  • How To Roast Peppers in Convection

    WELCOME TO THE LEARN AND HOW TO PAGE Select a Category then click on an image Convection Modes Steam Modes Tips How To How To Roast Peppers in Convection Crisp slices of peppers are delicious when added to salads however when peppers are charred and the skin is peeled off, they have a completely different flavor and texture. Roasted peppers can be enjoyed in so many different ways. Added to egg dishes, hot sandwiches, pizzas, casseroles or to vegetable side dishes or even enjoyed as an appetizer, the rich flavor adds that special something to any dish. Roasting peppers for appetizers or main dishes PREPARING PEPPERS FOR OVEN BROILING It’s easy to char multiple peppers at one time in the oven using either the Convection Broil or Broil mode set to high or 475 degrees. First slice the peppers in half, discard the seeds and cut away any excess membrane. Place the peppers on a rimmed baking sheet and press down on them to flatten them. You can line the baking sheet with foil, shiny side down for easy clean up. Hummus with roasted peppers TIPS FOR OVEN BROILING Remember when you are using the Broil mode in your oven, the top elements are working at maximum intensity so you won’t need a long preheat time. Even if the oven has not fully come to temperature it’s okay to put the peppers in because the Broil element heats so quickly. Make sure there is space between the food and the broil element and always keep the door closed when broiling in the oven. However, a good tip when broiling in the oven is to run your overhead ventilation, that way any smoke or steam that escapes the oven will be quickly vented out. Pulled pork with roasted peppers STORING ROASTED PEPPERS It will take approximately 8 minutes to char the peppers completely and they will not need to be turned. When the peppers have a nice char, take the tray out of the oven and cover the peppers with a paper towel and set them aside to rest until cool enough to handle. As they rest, the flesh will pull away from the charred skin, making it very easy to peel it off. Now you can chop the peppers or leave them whole and place them in a clean container and cover them with olive oil and store them in the refrigerator. The peppers should be consumed within 10 days however, if you add chopped fresh garlic and fresh herbs be sure to eat the peppers within 3 - 4 days. Now with little effort you have a wonderful flavorful ingredient at hand to add flavor and pizazz to your day to day cooking.     Anchor 1 YOUR RECIPE FOR STEAM COOKING Breakfast Desserts Low Temperature Roasting Meats Poultry Salads Seafood Steam Baking Steam Braising Steam Roasting Veggies Chicken Enchilada Casserole Steam Baked Steam-Baking Anytime you are making a recipe that requires shredded chicken you have the option of either steaming or steam roasting some chicken pieces in your Steam Oven for tender juicy chicken with the added bonus of flavorful juices. There are a lot of ingredients in this crowd pleasing casserole but it assembles very quickly; allow at least 40 minutes for it to bake in the oven. INGREDIENTS Steam Roasted Chicken: 4 - bone in chicken thighs or two bone in chicken breasts ½ - teaspoon ground cumin ¼ - teaspoon granulated garlic ¼ - teaspoon Kosher salt 1 - tablespoon vegetable oil Casserole Ingredients: 2 - tablespoons vegetable or olive oil 1 - medium yellow onion, finely chopped 3 - cloves garlic, minced 1 - yellow or red pepper, seeded and diced 1 - 4.5 oz can green chilis 1 - 15oz can corn OR 2 - cups frozen corn, defrosted 1 - 24 oz can black beans or your preferred beans 1 - 24 oz can enchilada sauce 18 - corn tortillas, cut in half 2 - cups shredded Cheddar mixed with 2 - cups shredded Monterey Jack cheese PREPARATION Heat the oven in the Convection Mode to 425 degrees. Combine the seasoning and oil and rub over the chicken, place the chicken on a rimmed baking sheet and cook for 15 minutes, then change the Mode to Convection Steam 350 degrees and cook for another 15 minutes or so, until the juices run clear. Remove the chicken from the pan and set aside to cool, skim the fat from the pan juices and add to the casserole, then shred or slice the chicken and stir into the casserole. Steamed Chicken Option Assemble the ingredients as noted above except the oil. Heat the oven in the Steam Mode 212 degrees. Place all the ingredients in an oven casserole with ½ cup of water and steam for 35 - 45 minutes until the meat comes easily away from the bone. Set the chicken on a plate to cool before shredding. Reserve the liquid, add a little to the casserole and reserve any extra for cooking. Preparation: Heat a large skillet or sauté pan over moderate heat. Add the oil and increase the temperature to medium high, add the onion and sauté for a few minutes to soften, then stir in the garlic and cook for a minute. Add the pepper, chilis, corn and beans, stir well to combine then add all but ½ cup of the enchilada sauce and stir in the cooked chicken. Spread ¼ cup of the reserved enchilada sauce over the bottom of a 9 x 13 oven casserole dish and arrange ⅓ of the tortillas over the sauce. Spoon ½ of the chicken and bean mixture over the tortillas and top with half of the cheese. Layer in another ⅓ of the tortillas and spoon the remainder of the chicken and bean mixture over the tortillas and ½ of the remaining cheese. Top with the rest of the tortillas, spread the remaining reserved enchilada sauce over the tortillas and top with the remaining cheese. When baking this casserole in the Steam Oven there is no need to cover it. Heat the oven in the Convection Steam Mode 350 degrees and bake for 30 minutes. Change the Mode to Convection and increase the temperature to 400 degrees and cook for an additional 10 minutes until the cheese is bubbling. Be sure to let the casserole stand for at least 10 minutes before serving. Just follow these easy steps for a delicious fast meal, and vary the type of fish, vegetables, and seasoning to your taste. I am seasoning the wild cod with mixed Italian seasoning, grated lemon zest, and a drizzle of olive oil. It will take approximately 18 minutes to roast the vegetables at 375 degrees, but I am setting the timer for 12 minutes at which time I will remove the tray and add the fish. Then everything goes back into the oven for another 6 minutes for the fish and vegetables to finish cooking through. Before serving, add some finishing sea salt and freshly ground pepper, so easy to prep, fast to cook, flavorful, and nutritious. INGREDIENTS For the vegetables 2 cups broccoli florets, cut into ¾” thick slices ¼ red onion, cut into ¼” thick slices 1 red or yellow pepper, seeds removed cut into ¼” thick slices ¼ cup pitted Kalamata olives 1 tbsp olive oil For the Fish 1 lb. wild cod ¼ tsp mixed Italian seasoning Pinch dried red chili flakes 1 lemon, zest only PREPARATION Heat the Steam oven in the Steam-Baking mode at 375 ℉ (190 ℃) or heat the Convection oven in the Convection Bake or Convection Roast mode. Combine the vegetables with a sprinkle of salt and some freshly ground pepper and spread them onto a rimmed baking pan. Place the pan in the oven and set the timer for 12 minutes. Meanwhile, season the fish and drizzle it with a little olive oil. When the timer elapses, remove the pan with the vegetables from the oven and push them to one side to make some room for the fish. Place the fish on the pan and return the pan to the oven. Set the timer for 5 - 6 minutes and cook the fish until it separates in flakes. Because foods cooked in Convection have more moisture retention, I use Convection for most of my cooking; however, when it comes to baking there are times when traditional Bake actually results in a drier crumb. It all depends on how liquid the batter is. For example, I find I get better results baking Blueberry muffins in Traditional Bake because those blueberries just burst open and give off so much juice during baking, and if I bake them in Convection the muffins have a tendency to fall apart. You can also steam multiple foods simultaneously with no transfer of flavor, and dishes like this spicy eggplant can be cooked and served in the same container. Spicy Eggplant cooked in a Steam-Oven This straightforward recipe for steamed eggplant requires minimal preparation. It involves a quick soak in water with some vinegar to remove any bitterness and help the eggplant hold its shape. Then, the sauce ingredients are assembled, poured over the eggplant, and cooked in the Steam mode until tender. The eggplant absorbs the flavors of the sauce and is finished with a light drizzle of sesame oil for added flavor. INGREDIENTS Eggplant 1lb Chinese or Japanese eggplant (3 - 4), chopped into bite-sized pieces ¼ cup of white vinegar Water to cover Sauce 2 tbsp soy sauce 2 tsp black vinegar 2 tsp oyster sauce 1 tsp sugar 2 tbsp chili crisp or chili sauce Topping 3 cloves garlic, minced 2 scallions, finely chopped Sesame oil for drizzling PREPARATION Heat the oven in the Convection Steam mode at 212°F. This mode combines the benefits of convection cooking, which circulates hot air around the food, and steam cooking, which keeps the food moist. It's perfect for steaming dishes like this eggplant. Place the eggplant in a large bowl, add water to cover, and stir in the vinegar. This step helps to remove any bitterness from the eggplant and helps it hold its shape during cooking. Set aside for 3 - 10 minutes, then rinse thoroughly and squeeze out as much liquid as possible with your hands. Place the eggplant in an oven-proof cooking container.     Anchor 1 YOUR RECIPE FOR STEAM COOKING Breakfast Desserts Low Temperature Roasting Meats Poultry Salads Seafood Steam Baking Steam Braising Steam Roasting Veggies Baked Chicken and Rice Steaming Chicken baked with rice makes a flavorful one dish meal but baking the chicken in convection makes the preparation easier without sacrificing the flavor. There are many versions of chicken and rice dishes and Arroz con Pollo is one of the most flavorful, it's a perfect dish to feed a crowd. This recipe shows several options for cooking the chicken and rice in a steam or convection oven. INGREDIENTS Chicken: 8 - pieces bone-in, skin-on chicken pieces (legs and thighs work best) 2 - tablespoons olive or vegetable oil 1 - teaspoon Kosher salt ½ - teaspoon granulated garlic 1 - teaspoon ground cumin ½ - teaspoon mild or spicy smoked paprika ½ - teaspoon ancho chili powder 1 - teaspoon ground turmeric 1 - teaspoon dried oregano Set the chicken on a rimmed baking sheet, and combine the oil and spices in a small bowl and rub into the chicken. Vegetables and Additional Ingredients: 1 - tablespoon olive oil 1 - large yellow onion, diced 1 - medium yellow pepper, diced 1 - poblano chili, diced (if you like some spice) 3 - cloves, garlic minced 1 - Portuguese mild or spicy Linguica sausage diced 1 - 14oz can chopped tomatoes 1 - cup short grain rice or Arborio 2 - cups chicken stock Garnish: ½ - cup Manzanilla Spanish olives ¼ - cup chopped fresh cilantro leaves PREPARATION Oven Options Cook the spice rubbed chicken pieces in the Convection or Convection Steam Mode while cooking the rice and vegetables on the cooktop. Cool and slice the chicken and combine with the chicken and pan juices with the rice. OR Sear the spice rubbed chicken pieces in the Convection Mode while sauteing the vegetables on the cooktop. Add the rice and stock to the pan, nestle the seared chicken pieces in the rice and bake covered in Convection or uncovered in the Steam Oven for 30 - 35 minutes. Oven Method 1: Heat the Convection oven in the Convection Roast Mode or the Steam Oven in the Combination Convection Steam Mode to 375 degrees. Cook the chicken for 25 - 30 minutes until the skin is crisp and golden. When the chicken has cooled, slice it (or leave whole if you prefer) then skim the fat from the pan juices and stir the juices into the rice mixture. While the chicken is cooking, prepare the rice mixture. Heat a large sauté pan over moderate heat, add the oil, increase the temperature to medium high and sauté the onion for a few minutes to soften. Stir in the peppers and cook for a few minutes until the edges begin to brown. Add the garlic and stir for a few minutes then add the sausage, cook for another minute or so then add the tomatoes and cook for 4 - 5 minutes. Stir in the rice and add the chicken stock, cover and simmer over low heat for 30 minutes until the rice is tender. Gently stir in the olives, add the chicken and garnish with the chopped cilantro. Oven Method 2: Sear the chicken on a rimmed baking sheet in the Convection Mode 375 (convection and steam ovens) degrees for 15 minutes and begin the rice preparation on the cooktop. Sauté the vegetables as directed above in a large ovenproof pan and once you have added the liquid, nestle the par cooked chicken pieces into the pan and scrape any cooking juices into the pan. Cook uncovered in the Steam Oven in the Combination mode 350 degrees for 30 - 35 minutes until the rice is tender OR covered in the Convection Bake mode 350 degrees in a Convection oven. Garnish as directed. Once you set the oven in the steam mode you can add in multiple containers of food at one time, all you have to do is determine the timing for each type of food and the order in which you want to cook those foods. Planning is Key When Cooking Multiple Foods at one Time Cooking Multiple Dishes In A Steam Oven It’s easier than ever these days to keep track of the timing when cooking multiple dishes at one time. In addition to the oven timers we have devices such as Alexa, our phones, digital timers and the old fashioned wind up timers. If your oven is connected to the manufacturer's app you will also get an alert when the timing has elapsed. In other words, planning the timing for cooking multiple dishes is easy. Prepare Meals in Advance at the same Time as Cooking Dinner Steaming multiple foods at one time can be helpful when preparing a meal, but also when you are preparing several meals in advance. Say for example you wanted to make mashed potatoes as a topping for Shepherds Pie that you plan to serve on another day, and also steam some bone in chicken for sandwiches as well as steam some rice and vegetables for dinner, well all those foods can be cooked in the Steam mode at the same time. It might sound ambitious, but really it’s amazingly easy. Here is the timing for this scenario: Steamed (2) bone-in chicken legs, prep time, 5 minutes, cooking time 40 minutes. Yield approximately 3 cups cooked chicken + 2 cups chicken stock. Cook in a solid pan with 1 cup of water and the desired aromatics. Set the chicken aside to cool before shredding. Steaming Chicken for Salad Potatoes (4 large) for mashed potatoes, prep time, 5 minutes, cooking time 20 minutes. Yield 4 - 6 servings. Cook in the solid pan, add ½ cup of water and salt. Remove when potatoes are very tender and mash with butter etc. Rice (1 cup) cooking time 15 - 30 minutes depending on the type of rice. Yield 2 - 3 servings. Cook in the solid pan with 1 ¾ cups of water and salt. Allow to stand for 5 minutes then fluff with a fork. Steamed vegetables, green beans, broccoli, asparagus, thinly sliced carrots: 6 - 8 minutes depending on your preference. In this scenario the base for the Shepherd's Pie could be prepared while the potatoes are steaming, once the mashed potatoes are spread over the filling you would have a dish ready for another meal. Once cooled, the chicken can be shredded and stored ready to add to sandwiches or salads and you will have some simple side dishes ready to serve with dinner. Planning to cook this way is a very efficient way of keeping your refrigerator stocked with healthy nourishing food, so there is always something good to eat. Remember that Shepherds Pie you made in advance well that will heat beautifully in the Steam oven without needing to be covered because, it won't dry out when baked in the combination Convection/Steam mode. With No Cooktop to Clean, Clean-Up is Easy Since all the steam oven cooking containers can be washed in the dishwasher, clean-up is much easier and you have managed to cook a lot of food with little stress. Don't Go Without Breakfast, Cook it in the Steam Oven Using the steam oven to cook multiple foods at breakfast time also makes it easier to ensure everyone gets a healthy breakfast. Oatmeal can be cooked directly in the bowl water in the Steam mode. The timing is approximately 6 minutes, but if the bowl stays in the oven for 10 minutes nothing bad will happen. Eggs can also be poached in the oven at the same time, for large cold eggs between 5-6 minutes works best. Although at higher altitudes it can take up to 8 minutes. Poached Eggs In A Steam Oven Keep the Steam Oven Clean and Dry For ovens with a tank it is recommended to empty the tank after each use, however, if you use the oven to cook breakfast and plan to use it again that evening the tank can be emptied after the last meal of the day is cooked. Just be sure to dry the oven out to maintain a hygienic environment. Think Beyond Cooking One Item at a Time and Let the Oven Work for You Steam ovens are truly remarkable tools, and I encourage you to think beyond just using the oven to prepare one food at a time. Always ask yourself, is there something else I can cook at the same time to get a head start on another meal or to make it easier to prepare several dishes at one time. With a little planning you will get great results every time when cooking with your steam oven. Learning About Your Oven To Get Good Results For example, I often use my Steam oven to cook 3 meals in a day. Sometimes I poach eggs for breakfast or make oatmeal or I might reheat something left over from a previous meal or heat a muffin that I have baked and frozen. When lunch comes around I might steam some vegetables and frozen Chinese dumplings, bake an individual frittata, make some grilled hot sandwiches, or reheat something I have previously cooked. Poached Eggs In a Steam Oven When dinner comes around I have a whole repertoire of easy one-dish meals that I can cook in under 30 minutes. There are times I like to cook my dinner in the Convection oven and use the Steam oven to slow-cook a braise or bake a casserole to get a head start on cooking for another meal. Now that I am exploring the wonders of a Speed oven I am finding even more options for creating delicious easy oven meals. What I want to stress is that recipes won’t tell you how to get the best out of your oven and it’s a shame if you can’t make good use of the great tools in your Convection , Steam , or Speed ovens to cook great meals and simplify meal preparation. I have found that when you understand the tools you are cooking with you can better understand how those tools can work for you. This type of recipe is very adaptable in terms of vegetables and cheese and if you like more depth of flavor a little smoked paprika or chili spice make a nice addition. INGREDIENTS 1 - small head cauliflower 2 - broccoli crowns 2 - tablespoons, unsalted butter 2 - tablespoons, flour 2 - cups milk or half & half (warmed) 2 - cups grated Cheddar PREPARATION Preheat the oven to Convection or Convection Bake 350 degrees. Cut the cauliflower in half and remove the core then cut each half into ½” thick slices. Cut the broccoli the same way and steam the vegetables together on the cooktop or in the Combi Steam Oven for approximately 7 minutes until just tender. Meanwhile make the cheese sauce, melt the butter in a heavy bottomed saucepan and stir in the flour. Cook over very low heat for a few minutes taking care not to let the roux get too dark. Gradually stir in the warmed milk and heat slowly, stirring often until thickened. Remove from the heat and stir in the grated cheese. Place the steamed vegetables into an oven casserole and pour the warm sauce over them, spreading it evenly with a spatula. Bake for 20 - 25 minutes until the cheese is bubbling.
