Once you set the oven in the steam mode you can add in multiple containers of food at one time, all you have to do is determine the timing for each type of food and the order in which you want to cook those foods. Planning is Key When Cooking Multiple Foods at one Time Cooking Multiple Dishes In A Steam Oven It’s easier than ever these days to keep track of the timing when cooking multiple dishes at one time. In addition to the oven timers we have devices such as Alexa, our phones, digital timers and the old fashioned wind up timers. If your oven is connected to the manufacturer's app you will also get an alert when the timing has elapsed. In other words, planning the timing for cooking multiple dishes is easy. Prepare Meals in Advance at the same Time as Cooking Dinner Steaming multiple foods at one time can be helpful when preparing a meal, but also when you are preparing several meals in advance. Say for example you wanted to make mashed potatoes as a topping for Shepherds Pie that you plan to serve on another day, and also steam some bone in chicken for sandwiches as well as steam some rice and vegetables for dinner, well all those foods can be cooked in the Steam mode at the same time. It might sound ambitious, but really it’s amazingly easy. Here is the timing for this scenario: Steamed (2) bone-in chicken legs, prep time, 5 minutes, cooking time 40 minutes. Yield approximately 3 cups cooked chicken + 2 cups chicken stock. Cook in a solid pan with 1 cup of water and the desired aromatics. Set the chicken aside to cool before shredding. Steaming Chicken for Salad Potatoes (4 large) for mashed potatoes, prep time, 5 minutes, cooking time 20 minutes. Yield 4 - 6 servings. Cook in the solid pan, add ½ cup of water and salt. Cook in the solid pan with 1 ¾ cups of water and salt. Allow to stand for 5 minutes then fluff with a fork. Steamed vegetables, green beans, broccoli, asparagus, thinly sliced carrots: 6 - 8 minutes depending on your preference. In this scenario the base for the Shepherd's Pie could be prepared while the potatoes are steaming, once the mashed potatoes are spread over the filling you would have a dish ready for another meal. Once cooled, the chicken can be shredded and stored ready to add to sandwiches or salads and you will have some simple side dishes ready to serve with dinner. Planning to cook this way is a very efficient way of keeping your refrigerator stocked with healthy nourishing food, so there is always something good to eat. Remember that Shepherds Pie you made in advance well that will heat beautifully in the Steam oven without needing to be covered because, it won't dry out when baked in the combination Convection/Steam mode. With No Cooktop to Clean, Clean-Up is Easy Since all the steam oven cooking containers can be washed in the dishwasher, clean-up is much easier and you have managed to cook a lot of food with little stress. Don't Go Without Breakfast, Cook it in the Steam Oven Using the steam oven to cook multiple foods at breakfast time also makes it easier to ensure everyone gets a healthy breakfast. Oatmeal can be cooked directly in the bowl water in the Steam mode. The timing is approximately 6 minutes, but if the bowl stays in the oven for 10 minutes nothing bad will happen. Eggs can also be poached in the oven at the same time, for large cold eggs between 5-6 minutes works best. Although at higher altitudes it can take up to 8 minutes. Poached Eggs In A Steam Oven Keep the Steam Oven Clean and Dry For ovens with a tank it is recommended to empty the tank after each use, however, if you use the oven to cook breakfast and plan to use it again that evening the tank can be emptied after the last meal of the day is cooked. Just be sure to dry the oven out to maintain a hygienic environment. Think Beyond Cooking One Item at a Time and Let the Oven Work for You Steam ovens are truly remarkable tools, and I encourage you to think beyond just using the oven to prepare one food at a time. Always ask yourself, is there something else I can cook at the same time to get a head start on another meal or to make it easier to prepare several dishes at one time. With a little planning you will get great results every time when cooking with your steam oven. Ingredients 2 - tablespoons Chinese rice wine or Dry Sherry 2 - teaspoons cornstarch 1 - tablespoon + 2 teaspoons soy sauce 1 - tablespoon Sherry vinegar 2 - teaspoons Hoisin sauce 2 - teaspoons sugar 1 - teaspoon sesame oil 1 - head cauliflower, cut into florets 2 - tablespoons, vegetable oil 3 - ounces, thick cut bacon, cut into 1” pieces 1 - teaspoon Sichuan peppercorns or ½ teaspoon black pepper 3 - scallions, cut into 1” pieces 1 - small jalapeno, seeded and cut into thin slices Preparation Preheat the oven to Convection Bake or Convection Roast 375 degrees. In a medium bowl combine the wine, cornstarch and 1 tablespoon of the soy sauce and the vegetable oil. Add the cauliflower florets and bacon and toss to coat. Spread the mixture onto a rimmed baking sheet and roast for 15 minutes until the edges of the cauliflower begin to crisp. Meanwhile combine the remaining soy sauce, vinegar, Hoisin sauce, sugar and sesame oil. Toss the cooked cauliflower mixture with the sauce and sprinkle with the scallions and jalapeno before serving. Nowadays, we have steam ovens that offer varying degrees of heat and levels of humidity for baking perfectly crisp crusty bread. Baking bread in a steam oven Proofing Dough in a Steam Oven The first step when baking bread with yeast is of course proofing and most convection and steam ovens have a proof mode. In a convection oven the circulating air set to a low temperature of 100 F or less maintains an even temperature that is not drying. The advantage in the steam oven is moisture which provides an ideal environment for the yeast to grow in abundance. When you proof in a steam oven you do not have to cover the bowl, just put it in the oven for the specified time. Poke the dough when the time has elapsed or it has doubled in size, and if it leaves an indent it has successfully proofed so you can continue the recipe as directed. Just keep an eye on the timing to avoid over proofing the dough. Once proofed the dough can be formed and placed in the baking pan. In this video I am baking petite baguettes using a perforated form that holds three loaves. The perforations allow the heated air to circulate evenly around the dough creating that wonderful crisp crust. Now the formed loaves go back into the oven for the second rise and once they are ready, I will increase the oven temperature and change the mode to the combination convection steam mode. Some ovens, like mine feature different levels of steam that I can choose for baking bread and others feature specific modes for bread baking so it’s always a good idea to follow the manufacturer's recommendations. When you change the oven mode you can remove the loaves, slash the tops then return them to the oven as it heats. My oven heats so quickly that once they are slashed I put the loaves back in the oven, but you can also let the bread rest outside of the oven until it is heated. Baking with Steam In terms of temperature remember you are baking in convection so if the recipe temperature is 400 degrees, I recommend you reduce the temperature to 380 - 375 and also watch the timing. Recipes are developed for full size ovens, and the cavity size of a steam oven is generally much smaller so baking time may not need to be as long. Remember to check the underneath of the breads before you remove them from the oven to ensure they are properly baked through. Baking with a Cast Iron Pan Now when it comes to baking crusty loaves of bread a popular method is to bake the bread in a cast iron pan with a lid, then remove the lid towards the end of the baking time. Baking with the lid ensures the steam emitted during baking stays in the pan, removing the lid ensures the bread, achieves that perfect crisp crust. When using this method best results will be achieved by changing the mode to convection and increasing the oven temperature by 25 degrees for the final 10 minutes of baking. However, there is an option you can use that will also give great results without having to use a cast iron pan. Are you ready to bake bread? Click here Get the recipe for the Classic Petite Baguettes Baking with a Baking Stone or Steel When baking in a steam oven instead of the cast iron pan, the bread can be baked directly on a baking stone or baking steel. I find that with the added humidity of the oven I can achieve a wonderful crust without having to use a pan. A baking stone or steel can also be used when baking pizza or free form tarts in either a convection or steam oven. You will have to heat the stone or steel for at least 15 - 20 minutes at 400 - 425 F to get it to the perfect temperature. When baking with a stone or a steel, line a pizza peel with a sheet of parchment and place the formed bread directly onto the parchment. When you place the bread in the oven slide the parchment onto the hot stone or steel. This way the bread won’t stick it it’s much easier to handle. If your oven has variable humidity settings you can use higher humidity during the first part of the baking and eliminate or lower the humidity and increase the temperature by 25 degrees for the final ten minutes of baking. This replicates the technique used with a cast iron pan and should provide the same great results. Baking bread is a really rewarding experience and there are many types of bread you can experiment with and your steam oven is an amazing tool for achieving baking perfection. Personally I was never a fan until I began cooking chicken breasts in convection and now I can honestly say I really enjoy adding tender convection baked white chicken meat to salads, grain bowls, sandwiches and a variety of other dishes. TEMPERATURE AND TIMING ARE KEY TO SUCCESS Convection is a great choice for cooking lean cuts of meat because convection circulates heated air around the oven cooking food from the edge to the center preserving the natural moisture in food. Temperature is another factor that will influence the results, if the oven temperature is too high that circulating air will cook the edges before the center is cooked through, so moderate temperatures are the best. Also, if the chicken is thicker at one end it is worth taking the time to try to even out the shape for more even cooking. Another factor is time, obviously the cooking time will depend on the weight of the food and the shape of the meat. Remember meat does continue cooking when removed from the oven so reducing the cooking time by 5 minutes can make all the difference. BONE IN OR BONELESS My preference is always for cooking bone in skin-on chicken breasts, as they retain more moisture when cooked on the bone and the meat is easy to remove from the bone to slice into serving potions. Best of all you can make a nice bit of stock with the bones. Either a dry rub or a wet marinade can be used for added flavor. Boneless skinless chicken breasts definitely benefit from a wet marinade for added flavor and texture. They won’t pick up much color however you can always add a touch of added heat from the broiler if needed. Learn how to roast a chicken in Convection BEST CONVECTION MODE TO CHOOSE The Convection mode you choose will depend on the modes your oven features. Convection or Convection Bake are good options for chicken breasts with a moderate temperature of 325 - 335 degrees. The Convection Roast mode uses more concentrated heat from the top heating element which can be a little powerful for lean meats. If you want to add additional browning then I recommend increasing the temperature and maybe changing the mode to Convection Broil for a short time at the end of the cooking time. RESTING TIME IS IMPORTANT Be sure to factor in the resting time before slicing the chicken especially when cooking larger bone in pieces. You can see how juicy the chicken is as I slice it and you can see how tender the meat is. Overcooked meat has a more dense fibrous texture making it unpleasant to chew. So follow these tips and enjoy succulent juicy chicken every time by cooking in Convection. Preparing a Thanksgiving Feast Turkey cooks much faster in Convection, a 20 lb room temperature turkey will typically cook in 2 hours a 12-15 lb turkey will take closer to 1 ½ hours. However, you need to factor in resting time, gravy making, and carving so add another 50 - 60 minutes. Key to success is getting the turkey close to room temperature prior to roasting. Timing Chart Convection Bake or Convection Roast Mode 20 lbs turkey 2 hrs 50 - 60 min resting & carving Convection Bake or Convection Roast Mode 12-15 lbs turkey 1 1/2 hrs 50 - 60 min resting & carving If you use a convection-mode, once the turkey comes out of the oven you can add all your oven side dishes to cook at one time. The timing for cooking roasted root vegetables and casseroles is approximately 40 minutes so by the time the side dishes are cooked everything will be ready to serve at the same time. Dishes with a shorter cooking time can be added in at the appropriate time. Stage Your Oven Before You Turn It On Be sure to stage your oven with all the pans when it is cold, so you know exactly how you can load in all your dishes. 30 and 36” ovens accommodate extra large rimmed baking sheets and two 9 x 13” casseroles side-by-side on a rack. Even my 24” oven accommodates a half sheet pan and two casserole dishes side-by-side. Stuffing & Veggies Because of the faster cooking time it is safer to bake a stuffing casserole than to stuff the turkey. If you stuff the turkey, you will need to cook it for a longer time and it will be a little drier. So now you know the overall cooking time for the turkey and side dishes is about 3 hours. To keep things simple it is ideal to prep the vegetables and casseroles in advance so the only active work you will have is carving the turkey and gravy making. Let’s face it, it’s far better to take this in stages rather than trying to do everything all at once. What About Baking Pies or Rolls? Well pies should definitely be baked earlier in the day or the day before, but rolls are wonderful when freshly baked, so they are best baked before the turkey goes into the oven. Chocolate Pecan Pie The advantage of using convection when baking is that you can bake on multiple racks at one time with even results. Remember when baking in a Convection mode always reduce the recipe temperature by 25 degrees to ensure even baking. Uneven baking results indicate that the oven temperature was too high. Get A Headstart On Making The Gravy If you can pick up some turkey legs before Thanksgiving and make some stock then you can actually make the gravy while the turkey is cooking. Otherwise use the turkey neck and wing tips to make stock while the turkey is roasting. Then when you have deglazed the pan drippings and captured the pan juices you can add those to the prepared gravy for added flavor. I usually make my cranberry sauce and bake the croutons for the stuffing the day before to minimize the amount of clean-up and work I have to do on Thanksgiving day. One of our favorite recipes is a savory rustic tart with ham and leeks. Rustic fruit tarts are a popular dessert that is easy to assemble and quick to bake, and the same concept can be used to create a delicious savory tart. This tart is not only delicious but also has an elegant presentation that is sure to impress. Rustic Tart with Ham & Leeks With a little practice, making a short-crust pastry is very easy. Just make sure the dough has a nice pliable texture and that you rest it for at least 30 minutes. While the pastry is resting, you can saute the leeks and set them aside to cool. Because the tart is fairly thin and the pastry must bake through completely, I recommend baking it on the lowest rack of an electric oven. However, if you are baking this tart in a gas oven, please use rack position 2, counting up from the bottom . INGREDIENTS For the Pastry 1 ½ cups unbleached all-purpose flour 1 tsp kosher salt 1 ½ sticks (6 oz) chilled, unsalted butter, cut into small pieces ¼ cup ice cold water For the Filling 2 medium leeks, green tops removed, stems cut into thin slices 1 tbsp olive oil 1 tbsp butter 1 round Boursin cheese or other soft creamy cheese with herbs ½ cup grated Gruyere cheese 4 thin slices ham, cut into thin strips Filling ingredients PREPARATION To make the pastry, combine the flour, salt, and butter in the bowl of a food processor and pulse for about 15 seconds until the mixture resembles a coarse meal. Or combine in a bowl with a pastry cutter or two forks. Add the water in a steady stream with the motor running until the dough comes together in a ball. Turn the dough onto a lightly floured surface and roll it into a disk. Wrap in plastic wrap and refrigerate for at least 30 minutes or up to an hour. Wash the sliced leeks in warm water to remove any grit and dry thoroughly to prepare the filling. Heat a small skillet over moderate heat. Add the olive oil and butter, stir in the leeks, and sauté until softened. Keep the temperature moderate to avoid browning the leeks. Set aside to cool. Arrange the oven racks so you can place the tart on rack position one (electric ovens) or rack position two (gas ovens) and heat the oven in the Convection Bake mode to 350 degrees. Line a flat or rimmed baking sheet with a sheet of parchment or a silicone mat. Remove the pastry from the refrigerator and press it into a flat circle with the heel of your palm. Gently roll the dough out to a 12” circle on a lightly floured surface, and then transfer it to the prepared baking sheet. Spread the Boursin cheese over the pastry with an offset spatula, leaving a 1 ½” border around the edge. Spread the cooled leeks evenly over the cheese, and top with the chopped ham and Gruyere cheese. Fold the edges of the pastry in towards the center and brush the edge with the egg wash. That is to say the heat came from a heating element in the floor of the oven, either exposed or concealed and the top heating element (which is also the broil element) would cycle on and off at moderate intensity to provide browning. Radiant Heat vs Convection The downside of cooking with radiant heat is that it tends to have a drying effect on food. This dry heat can be beneficial when baking; however, when roasting meats, frequent basting or brining the meat in liquid prior to cooking is necessary in order to prevent the meat from drying out. The other issue was having to rotate pans to achieve even baking and cooking results. In a convection oven there is a fan on the back wall of the oven encircled by heating elements. When you engage a convection mode the fan circulates the heated air around the oven cooking food from the edge to the center. So now the food is being cooked by heated air instead of direct heat from the heating elements. Benefits of Cooking with Convection Foods cooked in convection have better moisture retention, meats do not require basting or turning and you can cook on multiple racks at one time. Using convection will turn your oven into one of the most useful tools in your kitchen. Best Uses Broiling thicker cuts of meat such as steaks, chicken thighs, lamb chops, pork chops, and fish steaks. Meats should be cooked on a 2-piece broil pan with slats to prevent the dripping fat from being exposed to the intense heat. Small quick-cooking items, shrimp, vegetables, thinner cuts of fish, and chicken can be cooked on a rimmed baking sheet in the Broil Mode. Grilled Flank Steak Determine the best rack position by placing the broiling pan with the food on the oven rack before heating the oven to ensure the food will not be too close to the heating element. Broiling is similar to grilling in that we use Direct Heat for searing the meat and to create flavor. However to cook the meat through we use Indirect Heat, which means moving it away from the intense heat source. To achieve this in the oven, sear the meat on High then change the Mode to Convection. Drop the temperature to 300 - 350 degrees and move the food to a lower rack away from the strong direct heat. When you remove the meat from the oven after broiling always take it off the broiling pan and rest it on the cutting board to prevent the meat from continuing to cook from the residual heat of the pan. This method is only for lean tender cuts of meat. You can use a temperature between the range of 160 - 200°F and a finishing temperature of 400 - 425°F for a crisp golden brown finish. Beef Tenderloin When cooking with low temperatures of 200 - 250 degrees, the cooking time for large roasts will be quite long. Smaller cuts of meat such as chicken pieces, fresh sausages, and thick-cut chops need only about 40 minutes of low-temperature cooking prior to grilling. Always check the internal temperature of meats with an instant-read thermometer or the oven meat probe to determine the degree of doneness. If you are going to “finish the cooking” on the grill or with a high heat sear then target an internal temperature at least 5 degrees below the normal cooked temperature in order not to overcook the meat during the final high heat stage of cooking. Things to Notice when Roasting with Low Temperatures When cooking red meats in this mode you will notice that the color of the meat is uniformly reddish even though the meat is thoroughly cooked. The appearance of very red or pink meats can concern people who prefer their meat medium or well done. What is the solution? simply pop a few slices into the steam oven at low temperatures and the redness will dissipate but not ruin the melt-in-your-mouth texture of the meat. Quick cooking grains such as couscous and bulgur can be cooked by pouring boiling water over them, covering the pan, and leaving the grain to absorb the water or you can cook them in the steam oven using the Steam-mode. Of course, the benefit of using your steam oven is that you can cook some vegetables at the same time for an easy delicious salad or side dish. If your oven doesn’t have small-sized pans to cook the ½ cup of couscous, use a small Pyrex or other ovenproof casserole dishes. INGREDIENTS ½ cup whole wheat couscous (I used the Trader Joe’s brand) ½ cup water 2 large broccoli crowns, florets, and some tender slices of the stem only ½ red onion, minced ½ cup dried cranberries ½ cup toasted almonds (toasted in regular Bake mode 350 for 10 minutes) ½ cup toasted pepitas (toasted with the almonds) Dressing 3 tbsp olive oil 3 tbsp mayonnaise 1 tbsp Dijon mustard 2 tbsp apple cider or golden balsamic vinegar PREPARATION Heat the steam oven in the steam mode at 212 degrees. Place the couscous in a small solid pan and add ½ cup of water and a pinch of kosher salt. Place the broccoli florets and stems in the perforated pan. Slide the pans into the oven and set the timer for 6 minutes. Remove the broccoli and set it aside to cool before adding to the remaining salad ingredients. Leave the couscous in the oven for another 6 - 8 minutes until all the water has been absorbed. Combine the remaining ingredients in a large shallow bowl and prepare the dressing. Combine the dressing ingredients in a glass measuring cup, mix well and add a good pinch of sea salt and freshly ground pepper to taste.
