for 50 - 60 minutes. While the chicken is roasting you will see moisture bubbling under the skin of the chicken. In effect as the chicken heats, the natural juices poach the meat and while the skin browns it doesn’t become really crisp. If your oven has a Broil function you could also use that function for additional browning at the end of the cooking. However, I would recommend pouring off the juices that accumulate in the pan first. Best Type of Pan for Roasting a Chicken Placing the chicken on a rack in a shallow pan provides the best results when roasting a whole chicken. Roasting on a rack allows the heated air to circulate unimpeded around the chicken, cooking it evenly and prevents the heated pan from leeching moisture from the chicken. When chicken is roasted directly on a pan, as the pan gets hot the convection fan will pick up moisture and splatter it all around the oven. Placing the chicken on a rack not only ensures a juicy chicken but also a much cleaner oven. Timing It stands to reason that very cold meats will take longer to cook and may not cook as evenly so letting the chicken sit outside of the refrigerator for an hour before cooking is ideal. Depending on how cold the chicken is, the cooking time for a 4 - 5 lb chicken is approximately 1 hour 10 minutes. Keep in mind steam ovens are smaller than regular ovens so the cooking time will be a little less than in a regular-sized oven . However you should also allow 15 minutes for resting and carving. In my experience using an oven meat probe can be tricky when roasting a chicken because they are not very meaty. If the probe is not inserted correctly the oven may turn off earlier than it should and interrupt the cooking process. Certainly you can check the internal temperature with an instant read thermometer but the traditional method of checking for doneness, making sure the leg swings free is best. When chicken is roasted in convection you may notice some redness around the bone, don’t panic. This is because cooking with convection is not as drying as cooking with radiant heat. Once the chicken has been removed from the oven the temperature can be increased for extra browning or crisping if needed. The vegetables can be roasted in the large solid oven pan or a shallow rimmed baking sheet. Be sure to stage the oven when cool to ensure both trays will fit at the same time. Steam ovens are amazing tools but remember recipes only provide generic information so it’s up to the user to understand how to benefit from the more sophisticated tools they are cooking with. When cold food is reheated in a steam oven it literally brings food back to life as the steam gently penetrates into the food warming it evenly throughout. Tips for Reheating Food in the Steam Oven Most steam ovens have a Reheat function with a default temperature setting that the manufacturer has determined will provide the best results. Since the goal is to heat the food evenly it is best to use the preset temperature for most foods, although there are some exceptions. Generally heating cold food takes approximately 10 minutes, but the time will depend on how dense the food is and the quantity being reheated. A large slice of lasagna for example might take 15 minutes whereas a dish with some grains and roasted vegetables may only take 8-10 minutes. Food can be reheated in the oven cooking containers, on a plate or in a bowl or casserole dish: When cooked meats such as beef or lamb are reheated the meat will take on a slightly greyish tone however, once you cut into the meat you will see it remains perfectly pink on the interior and will taste freshly cooked. Pizza and baked items are best reheated at a higher temperature. Heat the oven to 350 and once hot place the pizza or baked item in the oven for 3 - 5 minutes depending on the density of the item. The steam oven can also be used to warm dishes so that food stays warm when served and also to hold prepared food prior to serving. Steam Oven Maintenance Steam is a remarkable tool for cooking, but I can’t stress enough how important it is to take care of your oven and keep it free of moisture when it is not in use. Leaving moisture in the tank or not drying the oven out in between use can lead to mold growing on food particles that may not even be visible. If you use your oven in the morning to cook oatmeal, poach eggs or reheat food then it is ok to leave the water in the tank if you plan to use the oven later that day. However it is best to make sure the tank is emptied daily and the oven dried out. To quickly dry the oven you can set it to the Convection mode 350 F for 10 minutes or wipe it dry with a soft cloth. Roasted peppers can be enjoyed in so many different ways. Added to egg dishes, hot sandwiches, pizzas, casseroles or to vegetable side dishes or even enjoyed as an appetizer, the rich flavor adds that special something to any dish. Roasting peppers for appetizers or main dishes PREPARING PEPPERS FOR OVEN BROILING It’s easy to char multiple peppers at one time in the oven using either the Convection Broil or Broil mode set to high or 475 degrees. First slice the peppers in half, discard the seeds and cut away any excess membrane. Place the peppers on a rimmed baking sheet and press down on them to flatten them. You can line the baking sheet with foil, shiny side down for easy clean up. Hummus with roasted peppers TIPS FOR OVEN BROILING Remember when you are using the Broil mode in your oven, the top elements are working at maximum intensity so you won’t need a long preheat time. Even if the oven has not fully come to temperature it’s okay to put the peppers in because the Broil element heats so quickly. Make sure there is space between the food and the broil element and always keep the door closed when broiling in the oven. However, a good tip when broiling in the oven is to run your overhead ventilation, that way any smoke or steam that escapes the oven will be quickly vented out. Pulled pork with roasted peppers STORING ROASTED PEPPERS It will take approximately 8 minutes to char the peppers completely and they will not need to be turned. When the peppers have a nice char, take the tray out of the oven and cover the peppers with a paper towel and set them aside to rest until cool enough to handle. As they rest, the flesh will pull away from the charred skin, making it very easy to peel it off. Now you can chop the peppers or leave them whole and place them in a clean container and cover them with olive oil and store them in the refrigerator. The peppers should be consumed within 10 days however, if you add chopped fresh garlic and fresh herbs be sure to eat the peppers within 3 - 4 days. Now with little effort you have a wonderful flavorful ingredient at hand to add flavor and pizazz to your day to day cooking. When cookies are placed on a flat pan that has a slight lip on both or just one edge, the heated air can circulate unimpeded which ensures the cookies will bake evenly. The lip just guides the flow of the heated air. If the cookies are baked on a rimmed baking pan the heated air has to pass through the rim before baking the cookies. The cookies will still bake but they may not bake quite as evenly and may take longer to bake. Here are some more tips to guide you to success when baking cookies in convection. Baking several types of cookies at once! The Most Important Thing to Know About Baking in Convection Always reduce the recipe temperature by 25 degrees when baking in convection, if your cookies have a dark ring around the edge, that indicates the temperature was too high. Tips for Baking Great Cookies in Convection When baking on multiple racks use the same type of pan on each rack. Always check the oven manufacturer’s guide for recommendations for which rack position to use when baking on multiple racks. Rack positions can greatly influence the outcome of baking results especially in larger ovens. Definitely use either parchment paper or a silicone baking mat to ensure evenly baked cookies. Using parchment prevents cookies from spreading and also makes it easy to slide the cookies onto the cooling rack without having to pick them up. Let the cookies rest for 5 minutes on the baking pan to set then slide the sheet of parchment onto the rack with the cookies to cool. Be sure to refrigerate cookie dough before baking or scoop and roll into balls and freeze until ready to bake. When baking frozen scooped cookies add a minute or two to the baking time. Best Convection Mode for Baking Cookies If your oven has a True Convection mode use that mode for baking multiple racks of cookies. If your oven only has a Convection Bake mode you can still bake several trays at one time; however, be sure to check the manufacturers recommendation for the best rack position. If using the traditional Bake mode to bake cookies, bake them on the center rack using the recipe temperature. Remember every oven is different and smaller ovens generally cook and bake faster than larger ovens so adjust the time as needed. What to Avoid Avoid using insulated cookie sheets when baking in convection, however insulated cookie sheets work well when baking in the traditional Bake mode. Homemade cookies are the best because you have control over the ingredients that go into your cookies. Because cookies bake quickly, I highly recommend keeping a few bags of rolled cookies in the freezer so you always have a delicious treat on hand to enjoy with your morning coffee or afternoon tea. Watch my videos and see how easy it can be. Best Uses Roasting large or small cuts of meat, fish, and vegetables and cooking an entire meal at one time. Roasting Large Cuts of Meat. Meats should be cooked on a rack in a shallow pan allowing the heat to circulate around the meat and penetrate from the edge to the center. Large roasts such as bone-in Rib Roasts can be cooked directly on the roasting pan as the bones create a natural rack. Roast Heritage Turkey Temperatures: typically a higher temperature for searing is recommended at the beginning of the cooking time but too high a cooking temperature over a long cooking time can result in overcooked edges and underdone center. No basting or turning is necessary as the rack prevents the juices from being leached out of the meat. Timing: cooking time for large roasts is reduced substantially in Convection, while smaller roasts generally cook in stated recipe time. If your oven is equipped with a meat probe using it when roasting large cuts of meat of 5lbs and over will prevent overcooking. Otherwise, check the meat with an instant-read thermometer ⅔ of the way through the stated recipe time to determine the degree of doneness. Always add resting and carving time to the overall cooking time. 10 minutes for smaller cuts of meat 20 - 30 minutes for larger cuts of meat. In this mode, the heating elements cycle with maximum intensity Cooking an Entire Meal Before you begin, calculate the cooking and resting time of the meat to determine when to add the vegetables or other side dishes. Ideally, side dishes should be ready to come out of the oven when the meat is carved and ready to serve. Determine best rack positions to accommodate all the cooking trays and achieve desired results before heating the oven. For example, vegetables roasted on rack position 2 will benefit from the stronger heat from the bottom heating element while meats cooked on rack position 4 will benefit from the direct heat from the top heating element. Roasting Small Cuts of Meat Small: quick-cooking cuts of meat with a cooking time of 20 - 40 minutes can be cooked directly on a rimmed baking sheet, using recipe timing and temperature. Ideally remove the backbone a day in advance to make a delicious stock so you can even make your gravy in advance and just embellish it with the deglazed pan drippings. Continue cutting along the backbone, through the rib cage to the wing and detach the wing joint. Repeat on the other side then remove the backbone. To flatten the turkey, place your hand on one side of the breast and press down until you hear the bone crack. Repeat these steps on the other side. Season the turkey with 1 tablespoon of Kosher salt and some freshly ground pepper. Cover the turkey with a sheet of wax paper and refrigerate. Remove the turkey from the refrigerator at least 2 hours in advance of cooking to lose the chill. At that time you can add some flavoring ingredients to the pan: onion and garlic, parsley and thyme sprigs and sprinkle the turkey with your preferred seasoning. Place the turkey on a rack in a shallow pan and brush with some vegetable oil or clarified butter. Heat the oven in the Convection Roast Mode or Convection Bake mode at 400F (220C) degrees. If your oven has an internal meat probe, insert the needle into the thickest part of the breast, taking care not to touch bone then slide the pan into the oven. Close the door, touch the Probe symbol and program the meat probe to reach an internal temperature of 165°F. While the turkey is resting it will come to the perfect carving temperature of approximately 180 - 185 degrees. Set the timer for 15 minutes and when the timer has elapsed, reduce the oven temperature to 350 degrees. Remember moderate temperatures are better when cooking in Convection to ensure even cooking. Allow approximately 1 hour for a 10 - 12lb turkey to roast in this method and 1 hour 15 mins for a 12 - 15lb turkey to cook to perfection.
