- Preparing a Thanksgiving Feast in Convection
A guide to prepare a Thanksgiving feast. My tips will help you along the process and a convection-oven will simplify the process. Tips for Preparing a Thanksgiving Feast in Convection Preparing a Thanksgiving Feast. First let’s stand back and look at the big picture to see how the cooking of the feast will unfold. Turkey cooks much faster in Convection, a 20 lb room temperature turkey will typically cook in 2 hours a 12-15 lb turkey will take closer to 1 ½ hours. However, you need to factor in resting time, gravy making, and carving so add another 50 - 60 minutes. Key to success is getting the turkey close to room temperature prior to roasting. Timing Chart Convection Bake or Convection Roast Mode 20 lbs turkey 2 hrs 50 - 60 min resting & carving Convection Bake or Convection Roast Mode 12-15 lbs turkey 1 1/2 hrs 50 - 60 min resting & carving If you use a convection-mode, once the turkey comes out of the oven you can add all your oven side dishes to cook at one time. The timing for cooking roasted root vegetables and casseroles is approximately 40 minutes so by the time the side dishes are cooked everything will be ready to serve at the same time. Dishes with a shorter cooking time can be added in at the appropriate time. Stage Your Oven Before You Turn It On Be sure to stage your oven with all the pans when it is cold, so you know exactly how you can load in all your dishes. 30 and 36” ovens accommodate extra large rimmed baking sheets and two 9 x 13” casseroles side-by-side on a rack. Even my 24” oven accommodates a half sheet pan and two casserole dishes side-by-side. Stuffing & Veggies. Because of the faster cooking time it is safer to bake a stuffing casserole than to stuff the turkey. If you stuff the turkey, you will need to cook it for a longer time and it will be a little drier. So now you know the overall cooking time for the turkey and side dishes is about 3 hours. To keep things simple it is ideal to prep the vegetables and casseroles in advance so the only active work you will have is carving the turkey and gravy making. Let’s face it, it’s far better to take this in stages rather than trying to do everything all at once. What About Baking Pies or Rolls? Well pies should definitely be baked earlier in the day or the day before, but rolls are wonderful when freshly baked, so they are best baked before the turkey goes into the oven. Chocolate Pecan Pie. The advantage of using convection when baking is that you can bake on multiple racks at one time with even results. Remember when baking in a Convection mode always reduce the recipe temperature by 25 degrees to ensure even baking. Uneven baking results indicate that the oven temperature was too high. Get A Headstart On Making The Gravy If you can pick up some turkey legs before Thanksgiving and make some stock then you can actually make the gravy while the turkey is cooking. Otherwise use the turkey neck and wing tips to make stock while the turkey is roasting. Then when you have deglazed the pan drippings and captured the pan juices you can add those to the prepared gravy for added flavor. I usually make my cranberry sauce and bake the croutons for the stuffing the day before to minimize the amount of clean-up and work I have to do on Thanksgiving day. The heating elements in the convection-roast-mode will cycle with maximum intensity, and the convection fan will prevent from moisture leaching out of the meat. Convection Roast for Electric Ovens Learn about the benefits of using the Convection Roast Mode in your oven. Not only will meats be flavorful and juicy, you can cook an entire meal at one time on multiple racks. Convection ovens (fan assisted cooking) are designed to work for you. Watch my videos and see how easy it can be. Best Uses Roasting large or small cuts of meat, fish, and vegetables and cooking an entire meal at one time. Roasting Large Cuts of Meat. Meats should be cooked on a rack in a shallow pan allowing the heat to circulate around the meat and penetrate from the edge to the center. Large roasts such as bone-in Rib Roasts can be cooked directly on the roasting pan as the bones create a natural rack. Roasted heritage turkey fresh from the convection oven. Temperatures: typically a higher temperature for searing is recommended at the beginning of the cooking time but too high a cooking temperature over a long cooking time can result in overcooked edges and underdone center. No basting or turning is necessary as the rack prevents the juices from being leached out of the meat. Timing: cooking time for large roasts is reduced substantially in Convection, while smaller roasts generally cook in stated recipe time. If your oven is equipped with a meat probe using it when roasting large cuts of meat of 5lbs and over will prevent overcooking. Otherwise, check the meat with an instant-read thermometer ⅔ of the way through the stated recipe time to determine the degree of doneness. Always add resting and carving time to the overall cooking time. 10 minutes for smaller cuts of meat 20 - 30 minutes for larger cuts of meat. In this mode, the heating elements cycle with maximum intensity Cooking an Entire Meal Before you begin, calculate the cooking and resting time of the meat to determine when to add the vegetables or other side dishes. Ideally, side dishes should be ready to come out of the oven when the meat is carved and ready to serve. Determine best rack positions to accommodate all the cooking trays and achieve desired results before heating the oven. For example, vegetables roasted on rack position 2 will benefit from the stronger heat from the bottom heating element while meats cooked on rack position 4 will benefit from the direct heat from the top heating element. Roasting Small Cuts of Meat Small: quick-cooking cuts of meat with a cooking time of 20 - 40 minutes can be cooked directly on a rimmed baking sheet, using recipe timing and temperature. Once you set the oven in the steam mode you can add in multiple containers of food at one time, all you have to do is determine the timing for each type of food and the order in which you want to cook those foods. How to Cook Different Foods In The Steam Oven Cooking food in steam is not a new concept neither is cooking multiple foods in steam at one time; however, the advantages of cooking with the technology in the steam oven definitely makes food preparation easier. Once you set the oven in the steam mode you can add in multiple containers of food at one time, all you have to do is determine the timing for each type of food and the order in which you want to cook those foods. Planning is Key When Cooking Multiple Foods at one Time Cooking Multiple Dishes In A Steam Oven. It’s easier than ever these days to keep track of the timing when cooking multiple dishes at one time. In addition to the oven timers we have devices such as Alexa, our phones, digital timers and the old fashioned wind up timers. If your oven is connected to the manufacturer's app you will also get an alert when the timing has elapsed. In other words, planning the timing for cooking multiple dishes is easy. Prepare Meals in Advance at the same Time as Cooking Dinner Steaming multiple foods at one time can be helpful when preparing a meal, but also when you are preparing several meals in advance. Say for example you wanted to make mashed potatoes as a topping for Shepherds Pie that you plan to serve on another day, and also steam some bone in chicken for sandwiches as well as steam some rice and vegetables for dinner, well all those foods can be cooked in the Steam mode at the same time. It might sound ambitious, but really it’s amazingly easy. Here is the timing for this scenario: Steamed (2) bone-in chicken legs, prep time, 5 minutes, cooking time 40 minutes. Yield approximately 3 cups cooked chicken + 2 cups chicken stock. Cook in a solid pan with 1 cup of water and the desired aromatics. Set the chicken aside to cool before shredding. Steaming Chicken for Salad. Potatoes (4 large) for mashed potatoes, prep time, 5 minutes, cooking time 20 minutes. Yield 4 - 6 servings. Cook in the solid pan, add ½ cup of water and salt. Remove when potatoes are very tender and mash with butter etc. Rice (1 cup) cooking time 15 - 30 minutes depending on the type of rice. Yield 2 - 3 servings. Cook in the solid pan with 1 ¾ cups of water and salt. Allow to stand for 5 minutes then fluff with a fork. Steamed vegetables, green beans, broccoli, asparagus, thinly sliced carrots: 6 - 8 minutes depending on your preference. In this scenario the base for the Shepherd's Pie could be prepared while the potatoes are steaming, once the mashed potatoes are spread over the filling you would have a dish ready for another meal. Once cooled, the chicken can be shredded and stored ready to add to sandwiches or salads and you will have some simple side dishes ready to serve with dinner. Planning to cook this way is a very efficient way of keeping your refrigerator stocked with healthy nourishing food, so there is always something good to eat. Remember that Shepherds Pie you made in advance well that will heat beautifully in the Steam oven without needing to be covered because, it won't dry out when baked in the combination Convection/Steam mode. With No Cooktop to Clean, Clean-Up is Easy Since all the steam oven cooking containers can be washed in the dishwasher, clean-up is much easier and you have managed to cook a lot of food with little stress. Don't Go Without Breakfast, Cook it in the Steam Oven Using the steam oven to cook multiple foods at breakfast time also makes it easier to ensure everyone gets a healthy breakfast. Oatmeal can be cooked directly in the bowl water in the Steam mode. The timing is approximately 6 minutes, but if the bowl stays in the oven for 10 minutes nothing bad will happen. Eggs can also be poached in the oven at the same time, for large cold eggs between 5-6 minutes works best. Although at higher altitudes it can take up to 8 minutes. Poached Eggs In A Steam Oven. Keep the Steam Oven Clean and Dry For ovens with a tank it is recommended to empty the tank after each use, however, if you use the oven to cook breakfast and plan to use it again that evening the tank can be emptied after the last meal of the day is cooked. Just be sure to dry the oven out to maintain a hygienic environment. Think Beyond Cooking One Item at a Time and Let the Oven Work for You Steam ovens are truly remarkable tools, and I encourage you to think beyond just using the oven to prepare one food at a time. Always ask yourself, is there something else I can cook at the same time to get a head start on another meal or to make it easier to prepare several dishes at one time. How To Roast Peppers in Convection Roasting peppers for appetizers or main dishes. Crisp slices of peppers are delicious when added to salads however when peppers are charred and the skin is peeled off, they have a completely different flavor and texture. Roasted peppers can be enjoyed in so many different ways. Added to egg dishes, hot sandwiches, pizzas, casseroles or to vegetable side dishes or even enjoyed as an appetizer, the rich flavor adds that special something to any dish. PREPARING PEPPERS FOR OVEN BROILING It’s easy to char multiple peppers at one time in the oven using either the Convection Broil or Broil mode set to high or 475 degrees. First slice the peppers in half, discard the seeds and cut away any excess membrane. Place the peppers on a rimmed baking sheet and press down on them to flatten them. On the other hand, you can easily cook an entire meal in your Convection oven and relax outdoors with a lovely chilled beverage while the meal cooks itself. I have several Complete Meal scenarios with guidelines and recipes for cooking an easy Convection meal on the website. A good one to start with is the Italian Meatloaf recipe. In addition to the meatloaf, you will find a recipe for roasted potatoes with peppers and a delicious summer fruit cobbler with a shortcake topping. This is a very simple meal, but I hope it gives you a sense of how to plan and cook a sheet pan meal in the steam oven. Steam Oven Sheet Pan Meal: Pork Tenderloin and Seasonal Vegetables Sheet pan meals are appealing for several reasons, they are fast to cook, oven roasted vegetables are delicious , prep and clean-up is minimal, and you are not tied to the stove cooking a meal. Cooking vegetables and a protein on one tray can be a good option when cooking for one or two people, but when cooking for a larger group or when different temperatures will better suit the foods being cooked, then using two pans is a better option. Sheet Pan Meal Cooked in the Steam Oven. Because steam ovens have smaller cavities than standard convection ovens it can make sense to cook the vegetables and protein on separate trays. The other factor to take into account is the temperature that will best suit the foods being cooked. Basically the important factor to successfully cook a sheet pan meal in convection is planning. Tips for Planning the Cooking of a Sheet Pan Meal Let’s review the planning for roasting this sheet pan meal of Pork Tenderloin with Roasted Brussels Sprouts and Carrots. For flavor and appeal a pork tenderloin is best when given a quick sear prior to cooking. Because this is such a lean cut of meat, if the cooking is finished in the oven at a low temperature, the meat will be very tender and juicy. Once removed from the oven the pork should be set aside to rest for 5 minutes or so prior to being sliced. Carrots cut into ¼” thick slices on the diagonal and brussels sprouts sliced into ¼” slices will cook in 20 minutes. Onions, garlic and maybe some mushrooms or parsnip cut to the same dimensions can be added to the mix for added flavor. So here is the cooking plan: For the vegetables: Heat the steam oven in the combination Convection Steam mode to 325 F. Combine the vegetables with a little olive oil salt and your preferred seasoning, spread on a rimmed baking tray and place in the oven. The vegetables will be cooked at a low temperature in the combination convection steam mode then finished at a high temperature in the convection mode without added moisture for crisping and browning. For the pork: Heat a skillet over moderate heat, season the pork tenderloin, add a little oil and butter to the skillet and brown the tenderloin on all sides over moderate heat. Transfer the tenderloin to a small oven pan or use the skillet if it is oven-safe and place in the oven. Cook for 12 - 15 minutes until the meat is firm to the touch. Remove the tenderloin from the oven, remove it from the hot pan and set aside to rest. Change the oven mode to Convection and increase the temperature to 400 degrees and cook the vegetables for an additional 5 minutes. Both the pork tenderloin and the vegetables benefit from a short period of high heat cooking but at different stages of the cooking process; however, by taking the time to plan the cooking you can easily use one oven to cook the entire meal.
