Best of all, you can easily cook another braise simultaneously; this is just one more way convection makes meal preparation easier. Roasted Pork Belly The preparation for this recipe requires minimal effort, and the results are superb. Roasted pork belly can be enjoyed as a roast with vegetable sides, and any extra can be cut into small pieces and sauteed, served with fried rice or a noodle bowl, or served with spicy cabbage slaw. There are plenty of ways to enjoy this decadent cut of meat. We followed a method of cooking the pork belly in a foil packet for the slow-roasting phase. The foil packet captures the rendered fat, and the hot rendered fat basically cooks the meat. Another advantage is that this method makes it easy to contain the fat, cool it, and discard it after cooking. The spices you use will depend upon the flavor you are going for. Traditional spices such as fennel powder and mixed Italian seasoning will work well, but so will Chinese five-spice powder or a BBQ-style seasoning. INGREDIENTS 1 3-4 lb. pork belly Kosher salt Freshly Ground Pepper Vegetable Oil Seasoning of your choice PREPARATION For best results, blot the pork belly with paper towels and let it sit uncovered in the refrigerator overnight. The drier the skin, the crispier it will be. Heat the oven in the Convection or Convection Bake mode 300 ℉. Line a small rimmed baking sheet with foil. Place two more sheets of foil horizontally in the pan and fold the sides up to form an open box. This will capture the rendered fat, and since the meat will be cooked in the rendered fat, it will become very tender. Season the meat (not the skin) with ½ teaspoon of kosher salt, some freshly cracked pepper, and ½ tsp of your preferred seasoning blend. Place the meat in the foil-lined pan and pinch the corners to form a tight seal. Brush the skin with a tablespoon of vegetable oil and place the pan in the oven. MORE PORK RECIPES Chipotle Pork Tenderloin Grilled Pork Chops Baked Country Style Pork Ribs Cook for 2 - 2 ½ hours until the meat is tender. Remove the pork from the oven, change the oven mode to Convection Roast or Convection Bake, and increase the oven temperature to 450°F. Carefully remove the pork from the foil packet and place it on a rack in a shallow pan. Return the pan to the oven and cook for another 20 - 30 minutes or until the skin has crisped. Allow the meat to rest before slicing; we found turning the roast over and slicing it easier, cutting through the crispy skin on the underside. Allow the rendered fat to cool in the foil-lined pan. Once it has hardened, discard it unless you like to use it for other cooking. This casserole sounds so simple however there are several components to prepare before the casserole can be assembled. To simplify the preparation I am going to suggest a few shortcuts that will reduce the prep time. The pasta of course does need to be cooked in a pot of boiling water until al dente, however you have several options with the cauliflower. The cauliflower florets can be steamed in a steam oven or in the microwave, rather than using another saucepan. I don’t advise cooking the florets with the pasta as the rapidly boiling water may soften them too much. The cheese sauce can be prepared in a saucepan or in the microwave. If preparing the sauce in the microwave you will need a large glass measuring cup or bowl with at least a 4 cup capacity. Combine the butter and flour and heat in the microwave for a minute or so, then add the milk and heat for a minute or so until thickened. Check the seasoning before combining with the cheese and the cooked pasta and cauliflower. Or you can prepare as directed below. Ingredients 3 cups elbow pasta 2 cups, small cauliflower or broccoli florets 3 tablespoons butter 3 tablespoons all purpose flour 2 cups milk 1 teaspoon salt Dash of pepper 1 cup grated Jack cheese 2 cups grated Cheddar cheese ¼ cup fine breadcrumbs mixed with ¼ cup grated Parmesan cheese and 2 tablespoons minced fresh parsley Preparation Cook the pasta in 8 cups of water with ½ teaspoon of salt, drain and rinse in cold water. Steam the cauliflower and when cooked combine with the pasta. Heat the butter in a small heavy saucepan, add the flour and stir to blend. Cook for a few minutes taking care not to let the butter get too dark. Whisk in the milk and cook over moderate heat until thickened. Remove from the heat and stir in the cheese whisking until it is all blended, taste and add salt and pepper as needed. Preheat the oven to Convection Bake 350 degrees (using Convection ensures even heat distribution and enables you to roast some meat or vegetables on another rack at the same time). Mix the cheese sauce with the cooked pasta and cauliflower and pour into an oiled oven casserole dish (approx. 9 x 13) cover and bake on the center rack for 30 minutes. After 30 minutes, remove the foil and sprinkle the breadcrumb, parsley, Parmesan cheese mixture over the pasta and cook for another 10 minutes until the topping has browned. It can be prepared in advance. Just remember to take it out of the refrigerator at least 30 minutes before cooking to lose the chill. The chicken will go together easily provided you get organized and set up your dredging station and will take only 35 minutes to cook. The coating of the chicken really needs to be done just before it goes in the oven as the coating gets soggy if the chicken is refrigerated. Broccoli slices can be added to the oven for the last 12 minutes for a delicious balanced meal. Ingredients 6- bone- in chicken thighs, skin removed ½ - cup all purpose flour 1 - large egg 2 - tbsps. milk 1 - teaspoon garlic powder ¾ - teaspoon salt 1 - teaspoon smoked paprika 1 ¾ - cups Panko breadcrumbs 1/3 - cup vegetable oil Double Corn Spoonbread 1 ½ - cups of water 1 ½ - cups whole milk ¾ - cup stone-ground cornmeal 2 - tablespoons unsalted butter 2 - large eggs ½ - teaspoon baking powder 2 - green onions 1 ½ - cups corn kernels 3 - tablespoons Parmesan cheese Preparation Set up your dredging station with 3 medium sized shallow bowls filled with: 1. Flour 2. Eggs well beaten, combined with milk, garlic powder, salt & smoked paprika 3. Panko combined with the oil Preheat the oven Convection Bake or Convection Roast 375 degrees. Line a rimmed baking sheet with parchment paper. Pat the chicken pieces dry with a paper towel and dredge in the flour, roll in the egg mixture and coat with the Panko, then place on the baking sheet. Spray with a mist of cooking oil Oven Fried Chicken, Double Convection Bake or Convection Roast Corn Spoonbread Casserole, Roasted Broccoli Slices. Spray to give the crust an extra bit of crisping and cook for 30 - 35 minutes depending on the size of the thighs. Double Corn Spoonbread With this recipe it’s important to have all the ingredients organized and the pan prepared. You begin by cooking the cornmeal in the traditional manner on the cooktop for about 10 minutes, but it needs a lot of stirring during that time. Then you add the remainder of the ingredients, transfer the mixture to the prepared baking dish and bake. Preheat the oven to Convection Bake or Convection Roast 375 degrees. Grease a shallow 1 ½ quart casserole dish. Combine the water with ½ teaspoon of salt and ½ of the milk in a large heavy saucepan and bring to a boil. Reduce the heat to medium-low and pour in the corn-meal in a steady stream, whisking all the time. Reduce the heat to a low simmer and cook for 10 minutes, stirring frequently until the mixture is very thick and pasty. Remove from the heat and whisk in the butter, add the remaining milk in a steady stream whisking all the time, then add the eggs one at a time and finally the baking powder. Stir in the onions, corn & Parmesan and a little cracked pepper. Bake for 45 minutes or until a tester comes out clean. There are a few steps to making this pie, however the results are definitely worth the effort. If you are short on time use a prepared crust. Ingredients Pastry 1 ½ cups unbleached all-purpose flour Pinch of Kosher salt 1 tbsp granulated sugar 1 stick unsalted butter, very chilled, cut into small pieces. ¼ cup ice water Streusel Topping ½ cup unbleached all-purpose flour 4 tbsps dark brown sugar 2 tsp ground cinnamon ¼ tsp Kosher salt 4 tbsp chilled unsalted butter, cut into small pieces Mix all the ingredients except the butter in a small bowl and stir to combine. Rub the butter in with your fingertips until the mixture begins to form clumps. The topping can be made in advance and refrigerated. Caramel Sauce 1 ¼ cups granulated sugar ¼ cup water 3 tbsp unsalted butter Apples 6 Granny Smith or your favorite pie apple, peeled, and cored and cut into ½” thick wedges. 3 tbsp unbleached all-purpose flour Preparation Directions Combine the flour, salt and sugar in the bowl of a food processor or in a deep mixing bowl if making by hand. Add the butter and pulse until the mixture resembles coarse meal or blend with a pastry cutter or two forks. With the motor running, add the cold water slowly until the mixture gathers into a mass. Turn the dough onto a lightly floured work surface and knead gently for a few minutes. Flatten the dough into a disc and wrap tightly with plastic wrap and chill for 30 minutes or overnight. Before mixing the ingredients for the pie, roll the pastry out and line a 9” deep pie dish, crimp the edges and return the prepared pan to the refrigerator so the pastry remains chilled. Streusel Topping Mix all the ingredients except the butter in a small bowl and stir to combine. Rub the butter in with your fingertips until the mixture begins to form clumps. The topping can be made in advance and refrigerated. Caramel Sauce Combine the sugar and water in a heavy saucepan over medium heat to dissolve the sugar. Increase the heat to medium high and boil until the syrup turns a deep amber. This can take 5 - 8 minutes depending on the pan and level of heat. Once the syrup has reached the desired color, remove it from the heat and stir in the butter, taking care as the mixture will bubble and foam. Place the pan back on the burner over low heat and stir until smooth. Apples Place the apples in a large, wide, shallow bowl so you can easily toss them when adding the caramel sauce. Add the warm caramel sauce and let sit for 10 minutes until the apples release their juices. The caramel sauce will seize up when added to the cold apples but will relax as it sits. Stir the mixture occasionally before adding to the pie crust. Add the mixture to the prepared pie crust and sprinkle the prepared streusel over the top. Arrange the oven racks so you can place the pie on rack position 2, one up from the bottom. Heat the oven in the Convection Bake mode 350 . Slide the pie into the oven and set the timer for 50 minutes, the crust should be golden and the apples tender when pierced with a sharp knife. Transfer the pie to a rack to cool before serving. There are several options for cooking this cut of beef and both yield great results. Typically Beef Rib roasts are seasoned with salt and pepper but you can add your preferred seasoning and of course don't forget the horseradish for serving. Beef Rib Roast In the traditional method the beef is cooked for a short period of time at a high temperature then cooked for a longer period of time at a moderate temperature. The other option is to cook the beef at a low temperature between 160 - 200 F, then finish the cooking with a short period of high heat. This method yields amazing results but the cooking time will be much longer, for accurate results using either the oven meat probe or a wireless thermometer will ensure the best results. Meats cooked in this method will be fully cooked however the meat will be very pink in appearance. When inserting a meat probe, slide the sensor into the meat on an angle and make sure it sits in the meat and doesn’t touch the bone. Ingredients Beef Rib Roast, Choice or Prime Boneless or Bone-In Kosher Salt Garlic Powder Preparation Beef Rib Roast Cooked in Convection Season the meat with a rub of Kosher salt and your preferred seasoning at least a day in advance. Cover the roast with a sheet of wax paper and refrigerate overnight. Remove the roast at least 2 hours prior to cooking so that it will cook evenly. Bone-in-roasts can be cooked directly on a shallow rimmed baking sheet as the meat will not touch the pan. Boneless roasts should be cooked on a rack in a shallow pan so the heat can circulate evenly around the meat and to avoid the heated pan leeching moisture from the roast. Heat the oven to 425℉ in either the Convection Roast or Convection Bake Mode. Place the meat in the oven, insert the oven probe if your oven features one. Close the door and program the meat probe to reach the desired internal temperature, keeping in mind the internal temperature will continue to rise slightly while the meat is resting, then set the timer for 15 minutes. When the set time has elapsed reduce the oven temperature to 325℉ Remove the meat when the desired internal temperature has been reached and rest the meat for 15 minutes before carving Recommended Internal Temperatures Medium Rare - 120 - 125 F, the internal temperature will rise to 130 - 135 F after resting Medium - 130 - 135 F, the internal temperature will rise to 135-140 F after resting Low Temperature Roast Method Follow the steps in the first paragraph of the convection method. Heat the oven to 200℉ in the Convection, Convection Roast or Convection Bake Mode. Place the meat in the oven and insert the probe if your oven features one. Close the door and program the meat probe to reach 5 degrees below the desired internal temperature. The internal temperature will continue to rise while the meat is resting and also when the roast goes back in the oven for the high heat cooking phase. When the desired temperature has been reached, remove the roast from the oven and set it aside to rest for 15 minutes. Increase the oven temperature to 425℉ return the roast to the oven and cook for approximately 15 minutes until the fat has rendered and the crust has crisped and browned. Because the meat has already rested it can be carved without resting again when it is removed from the oven. In this video, I am baking chili sauce chicken wings with some pork meatballs seasoned with garlic and ginger and steaming some rice and bok choy. Asian-influenced recipes are simple to prepare but all that great flavor comes from a combination of ingredients, so begin by measuring out all the ingredients you will need for each recipe for easy assembly. The chicken wings are seasoned with a dry rub and some oil before baking then tossed in a flavorful sauce when they come out of the oven. The ground pork is mixed with some seasoning and finely minced ginger and garlic then scooped into balls. Prep time is about 15 minutes and both dishes will cook for approximately 20 minutes in the oven. I used my steam oven to steam some rice and the greens and everything was ready to serve at one time. Ingredients For the Wings 2 lbs party wings 1 tsp ground paprika (smoked is fine) ¼ tsp garlic powder ¼ tsp turmeric ⅛ tsp cinnamon ⅛ tsp cayenne pepper 1 tsp Kosher salt 1 tsp granulated sugar (optional) 2 tbsp vegetable oil For the Sauce ¼ cup soy sauce ½ cup honey 1 tsp sesame oil with chili sauce 1 tsp freshly squeezed lime juice 1 tsp ground coriander 1 tsp cornstarch Preparation Heat the oven in the Convection Roast or Convection Bake mode at 425 degrees. Combine the chicken wings with the seasoning and oil and spread onto a rimmed baking pan, (foil lined for easy clean-up) Place the pan in the oven in the top part of the oven closer to the top heating element. If making the Asian Pork Meatballs with Garlic and Ginger at the same time, place the pan with the meatballs in the lower part of the oven. Set the timer, cook for 20 minutes then remove the meatballs. For added crispness, increase the oven temperature to 475 degrees and cook the chicken for another 5 - 8 minutes. To make the sauce, combine all the ingredients in a small saucepan except the cornstarch. Combine the cornstarch with a tablespoon or so of the cold sauce ingredients to make a slurry. Heat the sauce ingredients over moderate heat then stir in the slurry and cook till it thickens slights. Pour over the chicken before serving. Other benefits of roasting a turkey in Convection include. Ingredients 1 Turkey Your favorite seasoning Preparation Tips for Roasting a Turkey in your Convection Oven No turning or basting is necessary. Because the turkey is roasted on a rack all the juices stay in the bird, poaching the meat to perfection. After resting the juices are drained out of the turkey for gravy making. Roasting time will be much shorter, use the oven Temperature Probe to avoid overcooking the turkey or follow the estimated timing listed below. Once the turkey is resting, all the oven side dishes can be cooked at the same time so that all the food will be ready to serve when the turkey has rested and been carved Seasoning the Turkey Remove the turkey from the wrapping a few days in advance and place it on a rimmed baking sheet. Remove the neck and giblet packets from the turkey cavities and dry the turkey inside and out with paper towels. Give the turkey a dry rub of kosher salt mixed with your preferred seasoning, a few days in advance and leave in the refrigerator until ready to cook. When cooking in Convection a wet brine is not necessary as the circulating Convection heat does not have a drying effect during the roasting process. Aromatics such as onion, lemon bay leaves or other seasoning can be placed in the cavity prior to cooking for added flavor. Cooking the Turkey Let the turkey sit in a cool place outside of the refrigerator for a few hours prior to cooking. If it is too cold it will cook unevenly. Preheat the oven in the Convection Roast or Convection Bake to 400 degrees. Set the seasoned turkey on a rack in a shallow pan and place a metal skewer between the legs to balance the turkey or tie the legs loosely together. It’s important to know that your turkey will cook faster in Convection and tying the legs too close to the body keeps that part very cold and therefore it may cook unevenly. Placing the turkey on a rack ensures all the juices stay in the turkey during the cooking and allows the heat to circulate evenly around the bird. There will be some drippings but for more drippings you can add some vegetables to the base of the pan and add a cup or two of water once the pan is in the oven. Give the turkey a light spritz with some spray oil or rub with some vegetable oil and if your oven has a Meat Probe insert it into the thickest part of the breast, horizontally, making sure not to touch any bone. Slide the tray into the oven and insert the temperature probe into the oven receptacle. For food safety the internal temperature must reach 165 degrees in the thickest part of the breast and thigh. While the turkey is resting the internal temperature will continue to rise and reach the perfect carving temperature of 180 - 185 degrees in 20 - 30 minutes. Set the timer and cook the turkey for 15 minutes at 400 degrees, then reduce the temperature to 350 degrees for the remainder of the cooking time. The oven will turn off when the internal temperature of 165 degrees has been reached. If your oven does not have a meat probe, use the following chart as a guide. Estimated Cooking Times For small turkeys up to 15lbs allow - 1 ½ - 2 hours cooking time. For turkeys up to 20lbs allow - 2 - 2 ½ hours cooking time. For turkeys over 20lbs allow 3 - 3 ½ hours cooking time. Resting, Carving and Gravy Making When the turkey comes out of the oven set it aside to rest for 30 minutes, then carefully pick it up with 2 kitchen towels and drain the juices from the cavity into the roasting pan and set the turkey aside on a rimmed carving board. When carving the turkey you may notice the area around the bones will be red. Please do not be alarmed, this is a characteristic of Convection cooking. As long as the meat is cooked you are perfectly safe. Discard any vegetables you added to the roasting pan, combine all the pan juices and skim off the fat, you are now ready to make your gravy and begin carving the turkey. To make sure you have enough stock to make gravy we recommend preparing a giblet stock to mix with the pan juices and juices that will come out of the turkey after resting. Additional stock can also be made in advance with turkey legs or wings. Most 30” and 36” ovens can accommodate two large casserole pans side-by-side as well as extra large rimmed baking sheets. Make good use of all that space to cook as many oven side dishes as you can while the turkey is resting and being carved (approx 50 minutes). Using Convection will help you cook an amazing turkey and having all the side dishes ready and hot to serve at the same time really takes the stress out of preparing a huge feast. Cooking with hot oil requires careful attention and once the cooking is finished the oil has to be drained then safely stored and ultimately disposed of so baking the “fried” chicken in the oven is definitely an easier option. What is my solution? Of course "frying" the chicken in the convection oven. In this recipe this chicken soaks in a spicy buttermilk brine for 6 hours or overnight, it is then dredged in flour and set aside to rest before being baked. The buttermilk brine gives the chicken great flavor and spraying the chicken with some spray oil just before it goes into the oven helps with the crisping the batter. INGREDIENTS 8 bone-in chicken pieces 2 cups buttermilk 3 tsp salt 1 tsp ground black pepper 3 tsp dry mustard powder 3 tsp cayenne pepper 2 tsp garlic herb seasoning 2 cups all purpose flour 1 tbsp baking powder Avocado spray oil PREPARATION Combine the buttermilk with the seasoning and stir well, add the chicken and turn so that each piece is evenly coated with the buttermilk. Cover and refrigerate for 6 hours or up to a day. Combine the flour and baking powder in a shallow bowl and dredge each chicken piece in the mixture. Shake off the excess and place the chicken on a rack in a shallow oven pan and set aside to rest before baking. Heat the oven in the Convection Bake mode to 400 degrees. Spray the chicken pieces with the avocado oil spray and slide the tray into the oven. Bake for 35 - 40 minutes until the outside is crisp. Ratatouille is a flavorful vegetable stew from Southern France that combines a bounty of summer vegetables, eggplant, zucchini, peppers and tomatoes. Typically it is cooked in a heavy casserole on the cooktop, but the vegetables can also be combined and roasted in the oven for an easy Convection Meal. Ratatouille combines well with roast chicken, oven baked polenta and our favorite roast lamb and can even be served over pasta or grains. Ingredients Roast Leg of Lamb 1 semi boneless leg of lamb, approx 4 - 5lbs 4 cloves garlic, minced 2 tbsp, finely chopped fresh rosemary 2 tbsp olive oil Kosher salt Oven Ratatouille 3 shallots, peeled and cut in half 10 cloves garlic, peeled 2 small Italian eggplant or 1 Italian and 1 Fairy Tale eggplant, cut into 1 ½” chunks 3 large zucchini, cut into 1 ½” chunks 2 large peppers, yellow and orange are nice for the color, peeled, seeds removed, cut into 1 ½” pieces ( a Y shaped vegetable peeler does a good job of removing the peel) ¼ cup olive oil 1 level tsp herbs de Provence 4 medium Roma tomatoes, cut into quarters (these are added later) Preparation To coordinate the cooking plan on the following timing: Lamb - 1 hr 25 minutes including 10 - 15 minutes for resting and carving. Ratatouille - 40 - 50 minutes Begin by seasoning the lamb and letting it sit overnight in the refrigerator. First give the lamb a generous sprinkle of Kosher salt, then combine the rosemary, garlic and oil and rub it all over the meat. Cover loosely with a sheet of wax paper and refrigerate for 6 hours or overnight. And be sure to let it sit outside of the refrigerator for at least an hour prior to cooking. Organize the oven racks to accommodate the roast and the tray of ratatouille underneath. Heat the oven in the Convection Roast or Convection Bake Mode 325 °F. Place the lamb on a rack in a shallow pan. And if your oven has a meat probe insert the sensor into the meat on the diagonal, taking care not to touch any bone. Slide the lamb into the oven and activate the meat probe function then program to the desired internal temperature. Remember the internal temperature will rise as the meat rests so if you like your lamb medium rare, select an internal temperature of 125 - 130 degrees. When the lamb has cooked for at least 45 - 50 minutes, slide the tray with the ratatouille into the oven. Oven Ratatouille Combine the shallots, garlic, eggplant, zucchini and peppers in a large shallow mixing bowl. Season with a sprinkle of Kosher salt and the herbs, add enough of the olive oil to coat the vegetables evenly then spread onto a rimmed baking sheet. The vegetables will shrink a fair bit during the cooking so it’s best if they are fairly crowded on the tray. When the lamb has cooked for 45 - 50 minutes, add the tray of ratatouille into the lower part of the oven. Remove the lamb when the meat probe indicates it has reached the desired internal temperature and set aside to rest. Carefully combine the tomatoes with the other ratatouille vegetables and reprogram the oven to finish cooking the vegetables in the Convection Roast or Convection Bake Mode,400℉ and set the timer for 25 minutes. All it takes is a little planning. Best of all it’s so easy to quickly chop a butternut squash and add it to the oven to cook while you are cooking another dish at the same time. Since one of the benefits of convection cooking is being able to cook on multiple racks at one time with no transfer of flavor, it’s a shame to miss the opportunity to get another meal started. This recipe serves 4 Ingredients 1 medium butternut squash, peeled, seeds removed, cut into 1 - 2” chunks 1 tbsp olive oil ¼ tsp Ancho chili powder 1 tsp toasted Pistachio or Walnut oil (optional) Soup Base 1 medium yellow onion, coarsely chopped 2 stalks celery, strings removed, cut into 2” chunks 2 medium carrots, peeled and cut into 2” chunks 3 cloves garlic, peeled and smashed ¼ tsp dried oregano 4 cups chicken or vegetable stock Preparation Heat the oven in the Convection Bake Mode 375 degrees. Toss the cubed butternut squash with the olive oil and chili powder or spice of your preference. The squash should be lightly coated with oil, so drizzle a little more oil over the cubed squash if needed. Spread the squash onto a rimmed baking pan and bake on the lower rack for 25 - 30 minutes until the flesh has softened. Meanwhile prepare the soup base. Soup Heat a 2 qt saucepan over moderate heat. Add 2 tbsp unsalted butter and a little olive oil. When the butter is sizzling and beginning to brown, stir in the onion and cook over moderate heat until translucent. Stir in the celery and carrots and cook for about 5 minutes on medium low heat taking care not to burn the onions. Add the garlic and oregano and cook for a few minutes then stir in the stock. Bring the mixture to a gentle boil and simmer for 20 minutes. Stir in the cooked squash then puree. Taste and adjust the seasoning as needed. A nice way to finish this soup before serving is with a drizzle of a specialty oil such as roasted pistachio or walnut oil, it just adds that little extra depth of flavor. Classic Red Rice 1 - 14 ½ oz can whole tomatoes in juice, drained 3 - tablespoon chopped white onion 2 - cloves garlic, peeled 1 - cup medium grain white rice 1 - cup hot water 1 - medium carrot, peeled, cut into small dice ⅓ - cup frozen peas ⅓ - cup frozen or fresh corn kernels 6 - sprigs cilantro, tied together 2 - serrano chiles, halved (if you like the spice) 1 - teaspoon salt Preparation 1 - Mexican Meatloaf Preheat the oven in the Convection Bake or Convection Roast Mode 350 degrees. Combine the beef, eggs, cumin, chili powder, salt and a heaping cup of shredded cheese in a large mixing bowl. Measure 1 even cup of the salsa and add it to the mixing bowl together with the breadcrumbs and combine well with a gentle hand. Press the meat mixture into a 9” pie pan and spread ½ a cup of the salsa over the top. Sprinkle the tortillas over the top of the meat and top with the remaining cheese. Bake on rack position 4 or 5 counting up from the bottom for 50 - 60 minutes or until the meat comes away from the edge of the pie plate and the tortillas are crisp. Set aside to cool for at least 10 - 12 minutes then cut into wedges. Serve on a bed of shredded lettuce or coleslaw garnished with the remaining salsa. 2 - Classic Red Rice Combine the tomatoes, onion and garlic and puree until smooth. Combine the rice, tomato puree, hot water, carrot, peas and corn, cilantro sprigs and chilies and salt in an oven-safe pan or casserole dish, cover and place in the oven on rack position 2 (1 up from the bottom) and cook for 20 minutes. Very carefully remove the cover, crack it a little first then remove so you don’t get a burst of steam in your face. Cook for another 10 minutes uncovered then remove from the oven and let stand for at least 5 minutes before discarding the cilantro and chilies and fluffing with a fork. Line two flat cookie sheets with parchment paper and set aside. Place the rolled oats, flour, salt, baking soda, nuts and chocolate chips in a large bowl and mix together. In a smaller bowl combine, oil, maple syrup, brown rice syrup and vanilla and whisk together.Stir the wet ingredients into the dry. Scoop the dough with a tablespoon cookie scoop and place the mounds at least 2 inches apart on the prepared cookie sheets so they have room to spread while baking. Bake for 12 - 15 minutes until crisp. Transfer cookies to a wire rack to cool and continue baking. Variations: Add lemon zest, orange zest, crystalized ginger or dried fruit. Ingredients 1 - small butternut squash, peeled and cubed ½ - teaspoon ground cumin 2 - tablespoons olive oil For the Stew 1 - tablespoon olive oil 1 - medium onion, finely chopped 2 - cloves, garlic, minced 1 - teaspoon curry powder 1 - teaspoon cumin 2 - cups chopped crimini mushrooms ½ - cup lentils 4 - cups chicken or vegetable stock 1 - 4oz bag of baby spinach or other greens Creamy Roasted Mushroom Soup 2 - lbs cremini mushrooms, stems removed and cut into quarters ½ - cup assorted dried mushrooms, re-hydrated, excess moisture squeezed out 2 - tablespoons olive oil 2 - tablespoons butter 2 - shallots, thinly sliced ¼ - teaspoon herb’s de Provence 3 - cup chicken stock 1 - cup cream Preparation Roasted Butternut Squash with Curried Lentil Stew This is such an easy delicious dish to prepare. Basically you will sauté the onions, garlic, seasonings and mushrooms, stir in the lentils, add the chicken stock and simmer for about 20 minutes. Meanwhile the butternut squash roasts in the oven and is incorporated into the stew when done. For a little color and extra nourishment some greens can be sauteed and stirred in before serving. Heat the oven, Convection or Convection Roast 375. Toss the butternut squash with the oil, some salt and pepper and the cumin. Spread onto a rimmed baking sheet and roast for 20 minutes until softened and slightly caramelized on the edges. Cool slightly before folding into the lentil stew. Here are the steps: Heat a large sauté pan over moderate heat, add the oil and when hot, sauté the onion until softened. Stir in the garlic and spices and cook over moderate heat, add the mushrooms and cook until they begin to soften then add the lentils and stock. Bring to a gentle boil and simmer for 20 minutes. The greens can be stirred into the hot lentil stew to soften or sauteed lightly then stirred in Creamy Roasted Mushroom Soup Heat the oven to Convection or Convection Roast 350 degrees. Remove the stems from the mushrooms and wipe the caps clean with a wet paper towel. Cut the mushrooms into quarters and toss with some olive oil, spread onto a rimmed baking sheet and roast for about 25 - 30 minutes till slightly caramelized. Pour enough hot water over the dried mushrooms to cover and set aside to re-hydrate for about 20 minutes. Remove the mushrooms from the soaking liquid and squeeze out the excess moisture with paper towels. Strain the soaking liquid through a fine sieve to avoid getting any grit in the broth. Heat a large saucepan, add the butter and a little oil. Stir in the shallots and garlic and sauté for a few minutes, stir in a tablespoon or so of sherry, cook for a few minutes then add the chicken stock and bring to a gentle boil. Add the re-hydrated mushrooms and the strained soaking liquid and all but a handful of the roasted mushrooms and carefully puree until smooth. Stir in the remaining mushrooms, cream and a little fresh lemon juice, adjust seasoning as needed. Convection Bake is the ideal mode for baking pies so that the crust is evenly baked through and the filling condenses perfectly. Good varieties of apples for baking are Granny Smith, Pink Lady and Golden Delicious. For a perfectly baked pie crust and filling the Convection Bake mode ensures the best results. INGREDIENTS For the Pastry 2 ½ cups unbleached all-purpose flour 2 tbsp granulated sugar ½ tsp kosher salt 2 sticks very cold unsalted butter, cut into small cubes Approx. ⅓ cup ice cold water 1 egg beaten and mixed with a little water for the egg wash For the Filling 6 large apples, peeled cored and sliced into ¼” thick slices ⅓ cup packed brown sugar ¼ cup all-purpose flour 1 tsp ground cinnamon ¼ tsp freshly grated nutmeg ¼ tsp ground ginger PREPARATION For the Pastry The first step is to make the pastry, this can be done by hand, in a food processor or even a stand mixer. I find making the pastry in a food processor the easiest. For best results, make sure the butter is very cold and cut into small ½” pieces and also that the water you add to bring the pastry together is ice cold. Place the flour, sugar and salt in the bowl of a food processor bowl and pulse to combine. Add the cubed butter pieces and pulse until the mixture resembles a coarse meal. With the motor running, trickle in the ice cold water until the mixture forms a ball. Remove from the processor, dust lightly with flour and flatten into a disc. Wrap the pastry tightly in plastic wrap and refrigerate for at least 30 minutes. When it’s time to roll out the pastry and assemble the pie, remove the pastry from the refrigerator and let it soften slightly before rolling out. Divide the pastry into two pieces making one slightly larger for the base. Line a 9” pie dish with the larger piece of pastry and roll out the smaller piece to a 9” diameter. Refrigerate the pastry while preparing the apples. For the Apples Peel core and slice the apples into ¼” thick slices and mix with the sugar, flour and spices. Layer the apple slices in concentric rings into the prepared pie pan and set aside to rest for 15 minutes, to allow the juices to be drawn out. While the apples are resting, arrange the oven racks so you can bake the pie in the lower part of the oven and heat the oven in the Convection Bake mode to 350 degrees. When ready to bake, brush the edges of the pastry with the egg wash. Place the smaller pastry disc over the apples and press the edges together. Trim the pastry to ¾ - 1” and fold the overhang over itself to crimp the edges. Brush the top of the pastry with more egg wash and make a few decorative slits in the pastry to vent the steam. If you are concerned about the filling bubbling out of the pastry onto the oven floor during baking you can bake the pie on a rimmed baking sheet. Now that the bottom heating elements in our ovens are concealed this is less of a problem, however some apples are definitely juicer than others and some bubbling may occur. Pies typically bake at 375 F for approximately 1 hour and ten minutes, but when baking in Convection it’s best to reduce the temperature by 25 degrees to avoid overcooking the edges . The exact cooking time will depend on the size of the oven. The recipe I used in the video used a much higher baking temperature and I found it overbaked the pastry. So I recommend you use 350 F degrees. That temperature might have worked well in the recipe writer's oven but since all ovens are different for best results it’s important to use the timing and temperature that work best for your oven.
