  • How to Cook Salmon at a Low Temperature in Convection

    YOUR RECIPE FOR CONVECTION COOKING! Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How to Cook Salmon at a Low Temperature in Convection Convection Mode (True Convection) Cooking foods at low temperatures, especially delicate fish, helps keep the fish really moist and flavorful. For best results, we first sear the fish on one side, gently turn it over then place the pan in the Combi-steam or Convection oven to finish cooking. This technique works well with any meaty fish, just take care not to hurry the searing step by turning the fish too soon, otherwise, it will stick to the pan. For best results in a Convection oven use the Convection mode 180 - 200 degrees. If you have a Combi-steam oven, and it doesn’t have a dedicated Low-Temperature mode then just use Combi-steam 180 - 200 degrees. Ingredients 2 fillets of meaty fish such as salmon, halibut, sea bass or wild cod 1 tbsp unsalted butter 1 tbsp olive oil ½ lemon, juice only Preparation Pat the fillets dry with a paper towel and season with your preferred seasoning and a sprinkle of Kosher salt and freshly cracked pepper. Heat the Combi-steam oven in the Low-Temperature or Combi-steam Mode 180 - 200 degrees. Or heat your Convection oven in the Convection mode to 180 - 200 degrees. Heat an ovenproof skillet over moderate heat and when hot add the butter and oil. Carefully lay the fish into the pan and let it cook undisturbed for a few minutes. Gently lift one corner and if the fish releases easily then carefully turn each piece. Now place the pan in the heated oven and cook for 6 - 8 minutes. Center cuts of very meaty fish may take up to 15 minutes to cook through. Don’t hurry the process the results are worth waiting for. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Roasted Cauliflower with Chimichurri Sauce Convection Roast Mode Crisp roasted cauliflower makes a delicious side dish or can be a meal on its own. In this preparation, we added some fresh herb Chimichurri sauce, normally served with beef, to give the cauliflower some pizazz. I roasted this cauliflower as part of a Convection meal that included some baked Mahi Mah i and a medley of zucchini, peppers, and onion with some garbanzo beans. I used the Convection Roast mode and placed the cauliflower close to the bottom heating element to achieve a good amount of crisping. There is so much flavor in the Chimichurri sauce so the cauliflower only needs a drizzle of oil and a sprinkle of salt and pepper. Crisp roasted cauliflower makes a delicious side dish or can be a meal on its own. In this preparation, we added some fresh herb Chimichurri sauce normally served with beef, to give the cauliflower some pizazz. Ingredients 1 whole cauliflower, stalk removed, cut into ½” thick slices Olive oil Chimichurri Sauce 1 cup Italian parsley leaves, finely minced 2 tsp fresh oregano leaves or ½ tsp dried oregano 3 cloves garlic, minced ⅓ cup olive oil 2 tbsp red wine vinegar Pinch of dried red chili flakes 1 tsp coarse sea salt Freshly ground pepper Preparation Arrange the oven racks so you can roast the cauliflower in the lower part of the oven and heat the oven in the Convection Roast Mode at 400 degrees. Cook the Cauliflower for 15 - 20 minutes until crispy. Turn halfway through to avoid overcooking on one side. Meanwhile, combine the ingredients for the Chimichurri sauce. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Sizzling Grilled Sausages Slow Cooking Method Convection or Convection Bake Mode Grilled sausages with their higher fat content and robust seasoning taste fabulous on the grill, but to avoid common grilling issues such as burning and uneven cooking, the trick is to pre-cook them at a low temperature in a Convection or Steam oven. If you are slow-cooking some other meats to finish on the grill, adding some sausages to cook in the oven at the same time requires no effort at all. Be sure to choose fresh sausages for this method of cooking, smoked sausages also taste great on the grill but since they are already “cooked” they will not benefit from slow cooking. Ingredients 6 fresh sausage, pork, chicken, or turkey Preparation Heat the oven in the Convection or Convection Bake Mode at 200 degrees or heat the Steam oven in the Combination Convection Steam mode at 200 degrees. Place the sausages on a shallow rimmed baking sheet and place them in the oven and cook for 15 - 20 minutes. Because the sausages have been pre-cooked there won’t be much fat rendered but it’s a good idea to pierce them in a few places to let any fat escape. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How To Bake Apple Pie in Convection Convection Bake Mode A freshly baked pie may take some time to prepare and bake but the result is so rewarding it’s definitely worth the effort. Convection Bake is the ideal mode for baking pies so that the crust is evenly baked through and the filling condenses perfectly. Good varieties of apples for baking are Granny Smith, Pink Lady and Golden Delicious. For a perfectly baked pie crust and filling the Convection Bake mode ensures the best results. INGREDIENTS For the Pastry 2 ½ cups unbleached all-purpose flour 2 tbsp granulated sugar ½ tsp kosher salt 2 sticks very cold unsalted butter, cut into small cubes Approx. ⅓ cup ice cold water 1 egg beaten and mixed with a little water for the egg wash For the Filling 6 large apples, peeled cored and sliced into ¼” thick slices ⅓ cup packed brown sugar ¼ cup all-purpose flour 1 tsp ground cinnamon ¼ tsp freshly grated nutmeg ¼ tsp ground ginger PREPARATION For the Pastry The first step is to make the pastry, this can be done by hand, in a food processor or even a stand mixer. I find making the pastry in a food processor the easiest. For best results, make sure the butter is very cold and cut into small ½” pieces and also that the water you add to bring the pastry together is ice cold. Place the flour, sugar and salt in the bowl of a food processor bowl and pulse to combine. Add the cubed butter pieces and pulse until the mixture resembles a coarse meal. With the motor running, trickle in the ice cold water until the mixture forms a ball. Remove from the processor, dust lightly with flour and flatten into a disc. Wrap the pastry tightly in plastic wrap and refrigerate for at least 30 minutes. When it’s time to roll out the pastry and assemble the pie, remove the pastry from the refrigerator and let it soften slightly before rolling out. Divide the pastry into two pieces making one slightly larger for the base. Line a 9” pie dish with the larger piece of pastry and roll out the smaller piece to a 9” diameter. Refrigerate the pastry while preparing the apples. For the Apples Peel core and slice the apples into ¼” thick slices and mix with the sugar, flour and spices. Layer the apple slices in concentric rings into the prepared pie pan and set aside to rest for 15 minutes, to allow the juices to be drawn out. While the apples are resting, arrange the oven racks so you can bake the pie in the lower part of the oven and heat the oven in the Convection Bake mode to 350 degrees. When ready to bake, brush the edges of the pastry with the egg wash. Place the smaller pastry disc over the apples and press the edges together. Trim the pastry to ¾ - 1” and fold the overhang over itself to crimp the edges. Brush the top of the pastry with more egg wash and make a few decorative slits in the pastry to vent the steam. If you are concerned about the filling bubbling out of the pastry onto the oven floor during baking you can bake the pie on a rimmed baking sheet. Now that the bottom heating elements in our ovens are concealed this is less of a problem, however some apples are definitely juicer than others and some bubbling may occur. Pies typically bake at 375 F for approximately 1 hour and ten minutes, but when baking in Convection it’s best to reduce the temperature by 25 degrees to avoid overcooking the edges . The exact cooking time will depend on the size of the oven. The recipe I used in the video used a much higher baking temperature and I found it overbaked the pastry. So I recommend you use 350 F degrees. That temperature might have worked well in the recipe writer's oven but since all ovens are different for best results it’s important to use the timing and temperature that work best for your oven. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Convection Bake Peanut Butter Brownies Convection Bake or Traditional Bake Mode Preparing a simple dessert such as a fruit crisp, some baked apples, or a bread pudding that can be baked at the same time as cooking a complete oven meal is actually quite easy with a Convection oven. To demonstrate my point, I am making Peanut Butter Brownies along with chicken breast. These are easy to assemble and cook at the same temperature as the other dishes. Many kids enjoy cooking and this is a great project for kids to work on while you are preparing the other dishes. In this video I am going to show you how using Convection you can cook for kids and adults at the same time. Remember the basics of convection cooking: different foods can be cooked on multiple racks at one time, foods have more moisture retention and there is no transfer of flavor when cooking multiple dishes at one time. Make that oven work for you! So let’s see how it all comes together. Ingredients Brownie Base 1 cup semi-sweet chocolate chips 1 stick, unsalted butter, cut into quarters 3 tbsp cocoa powder 1 ¼ cups granulated sugar ½ tsp Kosher salt 2 tsp vanilla extract 3 large eggs 1 cup all-purpose flour ( I used Bobs Red Mill) For the Peanut Butter Swirl 3 tbs unsalted butter, melted ½ cup peanut butter (I used smooth) ⅓ cups powdered sugar ¼ tsp salt ½ tsp vanilla extract Preparation If baking with the Convection meal, heat the oven in the Convection Bake mode 350°F. Typically we reduce the recipe temperature by 25 degrees when baking in Convection, but when the oven is loaded with several dishes a higher temperature will give better results and not affect the brownies adversely. If baking all 3 dishes, bake the Brownie on the lower rack. If baking the brownie on its own use either Convection Bake 325°F or traditional Bake 350°F and place the pan on the 2nd or 3rd rack up from the bottom of the oven. Line an 8” baking pan with parchment or foil, leaving the edges hanging over the side of the pan. Spray the foil or paper with a light film of cooking spray. Melt the chocolate and butter over moderate heat or in the microwave then stir in the cocoa powder. Whisk until smooth, then set aside and prepare the peanut butter swirl. Melt the 3tbs of butter and combine with the peanut butter, powdered sugar, salt, and vanilla in a bowl and set aside. Whisk the sugar, salt, vanilla, and eggs in a large bowl until combined. Whisk the melted chocolate mixture into the egg mixture. Stir the flour until just combined but not overmix. Pour the mixture into the prepared pan and drop dollops of peanut butter onto the batter and gently swirl the peanut mixture into the batter.   • Grilled Seafood Pasta with Shrimp, Salmon, and Scallops

Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Grilled Seafood Pasta with Shrimp, Salmon, and Scallops Broil Mode Pasta is an easy fast meal to pull together and it’s pretty much a blank palate for any type of sauce or toppings. One of my favorite “fast” pasta meals includes a topping of oven-grilled shrimp, salmon and scallops mixed with some chopped linguica sausage or bacon for added flavor. If using shrimp and scallops from your freezer, defrost them in advance and blot with paper towels so they don’t give off too much liquid. This recipe makes a generous portion for 4 people but it’s easy to scale down if needed. In order that everything is ready to serve at the same time, allow 12 - 14 minutes to cook and drain the pasta and toss with the sauce, and 4 - 6 minutes to broil the seafood. Because of the high moisture content of all the seafood, the drier heat of the Broil Mode with no Convection will give the best results. PREPARATION Line a rimmed baking sheet with some paper towels spread the seafood onto the pan in one layer and blot with paper towels to remove excess liquid. Heat the pasta water, cook the pasta and mix with the bottled sauce when drained. Preheat the oven in the Broil Mode 480°F or Hi. Discard the paper towels (compost) and line the pan with some foil, shiny side down. Toss the seafood with the remaining ingredients and spread it onto the prepared pan, cook for 4 - 6 minutes until the seafood has cooked through and is browning on the edges. Remember to keep the oven door closed when broiling and have a landing space ready to place the very hot tray you will be taking out of the oven. Spoon the seafood over the pasta tossed with the sauce and garnish with chopped parsley. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Grilled Pork Chops - Slow Cooking Method Low Temperature Cooking Grilling meat brings out an abundance of flavor, but the grill's high heat can also dry foods out, so what's the solution? Begin by cooking the meat at low temperatures in your Convection or Steam oven and just give the meat a quick finish over high heat. The result? A perfect flavorful sear and meat that is not dried out. I used two different types of pork chops and both worked out well cooked at a low temperature for about 30-40 minutes then finished on the grill. Pork blade chops cut from the pork shoulder have more marbling and handle the grill's high heat well. Left-over grilled pork blade steak is excellent added to fried rice or a ramen bowl. Pork loin chops are typically cut quite thick and have less marbling can be tricky but they were perfect when cooked this way as well. I use 200 degrees for the slow cooking but you can go as low as 160 degrees, just allow a little extra time. Some grilled pineapple slices would of course be perfect as an accompaniment to these grilled chops. Ingredients 2 bone-in pork loin chops 2 pork blade chops 2 tbsp BBQ dry rub seasoning 2 tbsp heat-tolerant vegetable oil BBQ sauce optional Preparation Heat the oven in the Convection or Convection Bake mode at 200 degrees or heat the Steam oven in the Combination Convection Steam Mode at 200 degrees. Place the chops on a shallow rimmed baking sheet, season with your preferred BBQ seasoning, and coat each side of the chops with the oil. I didn’t add salt because the dry rub had a fair amount but add salt to taste. Cook for 30 minutes, brush the chops with the BBQ sauce is using, and finish the cooking on the grill, allowing approximately 4 minutes per side. Look no further than this Convection oven-roasted vegetable fried rice recipe! This dish will satisfy your cravings with crispy veggies and tender, moist rice. And the best part? Fried rice is best made with slightly dry day-old rice, so it's a great way to use any leftover rice in the refrigerator. So why not try it today and see how tasty and satisfying it can be? The convection roast mode on your oven engages the top and bottom heating elements. It circulates hot air around the food, producing perfectly crispy and evenly roasted veggies every time. Try it and taste the difference! PREPARATION For the rice Cook the rice a day in advance. When cooled, spread the cooked rice onto a rimmed baking sheet or into a casserole, cover, and refrigerate. The rice can be steamed in a saucepan or uncovered in the steam oven. Brown rice was used in this recipe and cooked for 38 minutes at 220°F in a steam oven. For the vegetables: Preheat the oven to 375°F in the convection roast mode. Cut the potatoes and onion into wedges and slice the cauliflower. Place the vegetables in a large bowl and toss with olive oil, salt, and freshly ground pepper. Spread the vegetables onto a rimmed baking sheet, spreading them out so they are not crowded, and bake for 20 minutes. Don't worry if you have to use two trays; they will cook evenly in Convection. Toss the mushrooms in a separate bowl with olive oil, salt, and pepper. When the timer has elapsed, add the mushrooms to the baking pan and cook for another 10 - 15 minutes until the vegetables are crispy around the edges. Preparing the rice: When the mushrooms go into the oven, heat a large saute pan or wok to heat the rice. The pan needs to be very hot to stir-fry the rice, so let it heat on medium-low heat until it is evenly heated. Meanwhile, prepare the stir-fry sauce by combining the cumin, turmeric, garlic, 2 tbsp chopped chives, oregano, olive oil, and soy sauce. Mix the stir-fry sauce with the rice and add to the pan. Immediately increase the heat to medium high and cook the rice until heated, approximately 5 minutes. Move away the pan from the heat and cover with a lid. Remove the roasted vegetables from the oven and mix them with the rice. Garnish with the chopped chives. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 How to Roast Turkey in Convection Convection Roast or Convection Bake Mode Using the Convection Roast or Convection Bake mode in your oven makes roasting a turkey easy and, because foods cooked in Convection retain a lot of moisture, the turkey will be incredibly succulent and juicy. Other benefits of roasting a turkey in Convection include. Ingredients 1 Turkey Your favorite seasoning Preparation Tips for Roasting a Turkey in your Convection Oven No turning or basting is necessary. Because the turkey is roasted on a rack all the juices stay in the bird, poaching the meat to perfection. After resting the juices are drained out of the turkey for gravy making. Roasting time will be much shorter, use the oven Temperature Probe to avoid overcooking the turkey or follow the estimated timing listed below. Once the turkey is resting, all the oven side dishes can be cooked at the same time so that all the food will be ready to serve when the turkey has rested and been carved Seasoning the Turkey Remove the turkey from the wrapping a few days in advance and place it on a rimmed baking sheet. Remove the neck and giblet packets from the turkey cavities and dry the turkey inside and out with paper towels. Give the turkey a dry rub of kosher salt mixed with your preferred seasoning, a few days in advance and leave in the refrigerator until ready to cook. When cooking in Convection a wet brine is not necessary as the circulating Convection heat does not have a drying effect during the roasting process. Aromatics such as onion, lemon bay leaves or other seasoning can be placed in the cavity prior to cooking for added flavor. Cooking the Turkey Let the turkey sit in a cool place outside of the refrigerator for a few hours prior to cooking. If it is too cold it will cook unevenly. Preheat the oven in the Convection Roast or Convection Bake to 400 degrees. Set the seasoned turkey on a rack in a shallow pan and place a metal skewer between the legs to balance the turkey or tie the legs loosely together. It’s important to know that your turkey will cook faster in Convection and tying the legs too close to the body keeps that part very cold and therefore it may cook unevenly. Placing the turkey on a rack ensures all the juices stay in the turkey during the cooking and allows the heat to circulate evenly around the bird. There will be some drippings but for more drippings you can add some vegetables to the base of the pan and add a cup or two of water once the pan is in the oven. Give the turkey a light spritz with some spray oil or rub with some vegetable oil and if your oven has a Meat Probe insert it into the thickest part of the breast, horizontally, making sure not to touch any bone. Slide the tray into the oven and insert the temperature probe into the oven receptacle. For food safety the internal temperature must reach 165 degrees in the thickest part of the breast and thigh. While the turkey is resting the internal temperature will continue to rise and reach the perfect carving temperature of 180 - 185 degrees in 20 - 30 minutes. Set the timer and cook the turkey for 15 minutes at 400 degrees, then reduce the temperature to 350 degrees for the remainder of the cooking time. The oven will turn off when the internal temperature of 165 degrees has been reached. If your oven does not have a meat probe, use the following chart as a guide. Estimated Cooking Times For small turkeys up to 15lbs allow - 1 ½ - 2 hours cooking time. For turkeys up to 20lbs allow - 2 - 2 ½ hours cooking time. For turkeys over 20lbs allow 3 - 3 ½ hours cooking time. Resting, Carving and Gravy Making When the turkey comes out of the oven set it aside to rest for 30 minutes, then carefully pick it up with 2 kitchen towels and drain the juices from the cavity into the roasting pan and set the turkey aside on a rimmed carving board. When carving the turkey you may notice the area around the bones will be red. Please do not be alarmed, this is a characteristic of Convection cooking. As long as the meat is cooked you are perfectly safe. Discard any vegetables you added to the roasting pan, combine all the pan juices and skim off the fat, you are now ready to make your gravy and begin carving the turkey. To make sure you have enough stock to make gravy we recommend preparing a giblet stock to mix with the pan juices and juices that will come out of the turkey after resting. Additional stock can also be made in advance with turkey legs or wings. Most 30” and 36” ovens can accommodate two large casserole pans side-by-side as well as extra large rimmed baking sheets. Make good use of all that space to cook as many oven side dishes as you can while the turkey is resting and being carved (approx 50 minutes). Using Convection will help you cook an amazing turkey and having all the side dishes ready and hot to serve at the same time really takes the stress out of preparing a huge feast. Evenly cooked, flavorful, and juicy with just the right amount of sear, it’s perfection with Convection. To cook successfully on an outdoor grill we need to use a combination of direct heat to sear the food and indirect heat to cook the food. Your Convection Oven or regular oven with help you with that stage. An easy way to achieve great results is to season the chicken with a dry rub of BBQ seasoning and slow cook it in the oven first. Then the chicken can be brushed with BBQ sauce and either finished in a hot oven or on the grill. Allow approximately 30 minutes of cooking time for the chicken pieces and approximately 10 minutes for the finishing. INGREDIENTS 8 - 10 bone-in skin-on assorted chicken pieces 2 tbs BBQ dry rub seasoning ½ tsp Kosher salt 3 tbsp heat-tolerant vegetable oil ¾ cup BBQ sauce for finishing PREPARATION Place the chicken pieces on a rimmed baking sheet and season the chicken pieces with BBQ seasoning, salt, drizzle with the vegetable oil, and rub the oil into the chicken pieces. For the best flavor, this is best done several hours in advance. Heat the oven in the Convection or Convection Bake mode at 200 degrees, or heat the Steam oven in the Combination Convection Steam mode at 200 degrees. Place the tray in the oven and cook for 30 - 35 minutes. You can now finish the cooking on the grill or you can change the oven mode to Convection Roast and cook the chicken at 425 degrees. When cooking bone-in chicken pieces you may see a fair amount of liquid collect on the pan, these are flavorful juices that you can use to add to your general cooking so refrigerate or freeze them in a small container for future use. There are a few steps to making this pie, however the results are definitely worth the effort. If you are short on time use a prepared crust. Ingredients Pastry 1 ½ cups unbleached all-purpose flour Pinch of Kosher salt 1 tbsp granulated sugar 1 stick unsalted butter, very chilled, cut into small pieces. ¼ cup ice water Streusel Topping ½ cup unbleached all-purpose flour 4 tbsps dark brown sugar 2 tsp ground cinnamon ¼ tsp Kosher salt 4 tbsp chilled unsalted butter, cut into small pieces Mix all the ingredients except the butter in a small bowl and stir to combine. Rub the butter in with your fingertips until the mixture begins to form clumps. The topping can be made in advance and refrigerated. Caramel Sauce 1 ¼ cups granulated sugar ¼ cup water 3 tbsp unsalted butter Apples 6 Granny Smith or your favorite pie apple, peeled, and cored and cut into ½” thick wedges. 3 tbsp unbleached all-purpose flour Preparation Directions Combine the flour, salt and sugar in the bowl of a food processor or in a deep mixing bowl if making by hand. Add the butter and pulse until the mixture resembles coarse meal or blend with a pastry cutter or two forks. With the motor running, add the cold water slowly until the mixture gathers into a mass. Turn the dough onto a lightly floured work surface and knead gently for a few minutes. Flatten the dough into a disc and wrap tightly with plastic wrap and chill for 30 minutes or overnight. Before mixing the ingredients for the pie, roll the pastry out and line a 9” deep pie dish, crimp the edges and return the prepared pan to the refrigerator so the pastry remains chilled. Streusel Topping Mix all the ingredients except the butter in a small bowl and stir to combine. Rub the butter in with your fingertips until the mixture begins to form clumps. The topping can be made in advance and refrigerated. Caramel Sauce Combine the sugar and water in a heavy saucepan over medium heat to dissolve the sugar. Increase the heat to medium high and boil until the syrup turns a deep amber. This can take 5 - 8 minutes depending on the pan and level of heat. Once the syrup has reached the desired color, remove it from the heat and stir in the butter, taking care as the mixture will bubble and foam. Place the pan back on the burner over low heat and stir until smooth. Apples Place the apples in a large, wide, shallow bowl so you can easily toss them when adding the caramel sauce. Add the warm caramel sauce and let sit for 10 minutes until the apples release their juices. The caramel sauce will seize up when added to the cold apples but will relax as it sits. Stir the mixture occasionally before adding to the pie crust. Add the mixture to the prepared pie crust and sprinkle the prepared streusel over the top. Arrange the oven racks so you can place the pie on rack position 2, one up from the bottom. Heat the oven in the Convection Bake mode 350 . Slide the pie into the oven and set the timer for 50 minutes, the crust should be golden and the apples tender when pierced with a sharp knife. Transfer the pie to a rack to cool before serving. Yes, they are both delicious quick cooking Convection meal and will give your taste buds a nice change from traditional meatballs and roasted vegetables. Ingredients Chicken Meatballs with Miso and Ginger 1 - lb ground chicken 3 - tablespoons white miso 2 - cloves garlic minced 1 - teaspoon fresh minced ginger 1 - teaspoon kosher salt ¾ - teaspoon black pepper 12 - Ritz crackers, finely ground ¼ - cup of milk Roasted Green Beans with Spicy Tofu 1 - 14oz package extra firm tofu, drained and sliced crosswise into 8 ½” slices 2 - tablespoons chopped fresh cilantro 2 - tablespoons, chopped scallions 2 - cloves garlic, minced 1 ½ - teaspoons sesame oil 1 - teaspoon honey 3 - tablespoons soy sauce 1 ½ - tablespoons black rice vinegar (or substitute with white rice vinegar) 3 - tablespoons chili-crisp condiment ¾ - lb green beans, trimmed Preparation Chicken Meatballs with Miso and Ginger Combine all the ingredients in a large bowl and combine gently with your hands. The mixture is very sticky, I wore disposable gloves to shape the 12 meatballs but the recipe author suggests lightly wetting your hands to prevent sticking. Meatballs can be cooked immediately or refrigerated for a few hours before cooking. Line a small rimmed baking sheet with a sheet or parchment and arrange the meatballs on the tray, give them a light spritz of cooking oil before going into the oven. Roasted Green Beans with Spicy Tofu Place the tofu slices in a casserole dish, whisk together all the ingredients except the green beans and pour over the tofu. Wash and trim the green beans, pat dry, spread onto a rimmed baking sheet and drizzle with some canola or vegetable oil. Push the beans to one side and place the tofu slices on the baking sheet and pour the marinade over the tofu. Arrange the oven racks to accommodate the pans and heat the oven in the Convection Roast or Convection Bake Mode 425 degrees. Cook the Chicken Meatballs for 20 minutes until firm and slightly browned on the edges. Cook the Green Beans for 15 - 20 minutes until the beans begin to blister. Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Convection Baked Blueberry Pie Convection Bake Mode The Convection Bake mode is the ideal mode for baking this delicious pie to achieve a golden flaky crust and juicy filling. In this mode heat is directed from the bottom and top heating elements to ensure the crust bakes through while the fan distributes the heated air evenly. The result is perfection. Preparing the pastry dough is straightforward; however, because of the amount of flour you'll need a large 14-cup food processor to make the dough at one time. If your food processor is smaller, divide the crust ingredients into two batches. It's best to make the dough 1 or 2 hours beforehand to allow it to rest in the refrigerator to develop the gluten so the dough forms. Convection-bake blueberry pie Frozen blueberries are used in this pie to ensure the dough is flaky. If using fresh blueberries, spread them onto a rimmed baking sheet and freeze prior to using. A lattice topped pie may seem intimidating, but if you have all the strips cut and ready and take your time, after the first two are in place it's easy. INGREDIENTS For the Crust 5 cups flour (3 all-purpose and two wholewheat) ½ cup brown sugar ½ tsp sea salt 2 cups unsalted butter (diced and frozen) 6 tbsp ice water 4 tbsp whisky or brandy (you can substitute for water) 1 egg for the egg wash 2 tbsp cream for the egg wash Crust ingredients For the Filling 5 cups of frozen blueberries (you can use fresh blueberries) 1 lemon, zested and juiced ¼ cup corn starch ½ cup brown sugar Pinch of salt You will need a Pyrex 10-inch glass pie plate or ceramic pie dish. Filling ingredients PREPARATION Add the flour, sugar, and salt to the food processor. Give it a few pulses. Then, add the frozen diced butter and pulse until it is cut into smaller pieces. With the food processor running, gradually add the water and whisky. This step should be fast, and you should avoid overworking the dough, which should have a rough texture. Turn the mixture onto a lightly floured work surface and divide it into two parts if you make one batch. Press the mixture into a ball (don’t knead it), then press it into a disk. Cover the dough and refrigerate for at least an hour. Chilling the dough is essential as it relaxes the gluten, resulting in a flaky crust. Preparing the Filling Combine 5 cups of frozen blueberries, lemon zest, cornstarch, brown sugar, and salt in a bowl. The use of frozen blueberries is strategic, as it helps the dough stay chilled, a critical factor in achieving a flaky crust. Mix well, then add the lemon juice and mix again. Place the bowl in the freezer for at least 45 minutes to prevent the blueberries from thawing. Assembling the Pie Remove the chilled dough from the refrigerator and divide into two sections, one slightly larger than the other for the base of the pie. Roll the larger piece out to a 13" circle and lay it into the baking dish and add the frozen filling. Place the pie in the freezer while you prepare the lattice strips. Roll out the remaining dough and cut it into 12 1/2" wide strips. Lay six strips evenly on top of the filled pie and trim the strips to fit. Fold every other strip all the way back to the edge of the dish. Lay one strip crosswise over the pie and unfold the 3 strips to cover that strip. Now fold back the other 3 vertical strips and lay another strip across those. Fold the strips back to cover and repeat the pattern until you have "woven" in all 6 strips. Trim the edges and crimp the dough with a fork then brush the dough with the egg wash. Now return the pie to the freezer for one hour prior to baking. Baking the Pie Heat the oven to 420°F in the convection bake mode. Place the pie in the lower third of the oven and bake for 15-20 minutes until lightly browned. Scones are easy to prepare and quick to bake, and you can prepare them with sweet or savory ingredients. These scones were delicious and served with tomato soup. When baked in Convection, scones have a delicate, moist crumb texture, and if you mix them with a light hand, I promise they will never be referred to as rock cakes. Scones with Bacon and Cheddar Cheese This delicious recipe from Emeril Lagasse for savory scones makes a generous 16 portions, which is great for entertaining. You can also bake and freeze the scones and refresh them in your steam oven on demand. Scones are best baked on a flat baking sheet with a slight lip, lined with parchment, silicone, or left plain. INGREDIENTS 4 slices cooked bacon, chopped 3 cups unbleached all-purpose flour 1 tbsp baking powder 1 tbsp sugar 1 tsp salt 1 stick cold unsalted butter, cut into small cubes 1 ½ cups sharp cheddar cheese, grated (approx 6 oz) 4 green onion, thinly sliced Freshly ground pepper to taste 1 cup heavy cream + 2 tbsp for brushing the scones before baking PREPARATION Arrange the oven racks to accommodate two pans, and, heat the oven in the Convection or Convection Bake mode to 375 F and prepare the baking sheets. Sift the flour, baking powder, sugar, and salt into a large mixing bowl. Cut in the butter with two forks or a pastry blender, then add the cheese, green onion, and black pepper and work just until the mixture begins to come together. Stir in the cooked chopped bacon and 1 cup of cream and work until it becomes a sticky dough. Dribble in a little more cream or half and half if the mixture is too dry and crumbly. Turn the mixture onto a lightly floured surface and pat it into a large round. Cut the dough in half and form two 7” circles about ¾” thick. Cut each circle into 8 wedges and transfer the wedges to a baking sheet, leaving ½” space between each one. Brush the tops of the wedges with the extra cream and slide the trays into the oven. Bake for 18 - 22 minutes until golden. Check underneath to ensure they are baked through. Remove from the oven and cool on the baking sheets for 5 - 8 minutes, then transfer the scones to a cooling rack. Once cool, they can be stored in an airtight container.   • Pork Shoulder Roast Stuffed with Spinach and Cheese

Baking Casseroles Convection Meals Desserts Meats Poultry Seafood Vegetables Anchor 1 Pork Shoulder Roast Stuffed with Spinach and Cheese Convection Roast Mode or Convection Bake Mode Convection is the ideal mode for cooking a stuffed pork shoulder roast in order to prevent the meat from drying out while cooking. Pork shoulder can be braised with liquid in a Dutch oven or slow-roasted on a rack in a shallow pan, but when it is butterflied, pounded, and stuffed the cooking time is significantly reduced. If you are not sure about butterflying the roast, ask the butcher to do it for you, basically you are cutting it open like a book. Once butterflied then pounding the meat with a meat tenderizer will increase the surface area for stuffing. This cut of meat is best cooked low and slow, I used the Convection Roast Mode , 350°F degrees for 30 minutes then reduced the oven temperature to 325°F and continued cooking my 3lb roast for another 1 1/2 hours. Cuts of meat like pork shoulder require longer cooking to tenderize, so doneness is determined by the texture of the meat. At the end of the cooking time, it should be almost fork tender. Adding some stock and wine to the roasting pan will create enough juices to make a delicious pan sauce. INGREDIENTS 3 - 4 lb. pork shoulder roast, butterflied 1 whole shallot, diced 3 cloves garlic, minced ½ tsp mixed Italian seasoning Pinch of dried red chilies 1 10 oz package, washed baby spinach, coarsely chopped ¼ cup grated Parmesan cheese ½ cup grated Fontina cheese 1 cup of stock (optional) to add to the roasting pan ½ cup white wine (optional) to add to the roasting pan PREPARATION Begin by preparing the stuffing. Sauté the shallots and garlic gently for a few minutes in a little olive oil and butter. Stir in the Italian seasoning and red chilies then add the spinach in handfuls until it has all wilted. Set the stuffing aside to cool then combine it with the cheeses. Cut about 8 or 9 lengths of butcher twine to have it ready to tie up the roast. Heat the oven in the Convection Bake or Convection Roast mode to 350 degrees. Lay the butterflied roast on a rimmed baking sheet and sprinkle some kosher salt and fresh pepper over the meat then spread the stuffing evenly over the meat, leaving a 1” border around the edge. Tie one length of string around the center of the roast, then tie the rest of the roast in 1 - 2” intervals. Season the outside of the meat with some Kosher salt and cracked pepper and a sprinkle of mixed Italian seasoning and drizzle with a little olive oil to coat. Place the roast on a rack in a shallow pan and add the stock and wine to the pan. After 30 minutes, reduce the oven temperature to 325 F and cook the roast for another 1 ½ hours.
