Ratatouille is a flavorful vegetable stew from Southern France that combines a bounty of summer vegetables, eggplant, zucchini, peppers and tomatoes. Typically it is cooked in a heavy casserole on the cooktop, but the vegetables can also be combined and roasted in the oven for an easy Convection Meal. Ratatouille combines well with roast chicken, oven baked polenta and our favorite roast lamb and can even be served over pasta or grains. Ingredients Roast Leg of Lamb 1 semi boneless leg of lamb, approx 4 - 5lbs 4 cloves garlic, minced 2 tbsp, finely chopped fresh rosemary 2 tbsp olive oil Kosher salt Oven Ratatouille 3 shallots, peeled and cut in half 10 cloves garlic, peeled 2 small Italian eggplant or 1 Italian and 1 Fairy Tale eggplant, cut into 1 ½” chunks 3 large zucchini, cut into 1 ½” chunks 2 large peppers, yellow and orange are nice for the color, peeled, seeds removed, cut into 1 ½” pieces ( a Y shaped vegetable peeler does a good job of removing the peel) ¼ cup olive oil 1 level tsp herbs de Provence 4 medium Roma tomatoes, cut into quarters (these are added later) Preparation To coordinate the cooking plan on the following timing: Lamb - 1 hr 25 minutes including 10 - 15 minutes for resting and carving. Ratatouille - 40 - 50 minutes Begin by seasoning the lamb and letting it sit overnight in the refrigerator. First give the lamb a generous sprinkle of Kosher salt, then combine the rosemary, garlic and oil and rub it all over the meat. Cover loosely with a sheet of wax paper and refrigerate for 6 hours or overnight. And be sure to let it sit outside of the refrigerator for at least an hour prior to cooking. Organize the oven racks to accommodate the roast and the tray of ratatouille underneath. Heat the oven in the Convection Roast or Convection Bake Mode 325 °F. Place the lamb on a rack in a shallow pan. And if your oven has a meat probe insert the sensor into the meat on the diagonal, taking care not to touch any bone. Slide the lamb into the oven and activate the meat probe function then program to the desired internal temperature. Remember the internal temperature will rise as the meat rests so if you like your lamb medium rare, select an internal temperature of 125 - 130 degrees. When the lamb has cooked for at least 45 - 50 minutes, slide the tray with the ratatouille into the oven. Oven Ratatouille Combine the shallots, garlic, eggplant, zucchini and peppers in a large shallow mixing bowl. Season with a sprinkle of Kosher salt and the herbs, add enough of the olive oil to coat the vegetables evenly then spread onto a rimmed baking sheet. The vegetables will shrink a fair bit during the cooking so it’s best if they are fairly crowded on the tray. When the lamb has cooked for 45 - 50 minutes, add the tray of ratatouille into the lower part of the oven. Remove the lamb when the meat probe indicates it has reached the desired internal temperature and set aside to rest. Carefully combine the tomatoes with the other ratatouille vegetables and reprogram the oven to finish cooking the vegetables in the Convection Roast or Convection Bake Mode,400℉ and set the timer for 25 minutes. All it takes is a little planning. Best of all it’s so easy to quickly chop a butternut squash and add it to the oven to cook while you are cooking another dish at the same time. Since one of the benefits of convection cooking is being able to cook on multiple racks at one time with no transfer of flavor, it’s a shame to miss the opportunity to get another meal started. This recipe serves 4 Ingredients 1 medium butternut squash, peeled, seeds removed, cut into 1 - 2” chunks 1 tbsp olive oil ¼ tsp Ancho chili powder 1 tsp toasted Pistachio or Walnut oil (optional) Soup Base 1 medium yellow onion, coarsely chopped 2 stalks celery, strings removed, cut into 2” chunks 2 medium carrots, peeled and cut into 2” chunks 3 cloves garlic, peeled and smashed ¼ tsp dried oregano 4 cups chicken or vegetable stock Preparation Heat the oven in the Convection Bake Mode 375 degrees. Toss the cubed butternut squash with the olive oil and chili powder or spice of your preference. The squash should be lightly coated with oil, so drizzle a little more oil over the cubed squash if needed. Spread the squash onto a rimmed baking pan and bake on the lower rack for 25 - 30 minutes until the flesh has softened. Meanwhile prepare the soup base. Soup Heat a 2 qt saucepan over moderate heat. Add 2 tbsp unsalted butter and a little olive oil. When the butter is sizzling and beginning to brown, stir in the onion and cook over moderate heat until translucent. Stir in the celery and carrots and cook for about 5 minutes on medium low heat taking care not to burn the onions. Add the garlic and oregano and cook for a few minutes then stir in the stock. Bring the mixture to a gentle boil and simmer for 20 minutes. Stir in the cooked squash then puree. Taste and adjust the seasoning as needed. A nice way to finish this soup before serving is with a drizzle of a specialty oil such as roasted pistachio or walnut oil, it just adds that little extra depth of flavor. Mexican Meatloaf Classic Red Rice When you turn your oven to cook something for dinner, always ask yourself, can I cook another part of the meal at the same time in the oven? One nice feature of this meal is that both dishes can be cooked and served in the same dish. If another family member prefers to eat fish, just add it in for about 10 minutes prior to serving. This meatloaf recipe is a great example of taking a classic recipe and jazzing it up with different flavors and a new presentation. Allow 10 minutes to assemble the meatloaf, at least 50 minutes to bake in the oven and 10 minutes to rest. The Red Rice includes a variety of vegetables and will cook in about 20- 25 minutes, so it can go in about 30 minutes after the meatloaf and both dishes will be ready to serve at the same time. Ingredients Mexican Meatloaf 2 - lbs. ground sirloin 2 - large eggs ¾ - teaspoon ground cumin 1 - teaspoon chili powder 1 - teaspoon kosher salt 1 ½ - cups Monterey Jack cheese 2 - cups fresh Tomato Salsa 1 - cup fresh dried breadcrumbs 3 - 8” corn tortillas, cut into thin ribbons and ribbons cut in half. Classic Red Rice 1 - 14 ½ oz can whole tomatoes in juice, drained 3 - tablespoon chopped white onion 2 - cloves garlic, peeled 1 - cup medium grain white rice 1 - cup hot water 1 - medium carrot, peeled, cut into small dice ⅓ - cup frozen peas ⅓ - cup frozen or fresh corn kernels 6 - sprigs cilantro, tied together 2 - serrano chiles, halved (if you like the spice) 1 - teaspoon salt Preparation 1 - Mexican Meatloaf Preheat the oven in the Convection Bake or Convection Roast Mode 350 degrees. Combine the beef, eggs, cumin, chili powder, salt and a heaping cup of shredded cheese in a large mixing bowl. Measure 1 even cup of the salsa and add it to the mixing bowl together with the breadcrumbs and combine well with a gentle hand. Press the meat mixture into a 9” pie pan and spread ½ a cup of the salsa over the top. Sprinkle the tortillas over the top of the meat and top with the remaining cheese. Bake on rack position 4 or 5 counting up from the bottom for 50 - 60 minutes or until the meat comes away from the edge of the pie plate and the tortillas are crisp. Set aside to cool for at least 10 - 12 minutes then cut into wedges. Serve on a bed of shredded lettuce or coleslaw garnished with the remaining salsa. 2 - Classic Red Rice Combine the tomatoes, onion and garlic and puree until smooth. Combine the rice, tomato puree, hot water, carrot, peas and corn, cilantro sprigs and chilies and salt in an oven-safe pan or casserole dish, cover and place in the oven on rack position 2 (1 up from the bottom) and cook for 20 minutes. Very carefully remove the cover, crack it a little first then remove so you don’t get a burst of steam in your face. Cook for another 10 minutes uncovered then remove from the oven and let stand for at least 5 minutes before discarding the cilantro and chilies and fluffing with a fork. Scoop the dough with a tablespoon cookie scoop and place the mounds at least 2 inches apart on the prepared cookie sheets so they have room to spread while baking. Bake for 12 - 15 minutes until crisp. Transfer cookies to a wire rack to cool and continue baking. Variations: Add lemon zest, orange zest, crystalized ginger or dried fruit. Ingredients 1 - small butternut squash, peeled and cubed ½ - teaspoon ground cumin 2 - tablespoons olive oil For the Stew 1 - tablespoon olive oil 1 - medium onion, finely chopped 2 - cloves, garlic, minced 1 - teaspoon curry powder 1 - teaspoon cumin 2 - cups chopped crimini mushrooms ½ - cup lentils 4 - cups chicken or vegetable stock 1 - 4oz bag of baby spinach or other greens Creamy Roasted Mushroom Soup 2 - lbs cremini mushrooms, stems removed and cut into quarters ½ - cup assorted dried mushrooms, re-hydrated, excess moisture squeezed out 2 - tablespoons olive oil 2 - tablespoons butter 2 - shallots, thinly sliced ¼ - teaspoon herb’s de Provence 3 - cup chicken stock 1 - cup cream Preparation Roasted Butternut Squash with Curried Lentil Stew This is such an easy delicious dish to prepare. Basically you will sauté the onions, garlic, seasonings and mushrooms, stir in the lentils, add the chicken stock and simmer for about 20 minutes. Meanwhile the butternut squash roasts in the oven and is incorporated into the stew when done. For a little color and extra nourishment some greens can be sauteed and stirred in before serving. Heat the oven, Convection or Convection Roast 375. Toss the butternut squash with the oil, some salt and pepper and the cumin. Spread onto a rimmed baking sheet and roast for 20 minutes until softened and slightly caramelized on the edges. Cool slightly before folding into the lentil stew. Here are the steps: Heat a large sauté pan over moderate heat, add the oil and when hot, sauté the onion until softened. Stir in the garlic and spices and cook over moderate heat, add the mushrooms and cook until they begin to soften then add the lentils and stock. Bring to a gentle boil and simmer for 20 minutes. The greens can be stirred into the hot lentil stew to soften or sauteed lightly then stirred in Creamy Roasted Mushroom Soup Heat the oven to Convection or Convection Roast 350 degrees. Remove the stems from the mushrooms and wipe the caps clean with a wet paper towel. Cut the mushrooms into quarters and toss with some olive oil, spread onto a rimmed baking sheet and roast for about 25 - 30 minutes till slightly caramelized. Pour enough hot water over the dried mushrooms to cover and set aside to re-hydrate for about 20 minutes. Remove the mushrooms from the soaking liquid and squeeze out the excess moisture with paper towels. Strain the soaking liquid through a fine sieve to avoid getting any grit in the broth. Heat a large saucepan, add the butter and a little oil. Stir in the shallots and garlic and sauté for a few minutes, stir in a tablespoon or so of sherry, cook for a few minutes then add the chicken stock and bring to a gentle boil. Add the re-hydrated mushrooms and the strained soaking liquid and all but a handful of the roasted mushrooms and carefully puree until smooth. Stir in the remaining mushrooms, cream and a little fresh lemon juice, adjust seasoning as needed. Convection Bake is the ideal mode for baking pies so that the crust is evenly baked through and the filling condenses perfectly. Good varieties of apples for baking are Granny Smith, Pink Lady and Golden Delicious. For a perfectly baked pie crust and filling the Convection Bake mode ensures the best results. INGREDIENTS For the Pastry 2 ½ cups unbleached all-purpose flour 2 tbsp granulated sugar ½ tsp kosher salt 2 sticks very cold unsalted butter, cut into small cubes Approx. ⅓ cup ice cold water 1 egg beaten and mixed with a little water for the egg wash For the Filling 6 large apples, peeled cored and sliced into ¼” thick slices ⅓ cup packed brown sugar ¼ cup all-purpose flour 1 tsp ground cinnamon ¼ tsp freshly grated nutmeg ¼ tsp ground ginger PREPARATION For the Pastry The first step is to make the pastry, this can be done by hand, in a food processor or even a stand mixer. I find making the pastry in a food processor the easiest. For best results, make sure the butter is very cold and cut into small ½” pieces and also that the water you add to bring the pastry together is ice cold. Place the flour, sugar and salt in the bowl of a food processor bowl and pulse to combine. Add the cubed butter pieces and pulse until the mixture resembles a coarse meal. With the motor running, trickle in the ice cold water until the mixture forms a ball. Remove from the processor, dust lightly with flour and flatten into a disc. Wrap the pastry tightly in plastic wrap and refrigerate for at least 30 minutes. When it’s time to roll out the pastry and assemble the pie, remove the pastry from the refrigerator and let it soften slightly before rolling out. Divide the pastry into two pieces making one slightly larger for the base. Line a 9” pie dish with the larger piece of pastry and roll out the smaller piece to a 9” diameter. Refrigerate the pastry while preparing the apples. For the Apples Peel core and slice the apples into ¼” thick slices and mix with the sugar, flour and spices. Layer the apple slices in concentric rings into the prepared pie pan and set aside to rest for 15 minutes, to allow the juices to be drawn out. While the apples are resting, arrange the oven racks so you can bake the pie in the lower part of the oven and heat the oven in the Convection Bake mode to 350 degrees. When ready to bake, brush the edges of the pastry with the egg wash. Place the smaller pastry disc over the apples and press the edges together. Trim the pastry to ¾ - 1” and fold the overhang over itself to crimp the edges. Brush the top of the pastry with more egg wash and make a few decorative slits in the pastry to vent the steam. If you are concerned about the filling bubbling out of the pastry onto the oven floor during baking you can bake the pie on a rimmed baking sheet. Now that the bottom heating elements in our ovens are concealed this is less of a problem, however some apples are definitely juicer than others and some bubbling may occur. Pies typically bake at 375 F for approximately 1 hour and ten minutes, but when baking in Convection it’s best to reduce the temperature by 25 degrees to avoid overcooking the edges . The exact cooking time will depend on the size of the oven. The recipe I used in the video used a much higher baking temperature and I found it overbaked the pastry. So I recommend you use 350 F degrees. That temperature might have worked well in the recipe writer's oven but since all ovens are different for best results it’s important to use the timing and temperature that work best for your oven. The heating element in the bottom of the oven directs powerful heat to the base of the crust while the heated air circulating around the oven helps form a light crisp perfectly baked crust. Because this Convection Bake recipe uses Rapid Rise Yeast, the dough requires only 20 minutes for proofing before being rolled out and topped with a generous helping of cheese. Basically, in approximately 45 minutes you are able to enjoy delicious homemade cheesy bread which is almost instant happiness. While this dough is easy to make getting the water temperature just right is key to success. Testing the water temperature on the inside of your wrist before adding to the dry ingredients is recommended to avoid adding water that is either too hot or too cold. While this recipe shares the same ingredients as pizza the dough is much thicker and because it’s thicker it can handle a more generous amount of cheese. You can certainly add additional flavor accents just take care not to weigh the dough down. The bread can be baked on a baking stone or a metal pan placed on the 1st or second rack from the bottom of the oven. Ingredients Bread Dough 2 ½ cups all-purpose or bread flour 1 tsp Kosher salt 1 tsp sugar 1 tbsp, rapid rise yeast 1 cup warm water 1 tbsp olive oil Topping 1 cup shredded Mozzarella cheese 2 tbsp grated Parmesan cheese 3 tbs mayonnaise 1 tbsp chopped green onion Dash red chili flakes Preparation Combine the four, salt, sugar, and yeast in a medium-sized bowl. Combine the water and oil in a measuring cup and add to the flour mixture. Mix with a wooden spoon to form a soft dough. Turn onto a lightly floured surface, and gather the dough together in a ball and knead a few times to create a smooth ball. Place the dough into a clean bowl add 1 tsp of olive oil and turn to coat with the oil. Cover with a kitchen towel or select the Proof mode in your oven and place uncovered in the oven to proof for 20 minutes. While the dough is proofing, combine the topping ingredients in a small bowl. Heat the oven in the Convection Bake Mode 450 degrees. If using a pizza stone place the stone in the oven during the preheating phase. Place the dough on a lightly floured surface, punch it down flatten it into a disc with the heel of your palm. Place the dough over the back of your hands and stretch it into a 12” circle. If using a pizza stone, place the dough on a lightly floured pizza peel. If using a baking pan, place the dough on a lightly oiled baking sheet. Spread the cheese mixture evenly over the dough and slide the bread into the oven. Bake for 12 to 15 minutes until golden brown and the cheese is bubbling. Chicken Shawarma is normally served in pita pockets, but I am serving it as a meal over rice. A fair number of spices are required for the chicken shawarma and ideally, the chicken should be combined with the spice mix a few hours in advance of cooking. Cook the rice at the same time as you cook the black-eyed peas and vegetables, then cook the shrimp and sausage when you are ready to serve, so easy and so delicious! Ingredients 2 - tablespoons vegetable oil 1 - medium yellow onion, chopped 1 - medium orange or yellow pepper chopped 1 - jalapeno pepper, sliced 5 - cloves, garlic, sliced 2 - 15 oz cans black-eyed peas or 4 cups cooked black-eyed peas 2 - cups chicken or beef stock 2 - cups cooked, long grain rice 3 - andouille sausages, cut into ½”pieces 1lb - large shrimp (16-20per lb) peeled and deveined and cut into ½” pieces Preparation Heat a 12” saute pan over moderate heat. Add the oil and stir in the onions. Cook until translucent then stir in the garlic, yellow pepper and jalapeno pepper and cook to soften. Add the black-eyed peas and stock and simmer gently for 30 minutes. Stir the cooked rice into the black eyed pea mixture and heat through gently before serving. Line a rimmed baking sheet with foil, shiny side down. Combine the shrimp and andouille sausage in a bowl with a light coating of vegetable oil and a sprinkle of garlic powder and Old Bay seasoning and spread onto the prepared baking sheet. Begin by slicing the eggplant, sprinkling the slices with salt then setting them aside for an hour or so. Now heat the oven in the Broil mode and broil the peppers, set them aside to cool before removing the skins. Then you can prepare the remaining ingredients and rinse the eggplant slices and bake them. Once the eggplant slices have been baked, then the ingredients are layered into a baking dish and baked for about 20 minutes. INGREDIENTS 2 medium eggplant, cut into ¼” thick slices 4 peppers, red, yellow, and orange, halved and seeded ¾ cup olive oil 3 tbsp pine nuts ¾ cup fresh breadcrumbs made from a rustic or sourdough loaf ¼ tsp dried oregano 2 tbsp chopped Italian parsley 6 anchovies ½ cup pitted black olives PREPARATION Slice the eggplant, arrange on a large rimmed baking sheet, sprinkle with Kosher salt, and set aside for an hour. Heat the oven in the Broil mode, at 475 degrees, the oven will come to temperature quickly in this mode. Cut the peppers in half lengthwise, remove the seeds and stem and flatten the peppers with the heel of your palm. Place the peppers on a foil-lined rimmed baking sheet and broil until the skins blacken. Remove the pan from the oven and set aside to cool. Drape a paper towel over the peppers to help sweat off the skins. When the peppers are completely cooled, removed the blackened skin and cut the peppers into thick strips. Meanwhile, heat a medium-sized skillet and add 2 tbsp of olive oil. Add the pine nuts to the pan and cook until gently browned then stir in the breadcrumbs and cook for a few minutes. Remove the pan from the heat, season with salt and pepper, and stir in the oregano and parsley. Heat the oven in the Convection Bake mode at 350 degrees. Rinse the eggplant slices and pat dry with paper towels. Spread the eggplant slices onto a rimmed baking sheet and drizzle with some olive oil, bake for 15 - 20 minutes until softened. Now you are ready to assemble the casserole. Lightly oil the casserole dish and begin with a layer of eggplant, top with a layer of peppers, then a layer of the breadcrumb mixture and a scattering of olives. Add the anchovies in a criss-cross pattern over the tops of the casserole and drizzle the remaining olive over the top. Bake for 15 - 20 minutes in the Convection Bake mode at 350 degrees. The pastry comes together in minutes but does need to rest for at least 30 minutes in the refrigerator. Then the pastry is rolled out into a large circle, placed on a flat baking sheet, topped with a little filling and the fruit and the sides folded in. After 30 minutes in the oven it’s ready to be devoured. INGREDIENTS Pastry 1 ½ cups unbleached all-purpose flour 1 stick unsalted cold butter, cut into small pieces 1 tsp sugar Pinch of salt ¼ cup ice cold water Filling 1 8oz container Mascarpone cheese 2 tbsp sugar 1 basket large strawberries, cut into ½” thick slices 1 stalk rhubarb cut into thin slices PREPARATION For the pastry: Combine the flour, butter, sugar and salt in a large bowl and cut the butter in using a pastry blender until the mixture resembles coarse meal. Or the really easy method, place the ingredients in the bowl of a food processor and pulse to achieve a coarse meal. Dribble the water in and continue mixing until the pastry forms a ball. Flatten the pastry into a disc, wrap in plastic wrap and refrigerate for 30 minutes. Forming and baking the tart: Heat the oven in the Bake mode 375 degrees or Convection Bake mode 350 degrees. Roll the pastry out to a 14 inch circle on a lightly floured surface and transfer the pastry to a flat baking sheet. Carefully spread the Mascarpone cheese over the pastry leaving a 3” border then sprinkle with 1 tbsp of the sugar. Arrange the fruit over the top and sprinkle the remaining 1 tbs of sugar over the fruit. Fold in the edges of the pastry crimping where necessary. Slide the baking tray into the oven on the second rack position from the bottom and bake for 30 minutes until the crust is golden. To preserve moisture and ensure fork-tender results, tenderloin is best slow-cooked in Convection with a burst of high heat for a flavorful finish. Cooking lean tender cuts of meat using the reverse sear method ensures the meat cooks evenly and doesn’t dry out. I cooked my 3lb tenderloin at 200°F to an internal temperature of 125°F in the Convection or True-Convection Mode . Then I removed it from the oven to rest for 20 minutes, at which time I switch to Convection Roast Mode and increased the oven temperature. At this time, I also added the vegetables I was roasting to serve with the beef. Once the beef had rested I returned it to the oven to cook with high heat for 10 minutes. The result? A perfectly seared crust and an even pink interior. You will notice that the meat remains very pink on the interior, this is because there is so little moisture loss with this method of cooking. Embedding some thinly sliced garlic into the roast and cooking it with some fresh thyme adds a lot of flavor to the meat during the slow cooking phase. INGREDIENTS 1-3lb beef tenderloin tied and trimmed 2 cloves garlic, slivered 3 sprigs of fresh thyme or ½ tsp mixed Italian seasoning Olive oil PREPARATION Make a few small incisions around the roast with a sharp knife and insert the slivered garlic. Rub the roast with some good olive oil and sprinkle with Kosher salt and freshly cracked pepper. Tuck the thyme sprigs under the string and set the roast aside for an hour to come to room temperature. Heat the oven in the Convection or Convection Roast mode at 200°F (100C). Place the meat on a shallow-rimmed baking pan (a rack is not necessary), and insert the oven meat probe. Program the probe to reach an internal temperature of 125F (52C). This first phase of cooking will take approximately 40 - 50 minutes. When the meat probe signals the programmed internal temperature has been reached remove the roast from the oven and set it aside to rest for 20 minutes. The oven temperature can now be increased to 375°F (190C) or 400°F (205C) for larger-capacity ovens and any vegetables or side dishes you plan to serve with the roast can be added at this time. Once the roast has rested, return it to the oven and cook for 10 minutes until the exterior is nicely browned. Remove the roast from the oven, cut the strings and remove the thyme sprigs before slicing the roast into individual servings. Remove the stems from the mushrooms and wipe the caps clean with a wet paper towel. Cut the mushrooms into quarters and toss with some olive oil, spread onto a rimmed baking sheet and roast for about 25 - 30 minutes till slightly caramelized. Pour enough hot water over the dried mushrooms to cover and set aside to re-hydrate for about 20 minutes. Remove the mushrooms from the soaking liquid and squeeze out the excess moisture with paper towels. Strain the soaking liquid through a fine sieve to avoid getting any grit in the broth. Heat a large saucepan, add the butter and a little oil. Stir in the shallots and garlic and sauté for a few minutes, stir in a tablespoon or so of sherry, cook for a few minutes then add the chicken stock and bring to a gentle boil. Add the re-hydrated mushrooms and the strained soaking liquid and all but a handful of the roasted mushrooms and carefully puree until smooth. Stir in the remaining mushrooms, cream and a little fresh lemon juice, adjust seasoning as needed.
